[Objective ] This study aims to verify and screen the Bifidobacterium adolescentis strains with vitamin A (VA) metabolic capacity,and investigate their effects on colitis symptoms and gut microbiota in mice.[Method ] The VA metabolic capacity of a panel of Bifidobacterium adolescentis strains was evaluated through in vitro fermentation,and the strain with the highest VA metabolic capacity was ultimately selected.This strain was administered orally to mice with dextran sulfate sodium (DSS )-induced colitis for 6 consecutive days.After the intervention,histopathological changes in the colonic tissue were assessed,and the levels of intestinal injury markers in the serum and cytokines,antioxidant enzymes,and retinoic acid (RA) …

[Objective ] This study aimed to develop high-quality fermented Rosa roxburghii (R.roxburghii ) products by screening yeast strains suitable for R.roxburghii fermentation.[Method ] The naturally fermented R.roxburghi pomace was used as the material for preliminary screening through the TTC colorimetric method and secondary screening based on fermentation capacity.The tolerance of strains to SO 2,ethanol,low pH,and glucose was examined.The strains were identified via morphological characterization and molecular biological techniques.[Result ] Three high-performing strains (B17,B19,and B29) were obtained.These strains exhibited tolerance to 250 mg/L SO 2,mass fraction 60% glucose,volume fraction 8% ethanol,and pH 3.5 environment.B17 and B 29 were identified as Pichia …

[Objective ] This study aims to develop functional microbial strain resources from the pit mud of Jiangxiangxing Baijiu and explore their potential in optimizing the fermentation process and improving Baijiu quality.[Method ] Lactic acid bacteria were screened from the pit mud of Jiangxiangxing Baijiu by the spread plate method and then identified by morphological and molecular biological methods.The metabolites of the strains were detected by high performance liquid chromatography and gas chromatography,and the whole genomes of the strains were sequenced via the Illumina sequencing technology.[Result ] Eleven strains of lactic acid bacteria were isolated and screened from the pit mud …

Roses are known as a high-value commodity frequently used in various important events. However, they are susceptible to postharvest quality deterioration, which can affect their vase life and appearance. In this study, roses with a blooming stage of approximately 25–50% were immersed in melatonin and 6-benzylaminopurine (BAP) solutions at different concentrations. The demand for clean-label meat products has increased interest in natural alternatives to synthetic antioxidants and antimicrobials. This study evaluated the effects of buffered dry vinegar (BDV), fermented onion juice (FOJ), and their combination (CMB) on microbial stability and sensory quality of pork sausage during 9 days of refrigerated storage. Sausages were assigned to control, FOJ (0.5%), BDV (0.5%), or CMB (0.25% each) treatments. BDV and CMB significantly reduced aerobic and psychrotrophic counts by days 7-9, while yeast increased across all treatments over time, reaching ~7 Log CFU/g by day 9. Highly pathogenic avian influenza (HPAI) remains a persistent threat to global poultry production and public health. Current vaccine platforms show limited cross-clade efficacy and often fail to induce mucosal immunity. Recent advances in microbiome research reveal critical roles for gut commensals in modulating vaccine-induced immunity, including enhancement of mucosal IgA production, CD8+ T-cell activation, and modulation of systemic immune responses. Engineered commensal bacteria such as Lactococcus lactis, Bacteroides ovatus, Bacillus subtilis, and Staphylococcus epidermidis have emerged as promising live vectors for antigen delivery. This study evaluated the effectiveness of individual clean-in-place (CIP) steps in removing biofilms from reverse osmosis (RO) membranes under dynamic flow conditions using the Centers for Disease Control (CDC) biofilm reactor. Biofilms were developed in the laboratory under continuous flow, using mixed-species bacterial isolates obtained from 10-month-old RO membrane biofilms from a commercial facility. Individual CIP chemicals, representative of those used in commercial protocols, were tested against 24 h-old biofilms. Post-harvest Superficial scald affects the quality of Granny Smith Apples. Oxidative stress develops superficial scald with antioxidant systems mitigating the extent of this damage. This study evaluated the effects of gamma, X-ray, and electron beam irradiation on antioxidants – ascorbic acid, total phenolics, α-tocopherol, carotenoids, chlorophyll, and campesterol – in scalded and non-scalded apple peel tissue. Apples were treated with 0.2-0.77 kGy and stored at 0-1 °C. Irradiation at the applied doses increased scald incidence, suggesting that disruption of antioxidant systems promoted reactive oxygen species accumulation and membrane damage. Abstract The poultry industry has implemented numerous methods, as marination and aging, to improve meat quality and satisfy consumer demands. Three experiments were developed to assess the effects of vacuum tumble marination and aging on the proteins of chicken breast. These experiments utilized 0.75 % sodium chloride, 0.45 % phosphate, and water in a marinade. In experiment one, 270 fillets were allocated into six treatment groups, each comprising 45 fillets.
