[Objective ] This study aims to establish a magnetic bead enzyme-linked immunosorbent assay (MELISA ) method for olaquindox (OLA ) based on immunomagnetic beads.[Method ] First,olaquindox-hapten conjugated with horseradish peroxidase (OLA-HS-HRP ) and immunomagnetic beads were synthesized.Then,the conjugated immunomagnetic beads and OLA-HS-HRP were used to screen and optimize the reaction conditions of MELISA.[Result ] The optimal working dilution factors for the immunomagnetic beads and OLA-HS-HRP were 100 times and 8 000 times,respectively,with the antibody dilution buffer being PBS solution (0.010 mol/L,pH 7.0) containing methanol at a volume fraction of 5%.Under the optimized conditions,the established standard equation was y=13.593ln x+17.173 (R2=0.994 …

[Objective ] This study aims to comprehensively investigate the risk of veterinary drug residues in black bone chicken.[Method ] A method for rapid and simultaneous analysis of 39 veterinary drugs and their metabolites in three categories was established based on low-temperature ultrasonic extraction,solid-phase extraction pretreatment,and ultra performance liquid chromatography-tandem mass spectrometry (UPLC-MS/MS ).The samples were extracted by Mcllvaine-Na 2EDTA and phosphate buffer via ultrasonic treatment at low temperatures,purified by Oasis HLB solid-phase extraction column,separated by T 3 chromatographic column,and quantified by the matrix matching external standard method.[Result ] The 39 veterinary drugs and their metabolites showed good linear relationships in …

The COVID-19 pandemic caused immense physical disruptions, affecting young adults in the U.S. The Health Belief Model is a social psychological framework that predicts the likelihood of adopting health behavior. The purpose of this research is to investigate COVID-19-related health beliefs and dietary behaviors among undergraduate students during the pandemic. Using convenience sampling, a cross-sectional survey was completed by 304 individuals at a New Jersey state university. Survey data included the frequency of COVID-19 prevention behaviors (e.g., wearing an indoor mask, handwashing), and consumption of fruit and vegetables. Moreover, branched-chain amino acids (BCAA) are reported to be positively associated with insulin resistance (IR). Cheese ripening involves microbial changes, with starter lactic acid bacteria (SLAB) initiat- ing fermentation and nonstarter lactic acid bacteria (NSLAB) driving flavor and texture development. However, heat-resistant spores of Clostridium and Bacillus can survive pas- teurization and cause spoilage during ripening. This study evaluated NSLAB dynamics in the presence of spores during cheese ripening. Cheddar cheese samples at pilot-scale level (110 L) with four treatments, namely control, with spores of B. licheniformis (T1), with spores of Cl. tyrobutyricum (T2), and both spores (T3) at 2.0 Log10 CFU/mL, were ripened at 7 ◦C for six months. In gut microbiome research, carbohydrate-active enzyme gene clusters (CGCs) have emerged as key functional units for understanding microbial glycan degradation. Unlike taxonomic or broad pathway annotations, CGCs offer gene-cluster-level resolution and capture substrate-specific microbial functions. However, their diversity and distribution in relation to host metabolic phenotypes, such as obesity, remain poorly characterized. This study tests the hypothesis that the composition and abundance of fiber-targeting CGCs vary between obese and healthy human gut microbiomes, reflecting distinct microbial carbohydrate utilization strategies. The aim of the study is to conduct a comparative analysis of the technological properties of samples of bakery flour obtained from local and imported varieties of wheat grain at enterprises in Uzbekistan. Existing national and international standard methods were used to study the technological properties of the selected flour samples. Statistical processing and correlation analysis of the obtained research results revealed a direct relationship between the quality and quantity of gluten from damaged starch.

The aim of the study was to conduct research to determine the possibility of predicting the approximate fatty acid composition of blends based on the iodine number. The fatty acid composition was determined by the chromatographic method and the results were subsequently used to identify the composition of blends by determining the iodine number. The iodine number was determined by calculation and titrimetric methods, comparing the differences between the obtained values. Descriptive Sensory Analysis Of Gluten-Containing And Gluten-Free Chocolate Chip Cookies Available In The Marketplace, Eniola Ola, Victoria J. Hogan, Han-Seok Seo

Limited research has systematically compared the detailed sensory profiles of commercially available gluten-containing (C) and gluten-free (F) cookies using trained panelists. This study aimed to develop a comprehensive sensory lexicon for C and F chocolate chip cookies and identify key sensory attributes that differentiate them. Seven professionally trained panelists created a lexicon of 33 attributes spanning aroma, flavor, basic taste, texture, and residual property. Using this lexicon, a descriptive analysis was conducted on 12 C and 12 F cookie samples. Multivariate analysis of variance revealed significant differences between the two groups across the 33 sensory attributes (p < 0.05). A mixed model analysis showed that C cookies had higher intensities of chocolate-related and sweet aroma complex notes, while F cookies exhibited stronger nutty, artificial, and off-note flavors. In terms of texture, F cookies were higher in toothpack and powdery mouthcoat, while C cookies displayed more melt-in-mouth characteristics. Principal component analysis and agglomerative hierarchical clustering revealed three distinct clusters of test samples within both crispy and chewy cookie types, with some F cookies closely aligning with C profiles. These findings, along with the developed lexicon, provide a valuable foundation for enhancing the sensory appeal and quality of gluten-free chocolate chip cookies.

In the current study, the combined effects of essential oils (EOs) and polyphenols (PPs) were investigated as potential antibiotic alternatives. Thymol and carvacrol at a ratio of 1:1 was used as the EO due to their well-proven synergistic antimicrobial effect. The PPs were an extracted and freeze-dried product from grape pomace. The treatment solutions were prepared at the EO to PP ratios of 0:10, 3:7, 5:5, 7:3, and 10:0, at total concentrations ranging from 0 to 1000 ppm. Sake, a traditional rice beverage from Japan, is brewed using four key ingredients: rice, water, a koji mold, and yeast. While sake is gaining popularity in the US market, there remains a significant knowledge gap regarding the best practices for sake production and how different methods impact the chemical and sensory aspects of American sake as well as its resemblance to traditional Japanese sake. This study examines the impact of yeast selection on fermentation performance, filtration efficiency, and the stability of low-alcohol and non-alcoholic beer (NAB). Three yeast strains (LA-01, LoNa, and W-34/70) were evaluated for their effects on key NAB parameters like ABV, bitterness, color, haze readings, and filtration-linked performance. Filtration trials revealed that highly flocculating W-34/70 resulted in lower post-filtration turbidity, whereas LA-01 and LoNa (which flocculated less) required more effective filtration techniques to achieve clarity. Among the tested filter sheets, AF 31, AF 71, and AF 101 successfully reduced turbidity below 2 EBC. However, all NABs exhibited haze formation during storage, …

[Objective ] This study aims to analyze the characteristics of volatile aroma components and key aroma components of black tea samples from different tea varieties in Guangxi.[Method ] The aroma components of 12 black tea samples from Guangxi were identified by sensory quality evaluation,headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS ),hierarchical cluster analysis,and orthogonal partial least squares-discrimination analysis (OPLS-DA ).[Result ] The black tea samples from different tea varieties showed different aroma characteristics and mainly presented a floral fruity aroma or a sweet aroma.The black tea from ‘Wuniuzao ’ demonstrated the highest comprehensive score (91.20),being a representative of black tea with …
