As a widely used spice, turmeric is rich in curcuminoids, which are known for their anti-inflammatory and antioxidant properties. However, the drying process, especially at high temperatures, often leads to significant curcumin degradation, impacting its bioactivity and quality. This study investigates drying turmeric using an innovative approach based on supercritical carbon dioxide (SC-CO2), and conventional drying methods (oven drying and freeze-drying) in terms of curcuminoid retention, color, solubility, chemical interactions, crystallinity, and morphology. This study evaluated the antibacterial efficacy and growth-promoting potential of Moringa oleifera and Thymus vulgaris methanolic extracts in broiler chickens challenged with Escherichia coli O78. In vitro antibacterial screening using agar well diffusion and disc diffusion assays revealed that ciprofloxacin exhibited the strongest inhibitory effect, followed by tetracycline and enrofloxacin, whereas among plant extracts, T. vulgaris was more effective than M. oleifera. The optimal combination (M100T150; 100 mg M. oleifera + 150 mg T. vulgaris) produced the largest inhibition zones against E. coli strains. This thesis focuses on the optimization of date (Phoenix dactylifera L.) syrup, an emerging natural sweetener rich in glucose, fructose, and bioactive compounds, by investigating how extraction temperature and pectin incorporation influence its physicochemical and structural properties. Therefore, the main objective of this study was to examine how extraction temperatures (25°C, 50°C, 75°C, and 90°C), and the incorporation of lowmethoxyl pectin (LMP, DE 31%) and high-methoxyl pectin (HMP, DE 85%) prior to concentration, affect the quality, stability, and functionality of date syrup. The recent demand for plant-based dairy alternatives has increased the focus on improving the organoleptic, and nutritional attributes of plant cheeses to match their dairy counterparts. This study aimed to develop a functional cheese using the synergistic interactions of rice glutelin and chickpea proteins to enhance both nutritional and textural properties. Functional characterization revealed that rice glutelin exhibited a higher water-holding capacity of 340 % and elevated solubility, while chickpea protein showed a superior oil-holding capacity of 550 % and higher surface hydrophobicity. Strawberries deteriorate rapidly under warm, humid conditions, and to make things worse, in many tropical settings refrigerated logistics are limited. Edible biopolymer coatings offer a low-cost method to slow quality loss, but multicomponent formulations behave nonlinearly. Ensuring global food security in the face of climate change requires optimizing crop water use and nutrient management. This study investigates the relationship between canopy nitrogen (N) and evapotranspiration (ET) across sunflower, rice, walnut, alfalfa, and plum crops using advanced remote sensing technologies. High-resolution hyperspectral data from NASAs Earth Surface Mineral Dust Source Investigation (EMIT) and thermal multispectral data from the Landsat-based OpenET system were analyzed over 1,135 km2 in California. Escherichia coli is a foodborne pathogenic bacterium that can cause diarrhea, while yhaV is a virulence-associated gene linked to the toxin–antitoxin system in E. coli. This study was aimed at evaluating the confirmation, specificity, and sensitivity of a yhaV gene primer using real-time polymerase chain reaction. The yhaV-targeting PCR successfully amplified a DNA fragment with an amplicon length of 207 bp (base pairs) under an annealing temperature optimized to a range of 54 °C to 62 °C via gradient PCR. This study evaluated the effects of replacing inorganic trace minerals with organic glycinate forms at two inclusion levels in layer breeders during the late laying cycle over 6 weeks (66 to 72 weeks of age). Effective environmental monitoring is critical for preventing microbial and allergenic cross-contamination. However, manual swabbing methods, commonly used to verify hygienic conditions, are prone to inconsistent results because of variability in pressure, coverage, and techniques. Two novel solutions will be explored to address these challenges: a robotic swabbing system with tactile sensing control, and a fluorescence/absorbance spectrometer for non-contact, protein-based residue detection. The robotic system was evaluated against trained and untrained humans, measuring water pickup, surface coverage, and pressure consistency. Surface sampling devices ranging in material composition and size can be used in environmental monitoring programs. This study aimed to compare the bacterial recovery efficiency of surface samplers on stainless steel (SS) and polypropylene (PP) surfaces. This research determined the effect of fish oil and Vernonia amygdalina-enriched biscuits (FVSB) on insulin sensitivity and inflammatory cytokines in type 2 diabetic rats. DNA barcoding of a short fragment of the mitochondrial control region (CR), termed the CR mini-barcode, has been established as an effective method for tuna species identification. This study evaluates the feasibility of producing alcoholic beverages using yogurt acid whey (YAW) and grape pomace (GP), byproducts of the dairy and wine industries, respectively, and compares them to commercial grape pomace beverages (piquettes) in terms of sensory attributes and chemical composition. Bongkrekic acid (BKA) poisoning is a severe foodborne illness with a high mortality rate. This study aimed to identifyBKA in postmortem tissues from poisoning victims in Taiwan and to develop a reliable analytical method for detectingBKA in biofluids to aid clinical diagnosis and treatment. The COVID-19 pandemic has imposed a significant economic burden globally, particularly in regions with stringentresponse measures. This study aimed to assess the economic impact of COVID-19 in Taiwan, focusing on both directand indirect costs. A cost-of-illness analysis was conducted, utilizing data from the Taiwan Centers for Disease Control(CDC), national databases, epidemiological studies, and economic surveys. The analysis included both direct costs (e.g.,hospital admissions, outpatient care) and indirect costs (e.g., productivity losses due to long COVID, absenteeism, caregiving duties). Plant-derived nanovesicles (PDNVs) offer a promising, biocompatible therapeutic platform. In this study, we isolatednanovesicles from protocorm-like bodies of Dendrobium officinale (PLBs-NVs) and evaluated their efficacy in dry eyedisease (DED) models. PLBs-NVs protected human corneal epithelial cells against hyperosmotic stress, supportedwound repair, and inhibited inflammation in vitro. In a desiccating stress-induced DED mouse model, topical PLBs-NVstreatment significantly restored tear secretion, reduced corneal epithelial damage, and lowered levels of proinflammatorycytokines. These results suggest that PLBs-NVs are a safe, natural, and effective therapeutic strategy for DED, sup-porting their potential for future clinical translation in ocular surface disorders.

Jujube seed extract (JSE), rich in polyphenols and flavonoids, exhibits neuroprotective and sleep-enhancing properties.In vitro, JSE protected HT22 cells against oxidative stress by activating the Nrf2/HO-1 pathway and upregulatingantioxidant enzymes. In vivo, JSE increased non-REM sleep and delta wave activity in pentobarbital- and caffeine-induced sleep models. Spinosin contributed to these effects. Long-term JSE administration upregulated GABAA, GABAB, and 5-HT1A receptors in brain tissue. These findings suggest that JSE offers dual benefits in mitigating oxidativestress and promoting sleep through antioxidant defense and neurotransmitter modulation, supporting its potential as a natural therapeutic agent.
