Processing Of Oats And The Impact Of Processing Operations On Nutrition And Health Benefits, Eric A. Decker, Devin J. Rose, Derek A. Stewart

Department of Nutrition and Health Sciences: Faculty Publications

Oats are a uniquely nutritious food as they contain an excellent lipid profile and high amounts of soluble fiber. However, an oat kernel is largely non-digestible and thus must be utilised in milled form to reap its nutritional benefits. Milling is made up of numerous steps, the most important being dehulling to expose the digestible groat, heat processing to inactivate enzymes that cause rancidity, and cutting, rolling or grinding to convert the groat into a product that can be used directly in oatmeal or can be used as a food ingredient in products such as bread, ready-to-eat breakfast cereals and …

We are concerned that readers of the IOC paper will be confused and misled by the poorly referenced statements and frank (and sometimes dangerous) errors in the paper. The IOC authors should publish a correction of these and other errors noted. Broadening research of low energy availability in other groups, such as the male athlete, athletes of diverse ethnicities and the disabled athlete may help to advance science and may one day warrant introduction of a specific term for whatever serious clinical sequelae of energy deficiency may be discovered in future research on men.

Research on the “Female Athlete Triad” …

Egg Intake During Carbohydrate Restriction Alters Peripheral Blood Mononuclear Cell Inflammation And Cholesterol Homeostasis In Metabolic Syndrome, Catherine J. Andersen, Ji-Young Lee, Christopher N. Blesso, Timothy P. Carr, Maria Luz Fernandez

Department of Nutrition and Health Sciences: Faculty Publications

Egg yolk contains bioactive components that improve plasma inflammatory markers and HDL profiles in metabolic syndrome (MetS) under carbohydrate restriction. We further sought to determine whether egg yolk intake affects peripheral blood mononuclear cell (PBMC) inflammation and cholesterol homeostasis in MetS, as HDL and its associated lipid transporter ATP-binding cassette transporter A1 (ABCA1) reduce the inflammatory potential of leukocytes through modulation of cellular cholesterol content and distribution. Thirty-seven men and women classified with MetS consumed a moderate carbohydrate-restricted diet (25%–30% of energy) for 12 weeks, in addition to consuming either three whole eggs per day (EGG) or the equivalent amount …

Gene-Environment Interaction Of Body Mass Index And Apolipoprotein E Ε4 Allele On Cognitive Decline, Kumar B. Rajan, Kimberly A. Skarupski, Heather E. Rasmussen, Denis A. Evans

Department of Nutrition and Health Sciences: Faculty Publications

Genetic variation alone may not account for common chronic disease susceptibility. Rather, an interaction between genetic and environmental factors may clarify the underlying disease mechanism. Hence, we tested whether BMI modified the genetic association of the Apolipoprotein E (APOE) ε4 allele with cognitive decline. The data came from a longitudinal population-based sample of 4,055 participants interviewed at 3-year intervals from 1993 to 2012. Cognitive function was assessed using a standardized global cognitive score and BMI was assessed at baseline and classified as normal, overweight, and obese. There were 1,374 (34%) participants with the ε4 allele. In normal BMI participants, cognitive …

Higher Breakfast Glycaemic Load Is Associated With Increased Metabolic Syndrome Risk, Including Lower Hdl-Cholesterol Concentrations And Increased Tag Concentrations, In Adolescent Girls, Analise Nicholl, Mary Du Heaume, Trevor A. Mori, Lawrence J. Beilin, Wendy H. Oddy, Alexandra P. Bremner, Therese A. O'Sullivan

Research outputs 2014 to 2021

Almost all previous studies examining the associations between glycaemic load (GL) and metabolic syndrome risk have used a daily GL value. The daily value does not distinguish between peaks of GL intake over the day, which may be more closely associated with the risk of the metabolic syndrome. The aim of the present study was to investigate the cross-sectional associations between daily and mealtime measures of GL and metabolic syndrome risk, including metabolic syndrome components, in adolescents. Adolescents participating in the 14-year follow-up of the Western Australian Pregnancy Cohort (Raine) Study completed 3 d food records and metabolic assessments. Breakfast …

Research outputs 2014 to 2021

Despite the increasing use of dietary patterns (DP) to study diet and health outcomes, relatively few studies have examined the reliability of DP using different dietary assessment methods. Reduced-rank regression (RRR) is an emerging statistical method that incorporates a priori information to characterise DP related to specific outcomes of interest. The aim of the present study was to compare DP identified using the RRR method in a FFQ with those in a 3 d food record (FR). Participants were 783 adolescents from the Western Australian Pregnancy (Raine) Cohort Study who completed both a FFQ and FR at 14 years of …

Evaluation Of The Relationship Between Nutrition Knowledge And Disordered Eating Risk In Female Collegiate Athletes, Amy L. Miracle

UNLV Theses, Dissertations, Professional Papers, and Capstones

Involvement in collegiate sports among female athletes is at an all-time high with approximately 198,000 currently participating, (National Collegiate Athletic Association, 2012). With this increase in female participation in collegiate sports, the pressures of sport participation and academics lead some women to engage in harmful eating behaviors. These harmful eating behaviors may lead to the development of disordered eating (C. Johnson, Powers, & Dick, 1999; Quatromoni, 2008; Reel, SooHoo, Petrie, Greenleaf, & Carter, 2010; Reinking & Alexander, 2005). Many factors have been identified as contributing to the development of disordered eating but nutrition knowledge or lack thereof, has yet to …

Natural Genetic Variation Affecting Calcium Homeostasis, Rebecca Anna Replogle Oct 2013

Natural Genetic Variation Affecting Calcium Homeostasis, Rebecca Anna Replogle

Open Access Dissertations

Calcium (Ca) is essential for multiple functions within the body including skeletal health. The level of Ca in the serum is tightly regulated. During periods of habitual low Ca intake, the body senses a decrease in serum Ca and increases renal conversion of 25 hydroxyvitamin D (25(OH)D) to 1,25 dihydroxyvitamin D (1,25(OH)2D). 1,25(OH)2D acts through the vitamin D receptor (VDR) to increase intestinal Ca absorption, renal Ca reabsorption and skeletal Ca resorption. Efficient intestinal Ca absorption, especially during periods of low Ca intake, is critical for protecting bone mass. Ca absorption and its primary regulator, 1,25(OH)2D, are affected by both …

Brain Bioavailability Of Polyphenols: Implications For Delivery Of Brain Health Benefits, Tzu-Ying Chen

Open Access Dissertations

Consumption of fruits and vegetables has been associated with neuroprotection and cognitive benefits throughout the life span. These associations have sparked interest in plant-derived polyphenols as biologically active agents with potential for targeting brain benefits. However, little is known regarding the ability of the polyphenols or their metabolites from polyphenol-rich products to cross the blood-brain-barrier, and be available for biological action. Furthermore, additional insight is needed on factors affecting the absorption and brain distribution of polyphenol metabolites in vivo. To fill gap in current knowledge, this thesis will focus on the effects of diabetogenic diet and diabetic state which have …

Metabolic Characterization Of A Sirt5 Deficient Mouse Model, Jiujiu Yu, Sushabhan Sadhukhan, Lilia G. Noriega, Norman Moullan, Bin He, Robert S. Weiss, Hening Lin, Kristina Schoonjans, Johan Auwerx

Department of Nutrition and Health Sciences: Faculty Publications

Sirt5, localized in the mitochondria, is a member of sirtuin family of NAD1-dependent deacetylases. Sirt5 was shown to deacetylate and activate carbamoyl phosphate synthase 1. Most recently, Sirt5 was reported to be the predominant protein desuccinylase and demalonylase in the mitochondria because the ablation of Sirt5 enhanced the global succinylation and malonylation of mitochondrial proteins, including many metabolic enzymes. In order to determine the physiological role of Sirt5 in metabolic homeostasis, we generated a germline Sirt5 deficient (Sirt52/2) mouse model and performed a thorough metabolic characterization of this mouse line. Although a global protein hypersuccinylation and elevated serum ammonia during …

Associations Between Alcohol Consumption And Fasting Blood Glucose In Young Adults, Julie Ann Lucca Jun 2013

Associations Between Alcohol Consumption And Fasting Blood Glucose In Young Adults, Julie Ann Lucca

Master's Theses

Current research shows moderate alcohol consumption is associated with decreased risk of diabetes and excessive consumption or binge drinking can cause insulin resistance and diabetes. In 2010, diabetes was the seventh leading cause of death in the United Statesand was responsible for significant health complications: blindness, kidney failure, and limb amputations, and is a large national economic burden. Fasting blood glucose (FBG) is a tool used to help diagnose diabetes. Abnormally high FBG, ≥100 mg/dl, is indicative of diabetes and pre-diabetes. Few studies have observed diabetic prevalence among young adults or college students. Studying young adults can help provide added …

Impact Of High Calcium Intake From Calcium Carbonate Or Dairy On Cardiovascular Function, Coronary Artery Calcification And Coronary Artery Disease Burden In Ossabaw Miniature Swine, Alyssa K. Phillips Jan 2013

Impact Of High Calcium Intake From Calcium Carbonate Or Dairy On Cardiovascular Function, Coronary Artery Calcification And Coronary Artery Disease Burden In Ossabaw Miniature Swine, Alyssa K. Phillips

Open Access Theses

Recent secondary analyses have associated supplemental calcium use with increased risk for myocardial infarction and cardiovascular-related death in healthy, older adults. Subsequent concern over the safety of calcium supplements has spurred a calcium controversy, because calcium is a shortfall essential nutrient that is critical for bone health and a mainstay of osteoporosis prevention and treatment. The proposed mechanism by which calcium intake may detriment cardiovascular health is through the acceleration of coronary artery calcification (CAC), a clinical indicator of coronary artery disease (CAD) that has been associated with mortality risk. However, causal evidence to support this hypothesis is lacking. Determining …
