Department of Nutrition and Health Sciences: Faculty Publications
A healthy diet can be defined in many ways, including defining one’s food intake by a dietary pattern. As described in the Dietary Guidelines for Americans Committee report, there are several defined dietary patterns associated with lower rates of chronic diseases. These include the Healthy Eating Index, Dietary Approach to Stop Hypertension, and those based on the Mediterranean diet. This review will focus on guiding health care professionals, including nurse practitioners, how a healthy diet pattern is defined, how it is measured, and a summary of recent evidence supporting the healthfulness of these dietary patterns.
Prebiotics And Inflammatory Bowel Disease, Heather Rasmussen, Bruce R. Hamaker
Prebiotics And Inflammatory Bowel Disease, Heather Rasmussen, Bruce R. Hamaker
Department of Nutrition and Health Sciences: Faculty Publications
Inflammatory bowel disease risk factors include poor diet, and corresponding low intake of dietary fiber, specifically prebiotics, which is fermented by the gut microbiota. Dietary fibers, many of which are potential prebiotics, have hundreds to thousands of unique chemical structures that may promote bacteria or bacterial groups to provide beneficial health effects. In vitro and in vivo animal models provide some support for the use of prebiotics for inflammatory bowel disease through inflammation reduction. Studies using prebiotics in patients with inflammatory bowel disease are limited and focus on only a select few prebiotic substances.

Background: Evidence exists for an association between accordance with a Mediterranean diet pattern and slower rates of cognitive decline. However, an ‘Americanized’ version of the Mediterranean diet screener is needed to assess accordance in the USA. Thus, the Mediterranean Eating Pattern for Americans (MEPA) tool was developed to assess accordance with a Mediterranean-like food pattern when time is limited. The present study aimed to determine whether the MEPA screener captured the key elements of the Mediterranean diet compared to the more comprehensive food frequency questionnaire (FFQ).
Methods: The study comprised a cross-sectional study in which 70 women completed both the …
Impact Of Staff Education On Geriatric Polypharmacy, Valerie Ikemefuna
Impact Of Staff Education On Geriatric Polypharmacy, Valerie Ikemefuna
Walden Dissertations and Doctoral Studies
Polypharmacy, the simultaneous use of multiple drugs to treat a single ailment or condition, is a
major health problem among the elderly population that contributes to adverse drug side events,
health risks, hospital readmissions, morbidity, and mortality. Therefore, a staff education
program geared toward reduction of such adverse drug events was implemented at a single site.
The purpose of the project was to determine if the staff education program would increase
knowledge of adverse drug events due to geriatric polypharmacy. The Orem theory provided the
theoretical support for the project, and the Iowa model guided the evidence-based practice
change process. …

Optimisation Of Fucoxanthin Extraction From Irish Seaweeds By Response Surface Methodology, Emer Shannon, Nissreen Abu-Ghannam
Articles
Fucoxanthin is a xanthophyll pigment which occurs in marine brown algae (Phaeophyceae). The anti-diabetic, anti-obesity, anti-cancer, and antioxidant properties of fucoxanthin have been widely reported. Macroalgae, particularly brown seaweeds, grow prolifically around Irish coasts, representing a valuable resource of nutraceuticals such as fucoxanthin for functional food applications. The aim of this study was to maximise the solvent extraction yield from three anatomically discrete regions of the seaweed thallus: blade, stipe, and holdfast. Response surface methodology was applied to determine optimum parameters for extraction of fucoxanthin from the seaweed, Fucus vesiculosus, as a model species. A central composite design was …

Eicosapentaenoic Acid Potentiates Brown Thermogenesis Through Ffar4-Dependent Up-Regulation Of Mir-30b And Mir-378*, Jiyoung Kim, Meshail Okla, Anjeza Erickson, Timothy P. Carr, Sathish Kumar Natarajan, Soonkyu Chung
Department of Nutrition and Health Sciences: Faculty Publications
Emerging evidence suggests that n-3 polyunsaturated fatty acids (PUFA) promote brown adipose tissue thermogenesis. However, the underlying mechanisms remain elusive. Here, we hypothesize that n-3 PUFA promotes brown adipogenesis by modulating miRNAs. To test this hypothesis, murine brown preadipocytes were induced to differentiate the fatty acids of palmitic, oleate, or eicosapentaenoic acid (EPA). The increases of brown-specific signature genes and oxygen consumption rate by EPA were concurrent with up-regulation of miR-30b and 378 but not by oleate or palmitic acid. Next, we hypothesize that free fatty acid receptor 4 (Ffar4), a functional receptor for n-3 PUFA, modulates …

Sociology Faculty Articles and Research
Trends in adult obesity have been used to motivate key public health policies in the United States. While these analyses provide important insights into the broad historical contours of the obesity epidemic in the U.S., they shed less light on the proximate mechanisms that have generated these changes and that will ultimately determine the long-term course and pace of change in obesity rates. We used data from the National Health and Nutrition Examination Survey (NHANES), Glenn Firebaugh's linear decomposition technique, and Kitagawa's algebraic decomposition method to decompose change in body mass index (BMI), obesity, and morbid obesity from 1971 through …

Acute Fatty Liver of Pregnancy (AFLP) is a very rare and fatal condition for both the mother and the unborn offspring accompanied by severe maternal liver dysfunction. AFLP usually develops during the third trimester of pregnancy with symptoms of liver disease. AFLP is associated with a mutation in the enzyme, long-chain 3-hydroxy acyl CoA dehydrogenase (LCHAD) which is involved in the mitochondrial beta-oxidation of fatty acids. Defective beta-oxidation of fatty acids results in the individual unable to metabolize fatty acids which then causes fatty infiltration in their organs, such as the liver. This interferes with normal function of the liver …

Within the United States type 2 diabetes is an ever growing health epidemic. The prevalence in the adult population has quadrupled over the past 30 years and is expected to continue on a similar path in the coming decades. While the cause of type 2 diabetes is multifactorial, it is considered to be an acquired condition related to environmental contributors including poor diet, obesity, and physical inactivity, which may be managed to alter the course or progression of the disease. Preventative or maintenance measures emphasize nutritional intervention strategies, including encouraging individuals to follow a nutrient-dense, high-fiber diet with ample whole-grains, …
Long-Term Supplementation With Leucine Does Not Prevent Development Of Obesity In Rats Fed A High-Fat Diet, Dameon Smith
Long-Term Supplementation With Leucine Does Not Prevent Development Of Obesity In Rats Fed A High-Fat Diet, Dameon Smith
Graduate Theses and Dissertations
Excess dietary fat consumption has been implicated in the development of obesity and diabetes. Obesity can be characterized by a disproportionate increase in fat mass compared to lean body mass. However, if muscle mass can be increased or maintained in obesity, this may facilitate weight loss by increasing the body’s overall metabolic capacity. Historically, supplementation with the branched-chain amino acid leucine has been shown to increase muscle protein synthesis via the protein kinase mTORC1. Recent studies suggest that supplementation with leucine also has the potential to reduce weight gain and fat deposition in high-fat fed, obese mice. The objective of …
