Objective: The purpose of this study was to determine the effects of highlighting healthy food options on consumer food choices in a food bank setting.
Methods: Two community food banks participated in this study. One food bank served as the control, while a second food bank was rearranged so that fresh produce and other healthy products were the first options that shoppers encountered upon entering. After shopping, carts were inventoried for healthy vs non-healthy products. Composition of the carts from the control food bank were then compared to the contents of the carts from the intervention food bank.

On average 30 million adults are diagnosed with chronic kidney disease (CKD) in the United States (National Kidney Foundation, 2017). Patients in late stage kidney disease and on dialysis are placed on a restrictive diet to aid in the treatment of their disease. There are adverse symptoms associated with dialysis including nausea, constipation, diarrhea and fatigue. Fiber has been shown to decrease gastrointestinal symptoms such as reducing constipation and inflammation in the body in healthy populations. Background: Workplace or campus wellness/obesity-prevention policies and initiatives can improve health. Research tools to assess worksite or campus policies/initiatives are scarce. Thus, the aim of this research is to develop and validate the policies, opportunities, initiatives, and notable topics (POINTS) audit. Methods: POINTS was developed and refined via expert review, pilot-testing, and field testing. Trained researchers completed a web-based review from a student-focus or employee-focus regarding 34 health-promoting topics for colleges. Each topic was evaluated on a 0–2 scale: 0 = no policy/initiative, 1 = initiatives, 2 = written policy. When a written policy was detected, additional policy support questions …

The objective was to describe the development process of a curriculum (iCook 4-H) targeted to low-income, rural, and/or diverse youths and their adult primary meal preparer to promote cooking, eating, and playing together. Lessons learned highlighted the importance of grounding the curriculum in Social Cognitive Theory and applying the experiential 4-H learning model using a multiphased, community-based participatory approach with cyclical development and evaluation, and key modifications made for dissemination and distribution. Findings across 4 testing phases over 6 years and 5 states demonstrated the time-intensive, cyclical process that required flexibility with fidelity to form a hands-on, interactive curriculum.

To examine the contribution of child, maternal and household factors in stunting, wasting and underweight among children under 5 years in Ethiopia. Design

Younger (0–24 months; n 4199) and older age groups (25–59 months; n 5497), giving a total of 9696 children. Results

The shortage of skilled, motivated, and well-supported health workers is a major barrier to scaling up nutrition interventions and services. Objective: The objective of this study is to describe the process for developing and implementing a training of health personnel for the delivery of the Integrated Strategy for Attention to Nutrition (EsIAN), an evidence-based strategy for promoting infant and young child feeding through primary health care in Mexico. Polyphenols can be classified as flavonoids, phenolic acids, lignans, or stilbenes. These molecules consist of over 500 plant metabolites that come from numerous food sources including various fruits, vegetables, grains, and beverages such as coffee, tea, and wine. The quantity of polyphenols in food vary greatly, as does their bioavailability for use in the body after consumption. Dlx3 (distal-less homeobox 3) haploinsufficiency in mice has been shown to result in restricted fetal growth and placental defects. We previously showed that maternal choline supplementation (4X versus 1X choline) in the Dlx3+/�� mouse increased fetal and placental growth in mid-gestation. The current study sought to test the hypothesis that prenatal choline would modulate indicators of placenta function and development. Pregnant Dlx3+/�� mice consuming 1X (control), 2X, or 4X choline from conception were sacrificed at embryonic (E) days E10.5, E12.5, E15.5, and E18.5, and placentas and embryos were harvested. Background: This paper describes the development and validation of the Vending Evaluation for Nutrient-Density (VEND)ingaudit to comprehensively evaluate vended products based upon healthfulness, price and promotion, and machine accessibility. Methods: A novel vending nutrient-density score was created to determine the healthfulness of vended snack/beverage products. Field tested in United States colleges, VENDing audit (∑nutrient-density + 10 × % healthy products) and Support sub-scores (price + promotion + accessibility) were calculated for snack/beverage machines. Higher scores indicate more healthful vending options and supports for choosing healthfully. Background: Increased intakes of ready-made and fast foods paralleled with decreased homemade food consumption have been associated with increased rates of obesity. Researchers have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Some cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Background: Bovine milk exosomes are studied for their roles as bioactive food compounds and as vehicles for drug delivery. Both lines of investigation converge on immune function, e.g., immune regulation by absorption of microRNAs encapsulated in milk exosomes across species boundaries, and the possibility of exosomes and their cargos triggering an immune response if used in drug delivery. This study assessed the bioavailability of immune-related microRNAs from bovine milk and changes in plasma cytokine concentrations after milk consumption in humans, and the secretion of cytokines by human peripheral blood mononuclear cells (PBMCs) cultured with milk exosomes transfected with immune-relevant microRNAs. …

Berry fruits are rich sources of polyphenolic compounds (PCs), which can promote health benefits. Anthocyanin concentrations of red raspberry (RR)(Rubus idaeus) extracts were determined to be a total of 887.6 ± 262.8 μg/g cyanidin-3-sophoroside (C3S) equivalents with C3S being the most prevalent. Ellagitannin analysis by MALDI-TOF indicated sanguiin H-6 and lambertianin C were the major ellagitannins present in RR. To explore the efficacy of RR in modulating diabetes, seven type 2 diabetes mellitus (T2DM) and two pre-diabetic patients were given drinks delivering one RR serving (123 g) per day in a smoothie for two weeks. The objective was to determine if cooking skills and meal planning behaviors are associated with greater fruit and vegetable intake and lower body mass index (BMI) in first-year college students who are at risk for excessive weight gain. A cross-sectional analysis was conducted using baseline data from a multi-state research project aimed at preventing weight gain in first-year college students. Cooking type, frequency and confidence, self-instruction for healthful mealtime behavior intention, self-regulation of healthful mealtime behavior, and cup equivalents of fruits and vegetables (FV) were measured using validated surveys. Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented.
Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. State Population Influences Athletic Performance Combine Test Scores In High School-Aged American Football Players, Zachary M. Gillen, Marni E. Shoemaker, Brianna D. Mckay, Joel T. Cramer

This study compared athletic performance differences among high school American football combine participants originating from states of different population sizes. High school-aged American football players (n=7,214) who had participated in athletic performance combines between March 2015 and January 2016 were included in this analysis. Data included combine date and location, school state of origin, football position, class, height, weight, 10-, 20-, and 40-yd dash times, pro-agility, L-cone drill, vertical jump, broad jump, and power push-up. Participants were separated into high- (state population>10,000,000; HIGH; n=2,804), mid- (state population=5,000,000-9,999,999; MID; n=2,911), or low-population (state population<5,000,000; LOW; n=1,499) state of origin. Data were allometrically scaled to account for differences in body mass across high school grade levels and American football positions. All statistical analyses were performed on the allometrically scaled data. LOW athletes performed better than HIGH athletes in the 20-yd dash (p≤0.01). LOW athletes performed better than HIGH and MID in the 40-yd dash, proagility, broad jump, and power push-up (p<0.01). LOW and HIGH athletes performed better than MID in the Lcone and vertical jump (p<0.01). When considering population size, athletes originating from LOW states may demonstrate higher levels of athletic performance in football combine events hypothetically due to more opportunities for sports participation and playing time, leading to greater athletic development. Youth and high school coaches in MID and HIGH states might consider providing more opportunities for playing and individualized coaching to encourage long-term athletic development.

Background: Workplace or campus wellness/obesity-prevention policies and initiatives can improve health. Research tools to assess worksite or campus policies/initiatives are scarce. Thus, the aim of this research is to develop and validate the policies, opportunities, initiatives, and notable topics (POINTS) audit. Methods: POINTS was developed and refined via expert review, pilot-testing, and field testing. Trained researchers completed a web-based review from a student-focus or employee-focus regarding 34 health-promoting topics for colleges. Each topic was evaluated on a 0–2 scale: 0 = no policy/initiative, 1 = initiatives, 2 = written policy. When a written policy was detected, additional policy support questions …

Objective: The purpose of this investigation was to examine the ability of the electromyographic (EMG) and mechanomyographic (MMG) amplitude versus torque relationships to track group and individual changes in muscle hypertrophy as a result of resistance training.
Approach: Twelve women performed four weeks of forearm flexion blood flow restriction (BFR) resistance training at a frequency of three times per week. The training was performed at an isokinetic velocity of 120°∙s−1 with a training load that corresponded to 30% of concentric peak torque. Objective: Urolithin A (UroA) is a major metabolite of ellagic acid produced following microbial catabolism in the gut. Emerging evidence has suggested that UroA modulates energy metabolism in various cells. However, UroA’s physiological functions related to obesity and insulin resistance remain unclear. Methods: Male mice were intraperitoneally administrated either UroA or dimethyl sulfoxide (vehicle) along with a high-fat diet for 12 weeks. Insulin sensitivity was evaluated via glucose and insulin tolerance tests and acute insulin signaling. Exosomes are natural nanoparticles that play an important role in cell-to-cell communication. Communication is achieved through the transfer of cargos, such as microRNAs, from donor to recipient cells and binding of exosomes to cell surface receptors. Exosomes and their cargos are also obtained from dietary sources, such as milk. Exosome and cell glycoproteins are crucial for intestinal uptake. A large fraction of milk exosomes accumulates in the brain, whereas the tissue distribution of microRNA cargos varies among distinct species of microRNA. Delayed-onset muscle soreness (DOMS) is the feeling of discomfort that occurs after being exposed to unaccustomed eccentric resistance training often resulting in diminished athletic performance. Previous research has shown positive effects with omega-3 fatty acid (O3FA) supplementation to ameliorate DOMS. The purpose of this study was to investigate the effects of acute O3FA supplementation on perceived muscle soreness, ratings of exertion, and recovery after a lower body resistance training protocol in college-aged males. Purpose: To determine if personality style is related to perceptions of health coaching and if there is a relationship between perceptions of health coaching and the ability to lose weight. Methods: Data was gathered from approximately 2,000 MR program participants via an electronic survey. The Client Evaluation of Motivational Interviewing scale was used to determine if perceptions of health coaching affect the ability to lose weight. INTRODUCTION: Overweight and obese (OW/OB) children display increased knee joint loading during running, which may lead to excessive frontal plane motion and moments at the knee joints. The relationship between tibial plateau dimensions and knee vertical loading may explain the loading related injuries OW/OB children experience.

Objective: To quantitatively assess perceived coaching confidence of a community coach working with food councils, and to qualitatively determine perceived barriers and facilitators associated with coaching rural food councils.
Design: Two phases were implemented using a mixed methods study design with quantitative (scorecard) and qualitative (key informant interviews) methodologies.
Setting: Six rural, Midwestern states implementing Voices for Food.

The aim of this study is to evaluate weight-related eating behaviors of participants with clinically significant weight loss (CSWL) in a proprietary weight loss program. A crosssectional sample of participants (n=1,454) enrolled in a proprietary weight-loss program that includes meal replacements and health coaching were queried for weight-related eating behaviors (using Weight Related Eating Questionnaire) of routine restraint (RR), compensatory restraint (CR), susceptibility to external cues (SEC), and emotional eating (EE) in relation to CSWL (defined as having achieved a weight loss greater than 10% of starting weight). The purpose of this study is to determine the effects of a protein supplementation protocol through a period of muscular disuse in maintaining muscle mass, strength, jump force production, and cross-sectional area in the collegiate population. Two groups of healthy collegiate participants underwent two weeks of unilateral lower limb suspension (ULLS), during which the control group consumed a normal diet and the treatment group received an additional 75 g of protein supplementation. Targeting gut microbiota with diet, prebiotics, and probiotics are emerging as a promising intervention in the comprehensive nutritional approach to reducing obesity and metabolic disorders. Recent human and animal studies suggest that such intervention can promote health benefits by influencing the aspects of metabolism and immunity.
