IT is probable that cheese was made accidentally in the first instance, by the carrying of milk in the stomachs of animals, when the milk clotting enzymes of the stomach converted the liquid milk into a junket or a solid mass.

These residues find their way into the bulk milk as a result of milk from cows under antibiotic treatment for mastitis or other infections being included in the bulk milk for sale.

IN an earlier article by this Department (Vol. XXVI No. 2 PP. 99-104) some introductory remarks were made on a study being conducted on the rate of milking by machine, and preliminary findings were recorded. The conclusion was reached that the rate of milking on most farms was too slow, it being considered that in the vicinity of five minutes per cow should be sufficient under machine milking and that, if the teat cups were left on for a longer period than this, damage to the udder was likely to follow.

In the pressure cooker, high temperature is obtained by using steam under pressure. Since the pressure gauge is used as the indicator of temperature it is essential that the gauge register the correct pressure. Dry beans of the Great Northern and pea-bean type from Nebraska and several other bean-producing states were studied to determine the factors affecting the cooking quality. A standard cooking procedure with distilled water was used to disclose differences in cooking quality, and the percentage of beans too hard for table use was determined for each cooked portion. The factors studied were: soaking, including time and temperatures; storage, including time and storage conditions; age; size; place of origin; effect of chemical solutions; and the composition of the seed coat. The prime object of the work undertaken in the present study has been done with the view of determining whether or not the quality and yield of brick cheese may be improved by pasteurizing the milk from which the cheese is made.
