Market demand for instant rice--a processed form of rice that is cooked and dehydrated before it is sold--has risen tremendously and become a significant component of the rice industry. Compared to freshly cooked rice, the quality of instant rice (in terms of texture, color, aroma, etc.) is much lower. There exists little information regarding how instant rice’s storage conditions affect its quality. Such information may be elucidated by studying sorption isotherms which describe the storage temperature, relative humidity, and instant rice moisture relationships.

Rice is utilized as an adjunct grain by the beer manufacturing industry. Before utilization, the rice has to be dried to a desired moisture content. The drying process employed may have an impact on the rice’s physicochemical properties which influence the rice’s performance in the brewing process. Biofilms consist of one or more different types of microorganisms and can grow on numerous types of surfaces (Costerton,1999). Formation of harmful microbes and their associated mycotoxins on rough rice during storage present negative socioeconomic impacts to producers and consumers. The objective for this study was to investigate the impact of treating rough rice with selected infrared (IR) wavelengths at different IR intensities and heating durations, followed by a tempering step for further inactivation of microbes (mold and bacteria) on the grain. Anthocyanins are well known for their health-promoting benefits. The goal of this study was to evaluate a distillation-based membrane technology to concentrate aqueous anthocyanins extracted from muscadine grape pomace using polypropylene (PP) or ethylene chlorotrifluoroethylene (ECTFE) membranes. A hot water extraction method was utilized to extract the anthocyanins from the pomace. A pre-experimental run using DI water as feed was conducted to optimize the NaCl brine concentration for osmotic distillation and it was determined that 4M was the optimal concentration.
