Composite flour blends prepared from cereals, millets, tubers, legumes, and vegetables have gained increasing attention due to their potential to enhance nutritional quality, improve functional properties, and support sustainable food systems. Previous studies have largely focused on individual nutritional or functional attributes, with limited integration of environmental and health perspectives. This review aimed to systematically analyze how composite flours simultaneously influence nutritional quality, functional performance, health relevance, and environmental sustainability within a unified analytical framework. Giant swamp taro (GST/Cyrtosperma merkusii), a local North Sulawesi coastal plant, is underutilized but has high po-tential for cultivation as a paludiculture plant on rewetted peatland restorations. GST has high starch content and is currently being explored for potential use. This study explored the potential of using the biomass pulp yielded as resi-dues of the starch extraction process. Endolichenic fungi (Trichoderma reesei and Aspergillus aculeatus) isolated from local lichens, were inoculated on the GST biomass in a solid state fermentation (SSF). Flakes are products that are generally made from cereals. In this study, we are interested to use black soybean (Glycine soja (L) Merrit) and bangle (Zingiber purpureum Roxb.) as flakes ingredients. Black soybeans have high antioxidant components, while bangle contains high antioxidant and fiber components, which enables it to capture free radicals. This study aimed to find the most favorable formula with good physical, chemical, and organoleptic characteristics, which also has the highest antioxidant activity. The prevailing climate is an important factor affecting the development of the physical quality and flavor of cacao (Theobroma cacao L.) beans. The influence of harvest seasons on the physical, chemical, and flavor characteristics of cacao beans from Nakhon Si Thammarat Province, southern Thailand, was assessed. Among cacao beans, those harvested in the rainy season (R) had the highest fresh and dry weights and the lowest bean count per 100 g (87.00 ± 2.83). Rosella (Hibiscus sabdariffa Linn) is a well-known family medicinal plant (Toga). Spoilage due to the weather, and the consequent low revenue gained from selling dried rosella are two of the main challenges currently being encountered by rosella farmers. Regardless of previously practicing community engagement including regular training from local authorities, farmers are still encountering difficulties to implement the training materials, consequently experiencing loss.
