Research Progress On Stabilization Of Natural Anthocyanin Pigments, Jiang Yuting, Qin Fang, Chen Jie, He Zhiyong
Food and Machinery
The use of natural pigments of anthocyanins in the food industry to replace synthetic pigments has become a development trend. Compared to synthetic pigments, however, natural anthocyanin pigments show low stability and easy to lose, during the processing and storage, and reducing the color loss during industrial applications is challenging. This study reviewed the stabilization techniques of anthocyanins in recent years, including the addition of polymeric compounds, copigments, metal ion, and encapsulation techniques, in order to provide guidance for the stabilization application of anthocyanin pigments in the food industry.

Studies On The Rheological, Bubble Microstructure And Baking Properties Of The Low-Fat Cake With Propylene Glycol Esters, Wang Jiabao, Chen Cheng, Wang Feng, Hao Yuehui, Huang Jinxin, Chen Junmin, Huang Weining, Akihiro Ogawa
Food and Machinery
This study was conducted to evaluate the effect of new propylene glycol esters emulsifier on the specific gravity, viscosity, rheology, microstructure of batter and baking characteristics of low-fat cake. The results showed that propylene glycol esters increased the surface tension of oil and promoted changes in fat structure to the α crystalline form as observed by XRD. The small bubbles were protected by propylene glycol esters from defoaming caused by oil. The number of bubbles increased by 1.87 times. Propylene glycol ester significantly increased the specific volume and decreased hardness of low-fat cake.

Food and Machinery
The effects of different tea polyphenols on the antioxidant and digestive properties of black powder were studied. Taking the DPPH scavenging free radical rate, total reducing power, starch hydrolysis curve as the indicators, discussed the effect of tea polyphenols on the antioxidant and digestive properties of black powder. Research indicates: the addition of tea polyphenols significantly changed the index of black powder (P<0.05), enhanced DPPH free radical scavenging ability, total reducing power, total antioxidant, reduced starch hydrolysis rate. When the amount of tea polyphenols added is 0.040%, the DPPH free radical scavenging ability, total reducing power absorbance and total antioxidant ability of black powdered powder increased by 4.6%, 0.58, 8.83 U/g, respectively. The starch hydrolysis rate of black powder was reduced by 24.98%.

The relation between the equilibrium moisture content and the water activity of crust filling at 23, 30 and 45 ℃ were studied by gravimetric method. The test data were fitted with some typical moisture absorption models by Matlab. The results showed that the moisture isotherm of crust and filling were both S type model. When the moisture activity was constant, the equilibrium moisture content first increase and then decrease with the increase of temperature, which was different from other foods. The Lewicki model and Peleg were the most suitable for fitting adsorption isotherms of crust and filling when the moisture …

Concentration Of Hot Water Extracts Of Anthocyanins Obtained From Muscadine Grape Pomace Using Membrane-Osmotic Distillation, Chuqiao Mai
Food Science Undergraduate Honors Theses
Anthocyanins are well known for their health-promoting benefits. The goal of this study was to evaluate a distillation-based membrane technology to concentrate aqueous anthocyanins extracted from muscadine grape pomace using polypropylene (PP) or ethylene chlorotrifluoroethylene (ECTFE) membranes. A hot water extraction method was utilized to extract the anthocyanins from the pomace. A pre-experimental run using DI water as feed was conducted to optimize the NaCl brine concentration for osmotic distillation and it was determined that 4M was the optimal concentration. The aqueous anthocyanins extraction was filtrated through a series of filter of different pore sizes before the distillation process. Membrane …
Implications Of Rice Cultivar Selection To Optimize Returns From Crop Insurance, David Ethan Branscum
Implications Of Rice Cultivar Selection To Optimize Returns From Crop Insurance, David Ethan Branscum
Graduate Theses and Dissertations
Rice production differs from most other field crops by distinct differences in yields across cultivars and rice producers being paid for yield after post-harvest milling. Using eleven years (2003-2013) of Arkansas harvest data from performance trials in six different locations, hybrids have 19% higher paddy yields and head rice yield rate 1.7% lower than conventional cultivars. Given the 2014 Farm Bill’s emphasis on crop insurance as a risk management tool for producers, these variations in yield among cultivars have significant implications for rice producers. Comparing national level, crop insurance data on corn, soybeans and rice indicates rice producers strongly prefer …

Food and Machinery
The physicochemical and emulsifying properties of pork myobrillar protein (MP) solution treated by ultrasound power: 0, 80, 140, 180 and 200 W were examined. Compared with MP without ultrasonic treatment, with the increase of ultrasonic power, d4, 3 of MP decreased, while solubility, absolute value of the zeta potential, emulsifying activity and emulsion stability were significantly increased. Meanwhile 180 W was the optimum ultrasound power to obtain the highest emulsifying activity index (EAI) and emulsion stability index (ESI). The increase of emulsion stability was related to increased zeta potential and reduced average particle size. Optical microscopy observation proved that …

Food and Machinery
Taking the luteolin, apigenin and carnelin in the chrysanthemum as the determination index, the high-performance thin-layer scanning method (HTLCS) and high-performance liquid chromatography (HPLC) were used to determine the linear relationship between each method. The linear relationship and range of each method were investigated. The results showed that the established HTLSC and HPLC methods met the requirements, and the linear relationship was good, RE<3%. However, there was no significant difference between the two methods (P>0.05). The method of establishing HTLCS and HPLC method was reasonable. The determination of three components of luteolin, apigenin and acacetin could be carried out by using HTLCS instead of HPLC.

Numerical Simulation Of Meshing Co-Rotating Twin Screw Extrusion Process Under Non-Isothermal Conditions, Zhao Yulian, Li Xin, An Qi, Huang Zhigang
Food and Machinery
The SolidWorks 3D modeling software was used to construct the meshing co-rotating twin-screw physical model. By changing the rotational speed of the PLA processed by the screw extruder, the non-isothermal flow analysis was used to carry out the corresponding numerical simulation in the polyflow software. Compare the effect of speed on the processing of PLA. The numerical results show that under non-isothermal conditions, the temperature increases linearly in the direction from the inlet to the outlet, that is, in the extrusion direction. On the Z-axis section, the temperature gradually increases outward in the radial direction. By comparing the flow field …
