Moisture Sorption Behavior And Shelf Life Prediction Of Teff Seed And Flour, Baba Abdissa, Rudrayya Math, Kodandaramreddy Desham, Srinivasulu Korra
Journal of Applied Packaging Research
Moisture sorption isotherms of Teff seed and its flour were determined over the range of relative humidity (11–92%) using a gravimetric technique at constant temperature (27°C). The results obtained showed that the moisture sorption isotherm of both is almost similar and sigmoid with increasing equilibrium water content at the constant temperature. The curves start raising high above 64% RH indicating the products deteriorates faster above 64% RH. Hence the moisture content equilibrating to 64% RH was taken as critical for both Teff seed and flour variants. The sorption isotherm fits the GAB equation as per GAB generalized equation for sorption …

This paper deals with the investigation of ultrasound (US) pretreatment of brewer’s spent grain (BSG) as ameans of releasing fermentable sugars, and the subsequent production of ethanol from this lignocellu-losic biomass. Using response surface methodology (RSM), the influence of US power, time, temperatureand biomass loading on fermentable sugar yield from BSG was studied. The optimal conditions werefound to be 20% US power, 60 min, 26.3°C, and 17.3% w/v of biomass in water. Under these conditions,an approximate 2.1-fold increase in reducing sugar yield (325 ± 6 mg/g of biomass) was achieved, relativeto untreated BSG (151.1 ± 10 mg/g of biomass). In …
Characterization And Use Of Pathogen Specific Bacteriophages To Reduce The Viability Of Escherichia Coli O157:H7 Contamination On Fresh Produce, Badrinath Vengarai Jagannathan
Characterization And Use Of Pathogen Specific Bacteriophages To Reduce The Viability Of Escherichia Coli O157:H7 Contamination On Fresh Produce, Badrinath Vengarai Jagannathan
Theses and Dissertations--Animal and Food Sciences
Fresh produce is one of the most common sources of food-borne outbreaks, involving various pathogenic microorganisms such as Escherichia coli. Recent outbreaks have clearly shown that post-harvest washing has limited effectiveness on decontaminating produce and may contribute to cross-contamination of produce due to various limitations. Excessive use of sanitizers and antibiotics has also led to the development of many antibiotic-resistant strains of bacteria that have made the food industry more vulnerable.
Bacteriophages are a bacterial viruses that can selectively infect and replicate within bacteria leading to cell lyse and death. Bacteriophages have become widely recognized due to their ability …

Milling of the brewer's spent grain for the production of bread is also covered.
Ecosystem Of Bagged Grain Stored Under Naturally Ventilated Warehouse: Analysis And Modelling, Michael Ayodele Omodara
Ecosystem Of Bagged Grain Stored Under Naturally Ventilated Warehouse: Analysis And Modelling, Michael Ayodele Omodara
Theses and Dissertations--Biosystems and Agricultural Engineering
Grain in Africa and indeed most developing parts of the world are stored in polypropylene or jute bags arranged in stacks of varied dimensions in naturally ventilated warehouses. This practice is, however, associated with high postharvest losses due to poor temperature and moisture management during storage. This constitutes a major economic and food security challenge in these countries. Therefore, this study characterizes changes in moisture content and temperature occurring in a stack of bagged corn by determining the permeability of bag materials that influence moisture transfer and developing a mathematical model of heat and mass transfer which incorporates the unique …
Physicochemical Characterization, Structural Determination, And Molecular Dynamic Modeling Of Proso Millet Proteins For Enhanced Food Functionality, Felix Akharume
Theses and Dissertations--Biosystems and Agricultural Engineering
More than one-third of Americans today incorporate plant-based protein into their diet and about 40% believed that plant-based protein is healthier than animal protein, especially Millennials. The increasing global demand for plant-based proteins driven by the high cost of animal proteins, consumers’ desire for lean protein, vegetarianism, and the need for more sustainable green protein products have necessitated research into alternate emerging and underutilized sources of protein to complement or supplement the major plant protein in the market- soy, pea, and gluten. Therefore, this dissertation is focused on the valorization of the proteins in proso millet. Specifically, this work focused …

Within the home environment, parents influence their children’s dietary intakes through their parenting and dietary practices, and the foods they make available/accessible. The aim of this cross-sectional study was to examine the associations between home environmental characteristics and children’s dietary intakes. Three hundred and thirty-two children aged three–five years and their parents participated in the study. Home environmental characteristics, including parental control feeding practices, were explored using validated and standardized questionnaires such as the Child Feeding Questionnaire (CFQ), the Physical and Nutritional Home Environment Inventory (PNHEI) and the Healthy Home Survey (HHS). Parent and child food consumption was also measured. …
Computational Modelling Approach For The Optimization Of Apple Juice Clarification Using Immobilized Pectinase And Xylanase Enzymes, Shady Hassan, Gwilym Williams, Amit Jaiswal
Computational Modelling Approach For The Optimization Of Apple Juice Clarification Using Immobilized Pectinase And Xylanase Enzymes, Shady Hassan, Gwilym Williams, Amit Jaiswal
Articles
Apple juice is typically marketed as a clear juice, and hence enzymatic treatments are common practices in juice industry. However, enzymatic treatments have been shown to face some challenges when process efficiency, and cost effectiveness are concerned. Therefore, it is necessary to optimize the enzymatic treatment process to maximize efficiency, and reuse enzymes to minimize the overall cost via immobilization. In this context, the present work features the immobilization of pectinase and xylanase from M. hiemalis on genipin-activated alginate beads, with subsequent evaluation of its efficacy in apple juice clarification. A central composite rotatable design (CCRD), coupled with artificial neural …

Octreotide is approved as a one-month injectable for treatment of acromegaly and neuroendocrine tumours. Oral delivery of the octapeptide is a challenge due mainly to low intestinal epithelial permeability. The intestinal permeation enhancer (PE) salcaprozate sodium (SNAC) has Generally Regarded As Safe (GRAS) status and is a component of an approved oral peptide formulation. The purpose of the study was to examine the capacity of salcaprozate sodium (SNAC), to increase its permeability across isolated rat intestinal mucosae from five regions and across human colonic mucosae mounted in Ussing chambers. Apical-side buffers were Kreb's-Henseleit (KH), fasted simulated intestinal fluid (FaSSIF-V2), rat …

Non-buffered plasma-activated liquids such as water and saline have shown bactericidal effects. In the present study, we investigated the anti-bacterial efficacy and stability of plasma-activated water (PAW) and plasma-activated saline (PAS), generated using a high voltage dielectric barrier discharge system. This study compares the potential of non-buffered plasma-activated liquids (PAL) for the inactivation of Staphylococcus aureus (S. aureus) and Escherichia coli (E. coli) after storage of the solutions at five different temperatures for a storage time up to 18 months after their generation. The temperatures used were room temperature, 4 °C, −16 °C, −80 °C, −150 °C. Both PAW and …

Atmospheric cold plasma (ACP) is under investigation for an extensive range of biocontrol applications in food biosystems. However, the development of a novel intervention technology requires a thorough evaluation of the potential for negative effects and the implications for the human and animal food chains’ safety. The evaluations were performed using a contained, high-voltage, dielectric barrier discharge plasma system. The cytotoxicity of two types of food models—a liquid model (wheat model medium (WMM)) vs. a solid model (wheat grain extract (WGE)) was compared in vitro using the mammalian cell line CHO-K1. The residual toxicity of ACP treatment of grains for …
