CHEMISTRY AND CHEMICAL ENGINEERING
One of the main problems of our time is the sharp increase in alimentary-dependent diseases or so-called "diseases of civilization" caused by unbalanced nutrition, namely a stable deficiency or excess of nutrients with food relative to the physiological human needs. Therefore, recently there has been an increased interest in the production of functional products with a relatively balanced composition of certain nutrients depending on their purpose and intended use. A promising object of modification is traditional fat products, the transformation of which into functional ones is carried out by combining various types of raw materials, i.e., by creating composite (model) …
Comparative Impacts Of Irradiation On Antioxidant Compounds Of Scalded And Non-Scalded Skin Of Granny Smith Apples, Angela Banda
Comparative Impacts Of Irradiation On Antioxidant Compounds Of Scalded And Non-Scalded Skin Of Granny Smith Apples, Angela Banda
Food Science (MS) Theses
Post-harvest Superficial scald affects the quality of Granny Smith Apples. Oxidative stress develops superficial scald with antioxidant systems mitigating the extent of this damage. This study evaluated the effects of gamma, X-ray, and electron beam irradiation on antioxidants – ascorbic acid, total phenolics, α-tocopherol, carotenoids, chlorophyll, and campesterol – in scalded and non-scalded apple peel tissue. Apples were treated with 0.2-0.77 kGy and stored at 0-1 °C. Irradiation at the applied doses increased scald incidence, suggesting that disruption of antioxidant systems promoted reactive oxygen species accumulation and membrane damage. While certain antioxidants appeared to be upregulated as a stress response, …

In gut microbiome research, carbohydrate-active enzyme gene clusters (CGCs) have emerged as key functional units for understanding microbial glycan degradation. Unlike taxonomic or broad pathway annotations, CGCs offer gene-cluster-level resolution and capture substrate-specific microbial functions. However, their diversity and distribution in relation to host metabolic phenotypes, such as obesity, remain poorly characterized. This study tests the hypothesis that the composition and abundance of fiber-targeting CGCs vary between obese and healthy human gut microbiomes, reflecting distinct microbial carbohydrate utilization strategies. To examine this, we constructed a high-quality reference CGC dataset comprising 94,019 clusters from the Unified Human Gastrointestinal Genome and profiled …

CHEMISTRY AND CHEMICAL ENGINEERING
The aim of the study is to conduct a comparative analysis of the technological properties of samples of bakery flour obtained from local and imported varieties of wheat grain at enterprises in Uzbekistan. Existing national and international standard methods were used to study the technological properties of the selected flour samples. Statistical processing and correlation analysis of the obtained research results revealed a direct relationship between the quality and quantity of gluten from damaged starch.

CHEMISTRY AND CHEMICAL ENGINEERING
The aim of the study was to conduct research to determine the possibility of predicting the approximate fatty acid composition of blends based on the iodine number. The fatty acid composition was determined by the chromatographic method and the results were subsequently used to identify the composition of blends by determining the iodine number. The iodine number was determined by calculation and titrimetric methods, comparing the differences between the obtained values. The detected deviations in values between the two methods do not exceed 0.4%, which means that it is possible to predict the approximate fatty acid composition of blends based …

Watermelon rind waste powder (WRWP) is a rich source of dietary fiber and bioactive compounds; hence it could be used to develop functional foods such as bakery products. The present study aimed to utilize WRWP in bakery products development. The treatments included: T1 = Cake without WRWP, T2 = Cake with 10 % WRWP, T3= Cake with 20 % WRWP, T4= Biscuit without WRWP, T5 = Biscuit with 10 % WRWP, T6 = Biscuit with 20 % WRWP. The physicochemical and nutritional properties of watermelon rind waste powder were also determined. The …
