The objective of this study was to explore different type of retail cases and case environments, primarily lighting, to quantify the impact on shelf life. Coarse ground 80:20 beef from a local retail establishment was acquired between 7 and 10 d from the box date and fine ground through a 9.5 mm grinder plate, and then formed into 150.25 g patties with an automatic patty forming machine. Each patty was then individually packaged in PVC-overwrap packages and randomly assigned to one of the four different treatments: open, multideck cases with 3000 K lighting (OPEN3000),open 3500 K lighting (OPEN3500),enclosed, …

Color And Structural Modifications Of Alkaline Extracted Sunflower Protein Concentrates And Isolates Using L-Cysteine And Glutathione, Akira Ishii
Food Science (MS) Theses
Sunflower protein can be extracted at alkaline pH with sulfites or organic solvent de-phenolization of sunflower seed meals if greening is unwanted. This greening is promoted at alkaline pH when chlorogenic acid (CGA) oxidizes and reacts with free amine groups from amino acids, such as lysine. Thiol-containing dough conditioners: L-cysteine hydrochloride and reduced glutathione (GSH) were investigated as an alternative de-greening strategy to de-phenolization. Varying pH from 7 to 11 and concentration of 0.82 to 5.6 mM were randomly assigned by Response Surface Methodology (RSM) to evaluate the combined and additive greening inhibition effect of thiol and extraction pH. The …

Food Sensitivity In Individuals With Altered And Unaltered Digestive Tracts, Walker Carson
Department of Food Science and Technology: Dissertations, Theses, and Student Research
Immunoglobulin G (IgG) against food proteins has become the subject of much discussion with regards to its role in adverse food reactions. An estimated 20% of the population suffers from some type of food intolerance. Food sensitivity can present with a vast range of symptoms and severities. Diet can have a substantial impact on the wellbeing of individuals with diseases of the gastrointestinal tract, such as Crohn’s disease or ulcerative colitis. Incidentally, these diseases have been associated with elevated levels of food-specific IgG as well an increased likelihood of food sensitivity. The presence of food-specific IgG and food sensitivity in …

A Systematic Literature Review Of Sanitizer Efficacy To Remove Listeria Monocytogenes, Salmonella Spp., And Shiga Toxin-Producing Escherichia Coli Biofilms From Food Processing Surfaces, Ashlynn Robinson
Food Science Undergraduate Honors Theses
Sanitizing in food production environments is essential to prevent, reduce, and/or eliminate foodborne pathogens. Biofilms consist of one or more different types of microorganisms and can grow on numerous types of surfaces (Costerton,1999). SLRs provide transparency about what steps were taken to acquire the sources included in the analysis (Liberati et al.,2009; Moher et al., 2009). The references obtained from the databases were based on specific eligibility criteria to ensure reproducible results. The inclusion criteria included six surface types (stainless steel, glass, plastic, polyurethane, PVC, rubber), seven sanitizer types (anionic acid, benzalkonium chloride, iodine, iodophor, peracetic acid, quaternary ammonium, and …

Optimization Of Broken Rice Consumption Through Understanding The Confluence Of Sensory And Economic Preferences, Matthew Greer Richardson
Graduate Theses and Dissertations
The authors were perplexed by the seeming dichotomy between the majority 70% of Haitian consumers being chronically food insecure, but still preferring to pay premium international market prices for long-grain rice that constitutes 30% of the calories in this poorest nation in the Western Hemisphere. The aim of this study was to determine the optimal percent broken rice in regards to price specifically to Haiti. Optimization between quality and price point is seen as the best rice for the price, and can be found through combining individual preferences with willingness to pay. Broken rice (brokens) garner a significantly discounted price …

Evaluation Of Irrigation And Nutrient Management Strategies In Rice Using Alternative Irrigation Methods, Justin Lee Chlapecka
Graduate Theses and Dissertations
As water resources gain value across the Mid-South, alternative irrigation strategies of rice (Oryza sativa L.) have garnered increasing attention. In 2015, an estimated 1.7% of Arkansas rice hectarage used alternate wetting and drying (AWD) irrigation and 0.9% used furrow irrigation. As of 2020, 2.5% used AWD and 16.9% used furrow irrigation, the latter accounting for near 99,000 ha in Arkansas. Little information exists in the scientific literature in relation to management of rice grown in the Mid-South without a conventional flood. This fact coupled with the rapid adoption rate, especially for furrow-irrigated rice (FIR), during the last five years …

The results showed that the fatty acid content of different Bifidobacterium was significantly different among the metabolites, and there were some differences among the cells. Differences of fatty acid were also found among the same Bifidobacteriium strains derived from different sources. Methyl palmitate (C16:0), methyl lignocerate (C24:0), and methyl stearate (C18:0) were the main fatty acids in metabolites and cells of the five strains. Among them, the C16:0 was significantly different (P<0.05), and …

Quantitative analysis of total fluorine in tea was established by using 19F quantitative nuclear magnetic resonance combined with the pretreatment method of oxygen bomb combustion. The 19F qNMR method used the signal characteristic of fluoride ion at δ=-119 as the qualitative peak and the signal characteristic of trifluoroacetic acid at δ=-75 as the internal standard peak. The fluorine-containing substances in tea sample was burned by oxygen bomb and converted into inorganic fluorine. Mixed metal chelating agent which included sodium citrate and disodium EDTA was added to eliminate interference and then the absolute content of fluoride ion in tea …
