Phytate Extraction And Stimulation Of Phytase By Zn & Mg In Seeds, Sandra Gin-San Chow

Almonds, peanuts, mung beans and soy beans were soaked in distilled water for 0, 2, 6, 18 and 24 hours, and the phytate in the seeds and in the soak water was quantitatively analyzed. A comparison of phytate content was made after the seeds were soaked in 0.01 N HCl or in saturated NaHco 3. The seeds soaked in distilled water served as controls. The effects of zinc and magnesium on stimulation of phytase in seeds were determined by comparing the quantity of substrate (phytate) with that of the control group.

The purpose of this study was to determine: (a) the level of disagreement/agreement (role consensus) between skilled nursing facility administrators and consultant dietitians on the activities, responsibilities, and guilities which compose the ideal role (role expectations) of the consultant dietitian; (b) the extent to which administrators and consultant dietitians perceive discrepancies/consistencies between ideal (role expectations) and actual (reality) performance of the dietitian at present; and (c) the common deterrents, which consultant dietitians perceive as the basis for the dichotomy between ideal (role expectations) and actual (reality) role performance.

Phytic acid was quantitatively analyzed in sprouted alfalfa, lentil, mung bean and soy bean seeds. Pulverized dry seeds served as a control and the various sprouting times were 12, 24, 48 and 72 hours after a 12 hour soaking. A comparison was made between sprouts grown in the light for the last 24 hours vs sprouts kept in darkened areas for the total growing time.

Hypothalamic and cortical extracts from various cariogenically grouped rats which had been maintained on either a Purina diet or a high sucrose diet (HSD) for three months were infused intravenously into 28 days old rats to determine if there was a titer of parotid hormone releasing factor (PRF) capable of facilitating fluid movement (FM) in the teeth. The hypothalamic and cortical extracts obtained from Purina-fed rats with 0-caries and the hypothalamic extracts from BSD-fed rats conclusively demonstrated FM stimulatory ability. Other Purina-fed groups were essentially biologically ineffective, however, extracts from HSD-fed caries groups including scores 11-40 demonstrated extremely potent FM …

Forty-eight weanling male Sprague-Dawley laboratory white rats were fed diets composed of whole wheat bread which was made with one of the three sweeteners studied and added before or after baking and adequate vitamins and minerals for the animals' needs. The rats were divided into six groups, designated A through F. Groups A, C, and E were fed bread diets that had the sweeteners honey, corn syrup, and white table sugar added respectively before baking, while Groups B, D, and F were fed bread diets with the sweeteners honey, corn syrup, and white table sugar added respectively after baking.

This thesis describes a comparative study of 82 vegetarian and 21 non-vegetarian Seventh-day Adventist females ages 25 to 65 to discover if there is a possible correlation between diet and weight. The subjects were chosen by random sampling in the specified target population and were personally interviewed by the use of a questionnaire.

The general linear hypothesis analysis shewed that present age and relative weight at age 25 were significant in terms of present relative weight; however, physical activity and socioeconomic stratum were not significant. Diet, defined as vegetarian or non-vegetarian, was only marginally significant.

The Effect Of A Pufa Diet On Human Red Blood Cell Levels Of 2, 3-Dpg, Sandra A. Dassenko

Fasting blood was collected at weekly intervals and the level of 2,3-DPG of the red blood cell was determined in 15 male subjects age 28 to 57 with serum cholesterol levels greater than 250 mg%. A lactovegetarian diet containing no cholesterol, a high level of dietary fiber and a P/S ratio of 4.0 was provided for 28 days.

During the course of the experimental period the 2,3-DPG increased by an average of 0.83> «moles/ml red blood cell which was highly significant (p^.001). This significant increase of 2,3-DPG which relates to an increased oxygen delivery capability of the red blood cells …

The purpose of this study was to evaluate the nutritive value of ogi, which is the national weaning food in Nigeria, and to supplement it with indigenous foods that are easily produced in Nigeria, available in the local market, locally used, and within the economic capacity of the people. The protein content of corn and ogi was determined by the Kjeldahl method and the amino acid content was determined by ionexchange chromatography. The quality of the foods was evaluated by the rat growth method and the protein efficiency ratio (PER).

A manual was prepared and evaluated for use by non-professional personnel in community nutrition education. Instruction and suggestions were given for organizing these classes and techniques outlined for food demonstrations. Material was written for lectures and tests on eight nutrition topics, with visual aid suggestions, recipes and "chatter" to accompany the recipes.

The material was tested by presenting three of the eight topics before audiences. Volunteer non-professional teacher-demonstrators gave the presentations which were evaluated by test scores from the audiences, by score forms from each teacher-demonstrator, and by evaluation sheets from the advisory committee.

Studies were conducted utilizing albino rats to determine the relationship of voluntary alcohol consumption with various dietary additives and exposure to cigarette smoke in combination with poor quality diets. Male, Sprague-Dawley rats, from weanling age to 100 grams, were given the various experimental diets and a free fluid choice of ten per cent ethanol or tap water. Fluid intakes were recorded and analyzed statistically. Individual variation was common with a generally low level of alcohol consumption when rats were fed a poor quality diet of common United States foods. A questionnaire was developed to determine the ethical attitudes and education of a group of California dietitians. A group of 198 randomly selected individuals from the California Dietetic Association membership of 2,180 participated in the study.

Great diversity was exhibited in age, type of position held and total years of work experience in the sample group. Eighty-one per cent of the respondents were less than forty-nine years of age. The positions most frequently held by the participants were in hospital therapeutics and administration, teaching and schools, and consultant work. The first study was designed to evaluate by the nitrogen balance method the protein quality of a pure-vegetarian diet containing about 6 grams of nitrogen per day. The group as a whole maintained nitrogen equilibrium the average being - 0.11 grams of nitrogen per day. Two subjects were not in nitrogen balance, however, factors other than diet may have contributed to these results and are discussed in the thesis. Hemoglobin, serum cholesterol and total serum proteins did not change significantly during the study. The average true digestibility of 5 of the subjects was 85 percent. Various individual and supplemented plant proteins were studied by the protein efficiency ratio (PER) method to determine their relative abilities to promote growth in young albino rats. Animals received a 10 percent level of protein in an otherwise adequate ration.

This exploratory study was conducted to discover to what extent patients follow their low-cholesterol diets. If they did not, the reasons were investigated. It was hoped that the findings would aid in defining areas of instruction which need greater emphasis when patients receive instruction concerning a low-cholesterol diet.

An interview guide was used as a data gathering tool. This study was involved in the selection of recipes for a cookbook. Over a thousand recipes were screened from a much larger number. These recipes were processed by grouping, combining and arranging into a uniform style and format. Many recipes were revised and tested. All recipes were of a lacto-ovo-vegetarian type, free from soda, baking powder and harmful condiments and spices.

Basic ingredient cards were prepared for the IBM computer from tables of food composition. Recipe ingredient cards for each item in the recipes were also prepared. These were programmed into the computer to give the total and per serving …

The delivery and transportation time, temperature control and cost factors of four systems of tray transportation and distribution were compared. The systems that were used were the following: 'Electra Royal' of Meals on Wheels, 'Unitray' Cart of Swartbough, 'Lampson Trayevors', and the "Dri Heat Food System'. Hospitals which has the specific system were used for the delivery and transportation time and for the temperature control portion of the study. The need for the study was established when the writer was asked to direct a training course for food service supervisors in Brazil. Correspondence with dietitians in Brazil reveled that there was a definite need for a manual which presents current scientific, and technological information.

The effect of a high unsaturated-low saturated fat diet on serum cholesterol levels were studied. Subjects were clinic patients receiving the following hypocholesterolmeic agents: triparanol (MER-29), diildothyroacetic acid (Diac), dextrothyroxine (d-T4) and 3-methoxy-16, alpha-methyl-1,3,5, (10)-estratriene-16 beta, 17 beta-diol (Manvene or Anvene).

Fifteen hypercholesterolemic patients, eleven of whom were diabetic, were placed on diets with prescribed amounts of unsaturated fat. The caloric distribution was 40 per cent carbohydrate, 20 per cent protein, and 40 per cent fat. The level of unsaturated fat was 70 per cent of the total fat.

This has been a study in which it was attempted to determine the effect of slowly digesting food on the glucose tolerance curves of patients who had abnormal blood sugar levels.

The experimental method was used. Patients were selected by criteria which included certain symptomology and background of diabetic history. Fifty-two patients were prepared for glucose tolerance tests by a diet predominating in rapidly digested carbohydrates. This diet contained food which is commonly used in the American diet.
