A Comparison Study Of Quality Attributes Of Ground Beef And Veal Patties And Thermal Inactivation Of Escherichia Coli O157:H7 After Double Pan-Broiling Under Dynamic Conditions, Kawang Li, Amanda Gip Mckeith, Cangliang Shen, Russell Mckeith

This study compared the quality variation and thermal inactivation of Escherichia coli O157:H7 in non-intact beef and veal. Coarse ground beef and veal patties (2.1 cm thick, 12.4 cm diameter, 180 g) inoculated with E. coli O157:H7, aerobically stored before double pan-broiling for 0–360 s without rest or to 55, 62.5, 71.1, and 76 ◦C (internal temperature) with 0.5- or 3.5-min rest. Microbial population and qualities including color, cooking losses, pH, water activity, fat, and moisture content, were tested. After cooking the beef and veal patties, the weight losses were 17.83–29%, the pH increased from 5.53–5.60 to 5.74–6.09, the moisture …

The purpose of this study was to provide a qualitative case study analysis of the soft skill development of summer camp staff members at the Kentucky FFA Leadership Training Center and to look at whether or not the leadership development focus of the camp program had an increased impact on the development of the staff members’ leadership skills. Aflatoxins are toxic and carcinogenic secondary metabolites produced predominantly by two fungal species: Aspergillus flavus and Aspergillus parasiticus (Gourama, H., & Bullerman, L., 1995). These fungal species are contaminants of food crops as well as animal feeds, and are responsible for aflatoxin contamination of these agricultural products. The toxicity and potency of aflatoxins make them the primary health hazard as well as responsible for losses associated with contaminations of processed foods and feeds (Gourama, H., & Bullerman, L., 1995). The Wild Free-Roaming Horses and Burros Act (WFRHBA) of 1971 established all “unbranded or unclaimed” equids on U.S. public lands as “living symbols of the historic and pioneer spirit of the West.” Today, >72,000 feral horses (Equus ferus caballus) and burros (E . asinus ; WHB) live on western U.S. public rangelands. The number of WHBs exceeds the Bureau of Land Management’s maximum Appropriate Management Level (AML) of 26,715 by a factor of approximately 2.7 and has nearly doubled from 2007–2015. The AML was set to balance WHB numbers with rangeland health and support other uses such as wildlife habitat …

In recent years, School-Based Agricultural Education has been facing a shortage of secondary teachers, due in part to low retention rates of these valuable educators. In light of this shortage, a multitude of research has been conducted throughout the country on challenges faced by agricultural educators, some as indicators of intent to leave the profession. This thesis sought to synthesize the research conducted on job satisfaction, retention, and attrition of School-Based Agricultural Educators order to identify prevalent problems facing these teachers which may contribute to the decision to leave the classroom. The purpose of this study was to describe agricultural information sources available to farmers and to describe food access and availability for the people of Dangriga, Stann Creek, Belize. This study used descriptive survey research methods with convenience sampling of the general public (n=22) and of farmers (n = 38) in the summer of 2017. Farmers use a variety of agricultural information sources with the extension service cited most often, followed by friends and fellow farmers. Weather, lack of information, pests, and inadequate access to capital were of primary concern for farmers. Face-to-face meetings were used most often by extension …

Work-life balance is a key indicator of employee satisfaction, retention, and social health as well as organizational creativity and productivity. These dual benefits for employee and employer have generated interest in promoting work-life balance. Supervisors who operate from a transformational leadership framework have been linked to greater work-life balance among employees (Lamm, 2011; (Kutilek, Conklin, & Gunderson, 2002). Tomorrow’s agricultural workforce will face challenges in the form of complex problems that transcend disciplinary boundaries, including food security. Addressing these complex issues requires professionals to work within and across disciplines in ways that may not have been required in previous generations. Teaching using an interdisciplinary approach may be one approach to helping students develop the skills needed to address these problems. This study examined the effects of standards-based grading on achievement and perceptions of students enrolled in high school agricultural education courses. Three-dimensional NDVI point clouds can be an innovative method for detecting Huanglongbing (HLB) disease in citrus trees. In February 2018, an Unmanned Aircraft System (UAS) captured narrow-band multispectral images to detect healthiness variations of infected citrus trees. A 30-acre section of a citrus grove in Florida with a known HLB infection was examined to determine if three-dimensional Normalized Difference Vegetation Index (NDVI) point clouds can indicate healthiness variations in HLB-infected citrus trees and how three-dimensional NDVI point clouds compared to two-dimensional NDVI reflectance maps for detecting healthiness variations in HLB-infected citrus trees. Reflection And Evaluation Of The “Healthy Me, Healthy Earth” After-School Program, Mary K. Sherman

Honors Theses and Capstones

The “Healthy Me, Healthy Earth” program was an eight week after-school program for first through fourth graders at the Woodman Park Elementary School in Dover, NH conducted during the Fall of 2017. The program used a cost-effective, food system-based curriculum to promote health and environmental literacy to students who participated. An interdisciplinary approach was used to assess the knowledge, attitude, and behavioral changes of the students. There was a noted improvement in comprehension of food system concepts.
