In Bolivia we have three very valuable Andean grains: amaranth (Amaranthus caudatus), quinoa (Chenopodium quinua), and canihua (Chenopodium pallidicaule), which combined with cereals and legumes can become a complete and balanced food in order to combat the malnutrition that is so widespread in our region. In this study, various nutritional mixes were formulated, based on amaranth and other Andean crops, and the three best were chosen according to nutrition, palatability, and cost. They were: Andean Baby Food, Mixicereal, and Amaranth Cookie, which have an amino acid complement between 79% and 100% and give satisfactory amounts of protein, energy, and minerals …

The present investigation was carried out in the rural community La Rinconada, located in the canton Ibarra of the province of Imbabura. The field work was developed during 12 months. Previous activities were developed to the rehearsal like socialization of the program; training in areas of: poscosecha of grains, alfalfa cultivation and systems of growth of guinea pigs. The rural communities of the province of Imbabura present multiple problems of environmental, educational, and economic kind. Previous studies show that the rural communities of the Ecuadorian population present serious problems of health and nutrition, among those that excel are: poliparasitosis, respiratory infections and diarrheal, malnutrition, deficiency of micro nutrients, sanitary deficiency, scarce economic resources and low level of instruction. In Guatemala, nutritional problems are directly related to the difficulty to purchase food fit for human consumption due to low family incomes as well as low nutritional education. This situation motivated the realization of the present study whose main objective was to apply the dietary guidelines for Guatemala in three rural communities of Chiquimula. The present investigation was made in the Laboratories of microbiology of the Ability of Cattle Sciences of the Polytechnic Superior School of Chimborazo, with samples obtained in the Municipal Camal Riobamba and the Community of Tunshi San Nicolás. The incidence of Brucellosis was analyzed in six more important cattle areas of the county using the antigens Brucella abortus and Rosa of Flare. The study conducted in the rural area of the province of Imbabura included a total of 518 families that when compared with the estimated sample of 96%, 42.7 % corresponding to the indigenous ethnic group, 28.15% to Black and 25% to mixed-race ethnic groups, these differences of involvement between ethnic groups is due to the fact that the indigenous population is greater than the two remaining populations. Of the 518 families studied they were able to obtain a total of 794 children younger than 5, in which 48.5% pertaining to the male sex and 51.4% to the female sex. In …

The purpose of this study is two-fold. First, it shows that physiological differences between men and women result in gender-specific exposures with respect to benzene. Second, it assesses the potential for a lactating woman's occupational and personal benzene exposure to impact a nursing infant's exposure, highlighting the possibility of subjecting an infant to the effects of industrial chemicals via breast feeding. This study employs physiologically based pharmacokinetic (PBPK) modeling to investigate the influence of physiological parameters and to evaluate the ability of inhaled benzene to transfer from mother to infant through breastmilk. Monte Carlo simulation and source-receptor modeling are used to estimate the TCE exposures encountered by select workers at aircraft maintenance facilities at Hill Air Force Base between 1955 and 1979. An epidemiological study of this group, a retrospective cohort study of 14,457 workers who were employed at the base for a minimum of one year between 1952 and 1956, was headed by Dr. R. Spirtas of the National Cancer Institute to evaluate mortality associated with occupational exposure. One of the major conclusions of the study was that TCE 'probably does not pose a strong carcinogenic risk for man.' In the …
