The first chapter of this dissertation examines price discovery and volatility spillovers in the coffee spot-futures commodity market over the post-ICA period by employing the PT-IS and bivariate EGARCH models. This research covers two actively traded coffee types, Arabica and Robusta, and utilizes daily time-series price data over 1990:01-2020:04 for Arabica and over 2008:01-2020:04 for Robusta. The empirical results indicate that coffee spot markets play a dominant role in the coffee price discovery for both Arabica and Robusta. The results also show volatility spillovers take place from the coffee spot market to the futures markets. This study helps small-scale coffee …

The prevalence of obesity is greater in rural communities, and current health promotion interventions have not shown broad positive impacts on dietary patterns in these areas. Focusing community-based efforts on unconventional food retailers is a unique avenue to encourage healthier food choices in rural populations. This study used shelf-wobblers to market healthier snack and beverage items at convenience stores (n=5) in a rural Kentucky county. Selection of healthy snacks and beverages from the store inventory was conducted using the CDC Food Service Guidelines for Federal Facilities calculator. Nitrogen use efficiency (NUE) is an essential factor to increase crop yield. When conventional nitrogen fertilizer (e.g. Urea, Ammonium Sulphate, etc.) is applied in the field, generally over 50% of the N of these fertilizers may lose into the air due to vaporization, or run-off and leaching in rivers and lakes. This paper examines the recent history of urban planning policy in and around Portland, Oregon with respect to efforts to enhance local agriculture. Despite recent and ongoing efforts to promote distribution and direct sale of local food products in the city, I argue that the dominant effect of the Urban Growth Boundary (UGB) in place since the 1970s has been to push agricultural production further from the most populous areas of the city. Whereas the UGB at present cannot include areas zoned specifically for agricultural use, I argue that it must reformed to allow for "agricultural reserves" within the boundary. …

At its core, neoliberalism is rooted in the belief of free markets, laissez-faire economics, and federal deregulation. Grocery sales taxes represent a stable tax revenue stream for state and municipal government, but there is rare empirical evidence suggesting grocery taxes may adversely affect health. In addition, the how governments set grocery sales taxes is still unclear. Therefore, based on a novel national dataset of annual county and state-level grocery taxes from 2009 through 2016, the following three essays in the dissertation investigate the health impacts of grocery sales taxes and the causes of grocery sales taxes in a framework of tax competition.

The purpose of this study was to better understand the relationship between elements of patient-centered care and patient/provider comfort with conversing about food insecurity and related social determinants of health. A mixed methods study was conducted. Patients and healthcare providers were surveyed on their experiences with patient-centered care and comfort discussing food insecurity and related social concerns. Telephone interviews were conducted to gain a richer understanding of the concepts under investigation. In the survey and telephone interviews, both samples were also asked about changes in communication during COVID-19 times. Understanding food choice is critical to be able to address the rise in obesity rates around the globe. In this paper, we examine the relationship between measured (BMI, using self-reported height and weight) and perceived weight status with the number of calories ordered in a controlled online food choice exercise. A total of 1044 participants completed an online food choice exercise in which they selected ingredients for a sandwich from five categories: meat/protein, cheese, spread/dressing, bread, and vegetables.
