Pasture and rangeland make up about 45 percent of the agricultural land in the U.S. Great Plains and one of the most common form of mismanagement of this pasture is overgrazing. Which results in many detrimental effects on environment. Many practitioners endorsed Rotational grazing (RG) as an improved grazing management practice over season-long continuous grazing. The overall goal of the current study is to assess the certain aspects of using RG in the U.S. Great Plains. The adoption of genetically modified (GM) crops, the rise of ethanol production that produced an additional derived demand for corn, and the increasingly prominent position of corn and soybeans in crop rotations embody major changes in U.S. agriculture during the past decades. This study investigates the linkages among these developments in two ways. First, we look at how biotechnology and biofuels have influenced cropping system changes in the Corn Belt region of the United States, using state-level data from 2000 to 2019. Nitrogen use efficiency (NUE) is an essential factor to increase crop yield. When conventional nitrogen fertilizer (e.g. Urea, Ammonium Sulphate, etc.) is applied in the field, generally over 50% of the N of these fertilizers may lose into the air due to vaporization, or run-off and leaching in rivers and lakes. Understanding food choice is critical to be able to address the rise in obesity rates around the globe. In this paper, we examine the relationship between measured (BMI, using self-reported height and weight) and perceived weight status with the number of calories ordered in a controlled online food choice exercise. A total of 1044 participants completed an online food choice exercise in which they selected ingredients for a sandwich from five categories: meat/protein, cheese, spread/dressing, bread, and vegetables. Grocery sales taxes represent a stable tax revenue stream for state and municipal government, but there is rare empirical evidence suggesting grocery taxes may adversely affect health. In addition, the how governments set grocery sales taxes is still unclear. Therefore, based on a novel national dataset of annual county and state-level grocery taxes from 2009 through 2016, the following three essays in the dissertation investigate the health impacts of grocery sales taxes and the causes of grocery sales taxes in a framework of tax competition.

The purpose of this study was to better understand the relationship between elements of patient-centered care and patient/provider comfort with conversing about food insecurity and related social determinants of health. A mixed methods study was conducted. Patients and healthcare providers were surveyed on their experiences with patient-centered care and comfort discussing food insecurity and related social concerns. Telephone interviews were conducted to gain a richer understanding of the concepts under investigation. In the survey and telephone interviews, both samples were also asked about changes in communication during COVID-19 times. In the first essay, high rates of chronic diseases and increasing nutritional polarization between different income groups in the United States are shown to be issues that should concern policymakers and public health officials. Spatial differences in access to food are evaluated as the cause of these nutritional inequalities. This paper examines the recent history of urban planning policy in and around Portland, Oregon with respect to efforts to enhance local agriculture. Despite recent and ongoing efforts to promote distribution and direct sale of local food products in the city, I argue that the dominant effect of the Urban Growth Boundary (UGB) in place since the 1970s has been to push agricultural production further from the most populous areas of the city. Whereas the UGB at present cannot include areas zoned specifically for agricultural use, I argue that it must reformed to allow for "agricultural reserves" within the boundary. …

This dissertation consists of three essays that use applied econometric analysis and other analytical methods from various economic fields, including regional and urban economics, natural resource economics, housing economics, and sports economics. In all three essays, I use housing data to value various amenities and disamenities. Using several variations on the hedonic method, I am able to uncover the values based on the capitalization effect. I consider the effect of natural resource development by examining shale gas development, as well as the effect of urban development projects, including public transportation and sports facilities.

Economic insecurity exists whenever income sources are uncertain, and this is a failure of a fundamental human right. The Covid-19 pandemic has presented unprecedented disruptions to the US economy and has created unparalleled food insufficiency and economic hardships. Before the pandemic, household food insufficiency existed but downplayed in the political arena. In 2019, 10.5 percent of households in the US lived in extreme poverty and were food insecure, the lowest since 1959, but the pandemic has had devastating effects on household food insufficiency.
