The Center for Disease Control and Prevention (CDC) suggests that adolescents and children, both male and female, are failing to meet the daily fruit and vegetable consumption requirements (Kim et al., 2011; Upton et al., 2012; Harris et al., 2012). Other studies have shown that with increased exposure and availability of produce, students (K-5) tend to consume more fruits and vegetables (Cullen et al., 2009; Evans et al., 2012). The objective of this research was to quantify and assess the energy use and efficiency of commercial cross-flow dryers when drying rice using a range of drying and ambient conditions. First, equations that predict the theoretical energy required to dry rice from any given initial moisture content to a desired final moisture content were developed for several rice cultivars using a semi-theoretical approach to obtain a basis for comparison to calculate energy efficiency. Theoretical energy requirements, expressed as the energy required per unit mass of water removed, increased exponentially as initial moisture content decreased. This study examines the relationship between food insecurity and Social capital among 5th-7th graders attending an intermediate school in Northwest Arkansas where nearly 70 percent of students participate in the free or reduced lunch program. The central research questions are: Does Social capital have a direct impact on children's food insecurity? And, does Social capital mediate the influence of negative circumstances on children's food insecurity? This study finds that Social capital does have a significant association with food insecurity, even when controlling for multiple demographic and circumstantial factors. However, there appears to be no mediation of circumstance by Social capital. …

The geopolitical importance of the mining industry in Zambia and Katanga, and the rural-urban migration patterns that it brought about, has been the subject of many studies. And yet, the extent to which these industries were interdependent is often downplayed or overlooked. Looking more closely at the history of the Zambian and Katangese Copperbelts, one can see that, despite their separateness, there was interplay between them. During the British South Africa Company rule of Rhodesia (1899-1924), Northern Rhodesia was developed as an important labour and food reserve for the Katangese mines. In this paper, we considered the following question: If Yamhill County in northwest Oregon were to become isolated, would the population be able to survive off the agricultural products grown within its boundaries? We looked at what the farms in Yamhill County grow and how large of a population they could support. Essentially, this looked at the feasibility of a purely local food system within the borders of Yamhill County. Williston emerged as a natural choice for this study due to the recent crude oil production boom experienced by it post 2007. The implications of natural resource abundance on regional development are rather mixed in literature. While one strand of literature believes that natural resource industries often create forward linkages which supplement regional development, the other strand believes that it impedes regional development by diverting local resources. REDD+ (Reduced Emissions from Deforestation and Forest Degradation, “plus” afforestration) is a tool that supports forest carbon-enhancing approaches in the developing world in order to mitigate and hopefully reverse climate change. A key issue within REDD+ is to appropriately bring in the almost 25% of developing country forests that are effectively controlled by communities. This study examines the protein deficiency in Tanzania from a livelihood, decision based perspective, by looking at household decisions concerning meat protein consumption and production, in the Bangatan village area. More specifically it examines decisions regarding selling livestock rather than consuming it, the purpose of this cash generation, and globalization’s effects on these livelihood decisions. Predictions included: 1) no correlation or possibly a negative correlation between amount of livestock owned and meat protein consumed 2) families with more cash wealth eat more meat and 3) globalization has effected livelihood decisions regarding the direction of cash over the last 10 years …

This paper explores various food-­‐related narratives, including meat production in Kathmandu, organic farming, the separate experiences of American researchers and American missionaries, "haute cuisine" in a luxury hotel, and a nutritional rehabilitation clinic for malnourished children. Accompanying these narratives are my own experiences that are made communicable through making, or watching food being made. The result of these narratives is a growing picture of the various roles food plays within our lives-­‐ generated by what was communicated by the people who source, cook, and eat food, but also infused by my own observations. Funded by Nellis Air Force Base (NAFB), my thesis research and analysis examined Native American knowledge of heritage foods and how diminished access to food resources has affected Native American identity and health. NAFB manages the Nevada Test and Training Range (NTTR), land and air space in southern Nevada, which includes Native American ancestral lands. During a research period of 3 months in the spring/summer of 2012, I interviewed members of Native American nations culturally affiliated with ancestral lands on the NTTR, the Paiute Indian Tribe of Utah (PITU) and the Bishop Paiute Tribe. Each year, the University of Nebraska – Lincoln develops multiple displays for Husker Harvest Days, a Nebraska-based agricultural trade show. The University’s 2012 theme was “Strengthening the State of Beef”. The Animal Manure Management workgroup, along with others working in environmental stewardship at the University of Nebraska – Lincoln came together to develop a backdrop titled “Nebraska’s beef industry thrives by its stewardship”. Many media and scholars outside China are advocating for the privatization of land ownership in China, claiming it to be a necessary step before China can transform its agriculture into large-scale, market-oriented and technology-intensive modern agriculture. Chinese scholars advocating land privatization, on the other hand, typically argue that land privatization would offer farmers more protection of their rights. In this paper, we present a contrarian view to these calls for land privatization published in both mainstream media and academic journals.
