It is well known that children do not eat enough fruits and vegetables. The FIT Game Healthy Eating Program is an interactive, story-board type narrative that has increased fruit and vegetable consumption in elementary school children. While The FIT Game intervention has shown progress in the past, the schools studied had minimal diversity and the intervention was time intensive and costly.

Most beef cattle in the US are feedlot-finished where intensive feeding of grains is used to increase weight and yield; however, a minority are raised in grass-fed operations that use exclusive pasture, rangeland, and hay for feeding, possibly leading to benefits for the land, soil, ecosystems, forages, and the meat itself. These operations use a variety of methods, and the goal of this was to recognize differences in the soil and forage metrics to help understand the resulting meat fatty acid composition and mineral content. Adipose thermogenesis has been actively investigated as a therapeutic target for improving metabolic dysfunction in obesity. However, its applicability to middle-aged and older populations, which bear the highest obesity prevalence in the United States (approximately 40%), remains uncertain due to age-related decline in thermogenic responses. In this study, we investigated the effects of chronic thermogenic stimulation using the β3-adrenergic (AR) agonist CL316,243 (CL) on systemic metabolism and adipose function in aged (18-month-old) C57BL/6JN mice. Objective: Identification of prognostic biomarkers in pediatric diabetes is important for precision medicine. We assessed whether C-peptide and islet autoantibodies are useful to predict the natural history of children with new-onset diabetes.

Methods: We prospectively studied 72 children with new-onset diabetes (median follow-up: 8 months) by applying the Aβ classification system ("A+": islet autoantibody positive, "β+": random serum C-peptide ≥1.3 ng/mL at diagnosis). Beta-cell function was assessed longitudinally with 2 hours postprandial/stimulated urinary C-peptide-to-creatinine ratio (UCPCR) 3-12 weeks (V1) and 6 to 12 months after diagnosis (V2). This study compared the Peak Health and Performance curriculum (PHP) to the Teen Cuisine curriculum (TC) on improving nutrition, food safety, and physical activity (PA) behaviors among youth. The quasi-experimental study was conducted in Michigan middle and high schools and included 1007 5th- through 12th-grade students, who participated in either the PHP or the TC curriculum. There were 465 students in the PHP group and 495 students in the TC group. Nutrition, food safety, and PA behaviors were surveyed before and after each program. In the quest for healthier and more natural food products, using beneficial lactic acid bacteria to preserve food, known as biopreservation, is becoming increasingly important. This research focused on a strain of beneficial bacteria called Latilactobacillus curvatus and its ability to inhibit fungal growth both in lab settings and in a yogurt system. This has the potential to enhance the safety and quality of dairy products.

We studied a specific strain of this bacteria, named WSU-1, found in dairy. Through detailed analysis, we discovered that this strain could produce substances that may help protect food from harmful microbes. In laboratory …

Previous studies have shown that consumers are willing to pay a premium for beef that is guaranteed to be more tender and are more likely to purchase that product repeatedly. The relationship between dietary fiber intake and human health has gained significant attention due to its potential in preventing chronic diseases and promoting gut health. Grains are a primary source of dietary fiber; however, the health impact of grain fibers is often limited because they are incompletely metabolized by gut bacteria. This dissertation explores innovative strategies to enhance the concentration and of dietary fiber from grains and its utilization by gut bacteria. TV viewing is associated with health risks, but existing measures of TV viewing are imprecise due to relying on self-report. We developed the Family Level Assessment of Screen use in the Home (FLASH)-TV, a machine learning pipeline with state-of-the-art computer vision methods to measure children's TV viewing. However, evidence of household-level food expenditure and its association with child stunting and anemia is limited. This study aimed to observe the association between household food expenditure typology and child stunting and anemia in Indonesia. Data was obtained from the 2007 and 2014 Indonesia Family Life Survey (IFLS). The household food expenditure, child nutritional status, and anemia were observed in 2007 and 2014. Maternal nutritional needs increase during lactation. However, the energy intake of breastfeeding mothers usually still falls short of the recommended adequacy levels. This study aimed to identify the dominant factor of energy intake in breastfeeding mothers in Sawangan District, Depok City, Indonesia. This quantitative study used a cross-sectional design from July 2022 to February 2023. Energy intake, dietary diversity, and eating frequency were collected using 24-hour food recall. Purpose: The purpose of this research study was to examine the effect of an innovative, online COVID-19 interprofessional educational module among health and allied health professions students.

Methods: This study utilized a pre- and posttest design with quantitative and qualitative data collected winter 2023 and spring/summer 2023 semesters, and consisted of health and allied health professions students (N=143) from three Midwestern, urban, public universities. Face-to-face cooking programs can positively impact food choices, fruit and vegetable intake, and cooking self-efficacy; however, little is known about virtual cooking programs. We studied the perceived acceptability of the virtual SWITCH Cooking School (SCS). Four monthly cooking classes were offered for each participating school. Classes included nutrition education, food safety, and cooking demonstrations. Feedback was collected through post-class surveys and focus groups with parent/guardian and youth participants. Families valued the convenience of the virtual delivery and were interested in participating again. Future considerations for the SCS include incorporating additional variety of culinary skills and modifying registration methods.
