Protein malnutrition is responsible for half the deaths of children under the age of five each year in developing countries. More than 4%, 26%, and 70% of children with protein malnutrition live in Latin America/the Caribbean, Africa, and Asia, respectively. The objective of this research was to develop a novel snack made with millet, black eye bean (from Niger Republic), and rice flour fortified with soybean meal protein using extrusion technology. Household-level characteristics have been shown to be associated with food insecurity but studies among vulnerable populations are sparse. A food security assessment was developed to determine food security and collect sociodemographic and household level data across San Luis Obispo County. The assessments were administered to vulnerable groups through interviews at multiple sites across the County. Three household characteristics (marital status, number of children in the household and number of workers in the household) were examined in this analysis. This study examines the protein deficiency in Tanzania from a livelihood, decision based perspective, by looking at household decisions concerning meat protein consumption and production, in the Bangatan village area. More specifically it examines decisions regarding selling livestock rather than consuming it, the purpose of this cash generation, and globalization’s effects on these livelihood decisions. In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. The purpose of this study was to determine the food behaviors of nutritionally high-risk seniors as a function of their racial background, gender, marital status, and education level. A total of 69 seniors were identified to be at high nutritional risk using the Nutrition Screening Initiative (NSI) checklist. A supplemental questionnaire (SQ) was created to examine the risk factors in relation to the participant’s demographic background. Key results indicated that Asians practiced healthy food behaviors and women were more likely to eat alone (p≤0.05). Married participants (90.9%) were most likely to consume 2 meals or more each day. The purpose of this statewide study was to address the nutrition knowledge, attitudes, and perceptions of school foodservice personnel in Nebraska regarding offering/serving healthy school meals. Moreover, this study identified some potential barriers and avenues of action for offering/serving healthy school meals. Data obtained from this study indicates that there is a strong correlation (r= .103, p r .237, p< .01) between the foodservice staff’s self-efficacy and their practices of offering/serving healthy school meals. Fortunately, the relationship between foodservice staff practices of offering/serving healthy school meals and their self-efficacy was positive and significantly predicted practices scores, β =.237, P< 0.01. The finding of the present study also identifies many barriers including lack of time and support that face the foodservice personnel in offering/serving healthy school meals. The findings suggested that there is an urgent need of a full school approach to promote and encourage healthy eating habits among students. Future research is needed to evaluate school wellness policies regarding healthy eating practices in schools. Moreover, establish partnerships with communities and universities for intervention that target students and their parents.

This paper aims to demonstrate my independent study project internship at the Mullumbimby Community Garden (MCG), an interactive learning site for the citizens of Byron Shire. As an intern I spent 152.5 hours from October 29th to November 23rd planting, planning projects, attending meetings, and helping to educate about the importance of sustainable food production. More specifically, I focused on the development of the Children’s Garden, building vertical garden beds, planting the sensory garden, attending meetings, and helping to design and analyze costs for new structures to be implemented in the near future.

I studied the traditional wild protein collection techniques of the Naso people in the Syellick community Naso Territory, Bocas del Toro for 15 days during the end of November. The goal of this research was to record the various hunting techniques used by the Naso and determine whether those practices will disappear after the passing of this generation. I used informal and unstructured interviews as well as participant, objective, and passive observation (Master of Business Administration).
