Lactose is manufactured from permeates of cheese whey, milk protein concentrate and a mix of both using a crystallisation process. Several factors, such as solute supersaturation, cooling rate and impurities, influence lactose crystallisation. This study focussed on the effect of soluble soybean polysaccharides (SSPS) on crystallisation during lactose manufacture from concentrated permeate solutions by evaluating lactose crystal growth and recovery with and without SSPS addition. Adding 0.1% (w/w) SSPS resulted in a significant difference (P > 0.05) in lactose crystal size and yield. The results suggest that using SSPS during lactose manufacturing from permeate concentrates could influence lactose crystallisation and recovery

Understanding The Impact Of Food Insecurity Among First-Generation College Students On The University Of Arkansas Campus, Madison Price, Jennie S. Popp Ph.D., Nathan Paul Kemper, Louise Michelle Hancox

Discovery, The Student Journal of Dale Bumpers College of Agricultural, Food and Life Sciences

The purpose of this study was to: 1) better understand food insecurity among first-generation college students and how it might differ from that of other college students, and 2) gather opinions from students that may serve as solutions to alleviate food insecurity. This study was conducted with a mixed-methods survey that included both open-ended and closed-ended questions. This survey had 670 responses. Nearly 10% of respondents stated that they were experiencing food insecurity. Almost 18% stated they were first-generation college students. A greater percentage of African American (P = 0.0022) and Hispanic Latino (P < 0.0001) students were first-generation compared to all other students, while a lower percentage (P < 0.0001) of Caucasian students were first-generation compared to other students. The results suggested that first-generation students were more likely to experience nine food insecurity impacts than non first-generation students. Further, both first-generation and non first-generation students indicated low levels of knowledge and/or use of existing resources on the University of Arkansas campus that can help address food insecurity needs. Finally, both first-generation and non first-generation respondents overwhelmingly favored food insecurity solutions centered around expanding access to campus food programs through lower costs and increased awareness of existing campus resources via improved advertising.

Lotic waterways are vital for habitat, food, water, and flood protection, but urbanization poses a major threat to their integrity. Runoff from urban surfaces leads to pollution, flashiness, loss of biodiversity, and other symptoms, also known as Urban Stream Syndrome (USS). Streams can be restored in order to combat USS, but most restorations are not monitored, so their long-term effectiveness is unknown. This study quantitatively evaluated a decade-old stream restoration in Fayetteville, Arkansas, to assess its effectiveness in combating USS and achieving set restoration goals, and to gain insights for future restoration projects. A major objective of the University of Arkansas System Division of Agriculture (UADA) Fruit Breeding program is to improve the texture of blackberry (Rubus subgenus Rubus Watson). Blackberry varieties with improved fruit firmness transport and store well and may maintain superior quality under challenging postharvest conditions than softer varieties. Increased firmness may also make cultivars less susceptible to red drupelet reversion (RDR), a postharvest disorder of blackberries in which fully black drupelets revert to red after harvest. Consumers consider the surface color of fresh lamb as the indicator of freshness and wholesomeness, which affects their purchase decisions. The redox chemistry of myoglobin (Mb) determines the color of fresh lamb. Artificial raising on milk replacer (a pre-weaning strategy) as well as red clover supplementation are management strategies used in lamb production. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. ackground Gut microbiome metabolites are important modulators of host health and disease. However, the overall metabolic potential of the gut microbiome and interactions with the host organs have been underexplored. Results Using stable isotope resolved metabolomics (SIRM) in mice orally gavaged with 13 C-inulin (a tracer), we first observed dynamic enrichment of 13 C-metabolites in cecum contents in the amino acids and short-chain fatty acid metabolism pathways. 13 C labeled metabolites were subsequently profiled comparatively in plasma, liver, brain, and skeletal muscle collected at 6, 12, and 24 h after the tracer administration. Objective: A study involving 7 experiment stations evaluated the effects of a second iron injection administered before weaning on growth and hematological measures of pigs.

Materials and Methods: Pigs (n = 514) were given an iron injection (100–200 mg) on the first day of life. Piglets were then allotted to pairs of similar-weight, samesex siblings 3 to 5 d before weaning (on d 18–24) with one piglet from each pair receiving a second iron injection. This study investigated the individual and combined effects of chitosan (CH) and titanium dioxide (TiO₂), both with and without UV exposure, on delaying ripening, minimizing weight loss, and preserving the postharvest quality of mangoes stored at 25 ± 2 °C for up to 12 days. This study aimed to develop rice starch nanoparticles with enhanced heat resistance through a sequential combination of acid hydrolysis, ball milling, and cross-linking modification using sodium trimetaphosphate (STMP), while investigating the effects of these modifications on the physicochemical properties of rice starch. Native rice starch (25.2% amylose) was hydrolyzed using 3.16 M sulfuric acid at 40°C for up to 24 hours. A significant yield reduction occurred within the first 16 hours, followed by a slower decline; therefore, starch hydrolyzed within 16 hours was selected to minimize crystalline structure damage. This thesis contains 5 chapters: an introduction, three study sections, and a conclusion. Chapter 1 highlights the rationale and significance of studying dysphagic drinks through rheology. It introduces new high-protein, plant-based formulations and literature review of hydrocolloid studies for dysphagia management, utilizing both shear and extensional rheology to explore fluid behavior during swallowing. Chapter 2 presents the first study, which developed six high-protein soy-based supplement formulations for dysphagia management with varying caloric densities. Formulations with higher caloric densities than 1.5 kcal/mL showed increased viscosity and visual cohesiveness, making them suitable for extensional flow analysis.
