The prevalence of type 2 diabetes (T2D) is increasing continuously worldwide. The incidence of T2D is highly correlated with poor diet, physical inactivity and occurrence of obesity. Recent studies reported possible interaction between T2D and gut microbiome, which revealed different composition of gut microbiome. A specific strain Akkermansia muciniphila (A. muciniphila) was reported with significantly lower abundance even prior to the …

Physio-Chemical And Functional Properties Of Nine Proso Millet Cultivars, Manjot Singh, Akinbode A. Adedeji, Dipak Santra
Biosystems and Agricultural Engineering Faculty Publications
Evaluation of the postharvest properties of nine proso millet cultivars was carried out to determine their physical and engineering properties, which are very useful for designing appropriate systems for process operations such as sorting, drying, heating, cooling, and milling. Nine cultivars of proso millet comprising waxy and non-waxy types, namely Cope, Earlybird, Huntsman, Minco, Plateau, Sunrise, Rise, Dawn, and Panhandle, were obtained from the Panhandle Research and Extension Center, University of Nebraska, Scottsbluff. Results showed significant (p < 0.05) differences in their physical properties, such as sphericity, volume, bulk density, porosity, and angle of repose, which ranged from 0.86 to 0.91, from 3.94 to 5.14 mm3, from 765.49 to 809.67 kg m-3, from 42.49% to 44.20%, and from 22.98° to 25.74°, respectively. The cultivars were …

Recognizing Food As Part Of Ireland’S Intangible Cultural Heritage, Máirtín Mac Con Iomaire
Articles
Drawing on evidence from across a range of disciplines (literature, folklore, history, sociology, etc.), this paper explores the lack of an iconic link between Ireland and food, explaining the reasons why Ireland and food are not immediately linked in the popular imagination. It argues for recognition of foodways as a significant element in Ireland’s intangible cultural heritage. It highlights and interrogates constructs, such as ‘national’ and ‘regional’ cuisines, charting the growing scholarship around Irish food history from the ground breaking work of A.T. Lucas and Louis Cullen to a recent emerging cluster of doctoral researchers. The paper identifies the potential …

Strategies To Improve Calf Performance: Improving Water Quality, Feeding Microbially-Enhanced Soy Protein, And Supplementing Condensed Whey Solubles, Nirosh Dias Senevirathne
Electronic Theses and Dissertations
Six experiments were conducted for this dissertation research to evaluate strategies to improve growth performance and health of calves. Growth performance, nutrient utilization, and health effects were evaluated when calves were offered water treated with reverse osmosis system (RW), fed starter pellets supplemented with microbially-enhanced soy protein (MSP) or supplemented condensed whey solubles (CWS). The first two experiments were conducted to determine drinking preference, growth performance, and health of dairy calves offered RW or by a municipal water treatment plant (MW), compared with local untreated well water (WW). First a sequential elimination study was conducted to observed drinking preference of …

Characterization Of Anthocyanins In Aronia, Theodore Mohr
Electronic Theses and Dissertations
Anthocyanins function as antioxidants and offer numerous other health benefits, such as anti-atherogenic and anti-inflammation protection, and may aid in the prevention of degenerative diseases. Aronia berries, uniquely high in anthocyanins, have a great potential in improving human wellness. The objectives of this study were: (1) to develop a rapid and reproducible analytical method for estimating the anthocyanin amount in Aronia berries; and (2) to determine the effect of growing conditions on anthocyanin concentration. A standard curve method was established based on anthocyanin absorbance in the visible range. The results reveal that the developed protocol could yield rapid and reproducible …

Nutritional And Health Benefits Enhancement Of Wheat-Based Food Products Using Chickpea And Distiller’S Dried Grains, Waleed H.M. Alrayyes
Electronic Theses and Dissertations
The first objective of this research was to enhance nutritional, rheological, sensory profiles, and shelf life of wheat-based pita bread using chickpea (CP) and food grade distiller’s dried grains (FDDG) as fortification ingredients. CP and FDDG are both high-protein and high-fiber ingredients. Nutritional efficacy was evaluated. Dough rheology and product texture were also analyzed. Chemical, physical, and rheological properties of blends, doughs and finished products were evaluated and the results showed an increase in protein, fat, ash, and total dietary fiber with an increase of FDDG and CP in the wheat-based food formulation. Moisture content was decreased in both flour …

Stability Analysis Of Immunogenic Gliadin Accumulation In Hard Red Spring Wheat (Triticum Aestivum L.), Stacy Lindblom-Dreis
Electronic Theses and Dissertations
Misconceptions regarding plant breeding objectives have led to speculation regarding the increasing prevalence of gluten intolerance, wheat allergy, and celiac disease. It is thought that contemporary wheat cultivars accumulate more immunogenic proteins than older cultivars because of supposed genetic changes effected through plant breeding strategies. This study evaluated the stability of gliadin accumulation in 191 hard red spring wheat cultivars grown in 12 location-years. Two enzyme-linked immunosorbent assays (ELISAs) were developed. A paired t test (N = 34) failed to find a statistically significant difference between the experimental ELISAs and the commercial R5 assay measures of mean gliadin (t = …

Investigating Antibiotic Resistance In Urban Agricultural Environment Using Phenotypic, Genomic, And Metagenomic Tools, Abdullah Ibn Mafiz
Wayne State University Dissertations
Urban agricultural environment can be an important reservoir of antibiotic resistance and have great food safety and public health indications. This study was to investigate antibiotic-resistant bacteria and antibiotic resistance genes in urban agricultural environment using phenotypic, whole genome sequencing, and metagenomic tools. Three urban community gardens from metro Detroit were studied in two phases.
First phase of this study recovered a total of 207 soil bacteria from 41 soil samples collected from an urban agricultural garden. The most prevalent antibiotic resistance phenotypes demonstrated by Gram-negative bacteria was the resistance to ampicillin (94.2%), followed by chloramphenicol (80.0%), cefoxitin (79.5%), gentamicin …

The Effect Of Short-Term Supplementation Of Potato Starch And Vsl#3 On The Large Intestines Of Male C57bl/6 Mice, Kaitlyn R. Merz
Wayne State University Theses
The microbiome is extremely complex and presumed to be involved in several biological processes. Dysbiosis is associated with development of several diseases, therefore, eubiosis is essential for prevention and treatment, possibly achieved through prebiotic or probiotic supplementation. The objective of this study was to establish effects of short-term supplementation on large intestine microbiota, pH and inflammatory cytokines. Large intestines of 21 day old C57BL/6 male mice that were given a control diet or supplemented with 10% potato starch or VSL#3 short-term, were analyzed for shifts in bacteria, pH, and inflammatory cytokine concentration. Large intestine digesta bacteria concentration differed from feces …
