Obesity, Noah Rhodes

Global Issues in Public Health

Obesity is a worldwide issue that can be defined as a non-communicable condition which means that it is non-infectious and non-transmissible and it is defined as having a BMI over 30 even though BMI doesn’t account for the person’s muscle mass which causes some athletes to be considered obese just because they weigh a lot for their height. Diagnosing obesity can be a long process which includes a health history being taken, a general physical exam, calculation of BMI, and measuring waist circumference. Diagnosis of obesity also involves checking for problems such as high blood pressure, variation of cholesterol levels …

Food Insecurity: United States, Courtney Handzel

Global Issues in Public Health

Food insecurity is a global issue and has caused struggles to millions of people, specifically in the United States. This environmental issue involves not having the resources to obtain adequate food supply. The economic and social influences that affect food insecurity leave vulnerable populations, such as low-income families and minority races, at a greater disadvantage. This issue causes serious health complications to arise too, the most common being diabetes. The increased risk of diabetes due to food insecurity has been studied on several occasions and the results all show the correlation, lack of food security increases the risk of diabetes. …

Assessing The Difference Between Soil And Water Assessment Tool (Swat) Simulated Pre-Development And Observed Developed Loading Regimes, Sean J. Zeiger, Jason A. Hubbart

Faculty & Staff Scholarship

The purpose of this research was to assess the difference between Soil and Water Assessment Tool (SWAT) simulated pre-development and contemporary developed loading regimes in a mixed-land-use watershed of the central United States (US). Native land cover based on soil characteristics was used to simulate pre-development loading regimes using The Soil and Water Assessment Tool (SWAT). Loading targets were calculated for each major element of a pre-development loading regime. Simulated pre-development conditions were associated with increased retention and decreased export of sediment and nutrients when compared to observed developed conditions. Differences between simulated pre-development and observed developed maximum daily yields …

Tree Species Richness Enhances Stand Productivity While Stand Structure Can Have Opposite Effects, Based On Forest Inventory Data From Germany And The United States Of America, Laura Zeller, Jingjing Liang, Hans Pretzsch

Faculty & Staff Scholarship

Background: In recent studies, mixed forests were found to be more productive than monocultures with everything else remaining the same.

Methods: To find out if this productivity is caused by tree species richness, by a more heterogeneous stand structure or both, we analyzed the effects of forest structure and tree species richness on stand productivity, based on inventory data of temperate forests in the United States of America and Germany.

Results: Having accounted for effects such as tree size and stand density, we found that: (I) tree species richness increased stand productivity in both countries while the effect of tree …

Determination Of Selected Aromas In Marquette And Frontenac Wine Using Headspace-Spme Coupled With Gc-Ms And Simultaneous Olfactometry, Somchai Rice, Nanticha Lutt, Jacek A. Koziel, Murlidhar Dharmadhikari, Anne Fennell Dr

Agronomy, Horticulture and Plant Science Faculty Publications

Understanding the aroma profile of wines made from cold climate grapes is needed to help winemakers produce quality aromatic wines. The current study aimed to add to the very limited knowledge of aroma-imparting compounds in wines made from the lesser-known Frontenac and Marquette cultivars. Headspace solid-phase microextraction (SPME) and gas chromatography-mass spectrometry (GC-MS) with simultaneous olfactometry was used to identify and quantify selected, aroma-imparting volatile organic compounds (VOC) in wines made from grapes harvested at two sugar levels (22° Brix and 24° Brix). Aroma-imparting compounds were determined by aroma dilution analysis (ADA). Odor activity values (OAV) were also used to …

Correlations Of Self-Reported Androgen Deficiency In Ageing Males (Adam) With Stress And Sleep Among Young Adult Males, Camille M. Charlier, Sarah E. Colby, Geoffrey W. Greene, Melissa D. Olfert, Makenzie L. Barr 2018 West Virginia University

Correlations Of Self-Reported Androgen Deficiency In Ageing Males (Adam) With Stress And Sleep Among Young Adult Males, Camille M. Charlier, Sarah E. Colby, Geoffrey W. Greene, Melissa D. Olfert, Makenzie L. Barr

Faculty & Staff Scholarship

Abstract: Androgen deficiency in males has traditionally been predominantly limited to older men aged 50+ years. However, little is known of the correlation between hormonal disruption, stress, and sleep in college-aged males. This cross-sectional study investigates lifestyle behavior patterns in young men and a screening for potential androgen deficiency. A survey of 409 male students, as part of a larger USDA-funded GetFruved study, was analyzed for this subproject. Survey instruments used include the Androgen Deficiency in the Aging Male Questionnaire (ADAM) to assess for inadequate ADAM scores, the Perceived Stress Scale to measure stress levels and the Pittsburgh Sleep Quality …

Background This paper describes the development, reliability, and convergent validity of a practical tool—the Convenience Store Supportive Healthy Environment for Life-Promoting Food (SHELF) Audit. Methods Audit items included: a variety of fresh, processed, and frozen fruits and vegetables; low-fat dairy products; healthy staples and frozen meals; healthy food incentive programs; items sold in check-out areas; portion/cup sizes; and pricing. Each audit item was scored using a five-point semantic-differential scale (1 = provides little or no support for healthful foods to 5 = provides high support for healthful foods). Convergent validity was examined by comparing the SHELF audit to Ghirardelli et …

Background: When dietary behaviors are habitual, intentions are low, and environmental cues, such as the consumer food environment, might guide behavior. How might intentions to eat healthily and ultimately actual dietary behaviors, be influenced by the consumer food environment (including the availability and affordability of healthy foods) in convenience stores? This study will determine pathways between the healthfulness of convenience stores and college students’ dietary intentions/behaviors, and body mass index (BMI). Methods: Through multilevel structural equation modeling, a comparison was made of students’ healthful meal intentions (HMI); intake (fruits/vegetables, %kcal/fat, sugar-sweetened beverages (SSBs) and whole-grains); and measured BMI; as well …

Few studies work with college students as equal partners in all aspects of Community-Based Participatory Research (CBPR) and even less evaluate behaviors of those college partners. The current study aimed to examine health behaviors of students by designing and implementing a peer-led, social marketing campaign (Get Fruved) to promote healthier lifestyles on their campuses. Enrolled students (n = 376) were trained to either design and implement a health promotion intervention (Social Marketing and Environmental Interventionists; SMEI, n = 78), be peer mentors (PM; n = 205), or serve as control participants (n = 93). Students’ behaviors (dietary, activity, and stress) …

Self-reported height and weight, if accurate, provide a simple and economical method to track changes in body weight over time. Literature suggests adults tend to under-report their own weight and that the gap between self-reported weight and actual weight increases with obesity. This study investigates the extent of discrepancy in self-reported height, weight, and subsequent Body Mass Index (BMI) versus actual measurements in young adults. Physically measured and self-reported height and weight were taken from 1562 students. Male students marginally overestimated height, while females were closer to target. Males, on average, closely self-reported weight. Self-reported anthropometrics remained statistically correlated to …

The Fumbally Menu 2018, Fumbally Restaurant

Menus of the 21st Century

The Fumbally is the culmination of 4 years of cooking, travelling, working at festivals, gathering ideas, arguing those ideas, making mistakes, making new friends, finally realising those ideas, having lots of dinners, tasting new things, building a kitchen and seeing what will happen.

Some of us have been working in kitchens all our lives, others haven’t, but we all have a love for food, good coffee and the simple pleasure of sharing a meal with friends.
