Background: Because breastfeeding offers short- and long- term health benefits to mothers and children, breastfeeding promotion and support is a public health priority. Evidence shows that SARS-CoV-2 is not likely to be transmitted via breastmilk. Moreover, antibodies against SARS-CoV-2 are thought to be contained in breastmilk of mothers with history of COVID-19 infection or vaccination. WHO recommends direct breastfeeding as the preferred infant feeding option during the COVID-19 pandemic, even among women with COVID-19; but conflicting practices have been adopted, which could widen existing inequities in breastfeeding. Process Cheese is manufactured by grinding, mixing, and heating with agitation one or more of the same varieties of natural cheese with an emulsifying agent to create a cheese with desirable properties. After process cheese is made, it is often sliced or shredded. Some of its properties affect how well it can be sliced or shredded and can lead to loss of material due to cheese sticking to equipment or being too crumbly. It takes the position that food crisis has been simmering in Nigeria for the past couple of years and identifies policy instability, poor policy implementation and declining household purchasing power, among others as the major causes of food crisis. The bioactivity of canary seed peptides (CSP) towards metabolism-regulating enzymes was evaluated. Peptides with angiotensin-converting enzyme (ACE), dipeptidyl peptidase IV (DPP-IV), and pancreatic lipase activity remained stable (p < 0.05) to simulated gastrointestinal digestion (SGD). CSP-SGD were transported efficiently (>10%) through the Caco-2 monolayer, indicating absorption through the intestinal epithelium. Lineweaver-Burk plots demonstrated that CSP-SGD act as mixed-type inhibitors for DPP-IV and α-glucosidase. Furthermore, CSP-SGD were potent as antihypertensive and antiobesity agents. Molecular docking and in silico analyses were targeted to understand CSP-SGD interactions with ACE and pancreatic lipase. ACE-inhibitory peptides (LHPQ, QTPHQ, KPVPR, and ELHPQ) acted as non-competitive inhibitors by destabilization of the transition state and Zn(II) coordination in …

Fresh produce safety is major concern in United States. Fresh produce has been associated with numerous food-borne outbreaks each year. Salmonella has been a recurring issue in the papaya industry. Since 2010, imported papayas have been implicated in 8 multistate outbreaks associated with Salmonella spp. causing 480 illnesses, 113 hospitalization and 3 deaths. The main reason behind this problem is as fresh papaya is grown on fields where they are constantly exposed to preharvest microbial contamination through contaminated irrigation water, agricultural soil, raw manure and/or feces deposited by intruding domestic or wild animals. Direct-seeding is the most frequently utilized planting practice in Arkansas and Mid-South rice (Oryza sativa L.) production. Enhanced plant density and more rapid rice canopy formation may result from the implementation of innovative plant arrangements and spacings. Studies were initiated in 2019 and continued into 2020 to examine different cultural management practice experiments, including evaluating the impacts of planting arrangement, row spacing, and seeding rates on rice stand density, canopy coverage, grain yield, and milling yield. Rice supplies about 20% of the calories to the world’s consumers. Milling removes the outer husk and bran, breaking about 20% of the rice kernels during the milling process that equates to almost 100,000,000 tons of rice annually. Broken rice is discounted in price by almost half or relegated to non-human consumption. This study seeks to understand why this large percentage of rice production is discounted for human consumption. Consumers who routinely consume rice evaluated raw and cooked rice with 5%, 10%, 20%, 30% and 40% levels of brokens. Sensory analysis indicated the appearance of raw rice with high levels …

The flooring in a food processing environment can become contaminated with pathogenic bacteria in many ways including foot and equipment traffic, incoming materials, and drain backups. Turmeric (Curcuma longa L.) rhizome powder and seventeen other commercially available powdered floor treatments with a variety of active ingredients including quaternary ammonium compounds (QAC), sodium percarbonate and similar perhydrates (SPC), urea, and borax, were investigated for reducing the levels of pathogens on flooring thereby reducing the risk of cross-contamination from the floor to food contact surfaces. Following the harvest of an animal, muscle will continue to produce energy in an attempt to stay alive, primarily through the pathway of glycolysis. This occurs in the form of anaerobic (oxygen-free) metabolism of glucose and glycogen, which causes the meat to acidify. This acidification process is important for proper meat quality development and when insufficient glycolysis occurs it can cause a meat defect known as dark cutting. Objective: A new type of static mixer to enhance the ozone gas-liquid phase mass transfer was established in this study. Methods: The effects of different ozone gas flow rates, liquid flow rates and liquid temperature on the concentration of ozone liquid phase and the generation of hydroxyl radicals were investigated, and were compared with the microporous aeration method and the circulating jet method. Results: With the increase of the gas-liquid flow rate, the ozone water saturation concentration and the hydroxyl radical concentration both increased; as the temperature increased, the ozone water saturation concentration decreased, but the hydroxyl radical concentration increased. …

Objective: To study the technological conditions of preparing rice bran dietary fibers by cellulase hydrolysis, and analyze the reasons for the difference in the functional properties of different rice bran dietary fibers. Methods: Single factor experiment was used to optimize the process conditions. The chemical composition, oil holding capacity and sodium cholate adsorption capacity of rice bran dietary fibers were measured.
