Cow’s milk and egg allergies are prevalent IgE-mediated food allergies that pose significant public health concerns worldwide. Although strict avoidance remains the primary management strategy, unintended exposure can still occur through allergen cross-contact, particularly in commercial and industrial food operations that utilize shared frying oils. The objective of this study was to identify and quantify allergen transfer in shared frying oil and assess the robustness of existing targeted mass spectrometry methods (LC-MS/MS) for detecting milk and egg proteins in heated oil matrices.

Metabolomics is the most recent and final discipline among the post-genomic, multiomics fields. It encompasses key technologies in systems biology, providing an overview of low-molecular-weight metabolites while examining disturbances to offer pathophysiological explanations. Gut microbiota produces a wide range of metabolites and plays a critical role in maintaining host health. Dysregulation of these metabolites can influence host metabolism through systemic circulation, contributing to the development of various diseases, including immunological, neurological and cancer-related disorders. Chromatography coupled with mass spectrometry (MS) has emerged as a powerful analytical approach, offering high sensitivity and resolution for studying gut microbiota-related metabolites. This review provides a comprehensive overview of chromatographic MS-based methods applied to the study of the gut microbial metabolome. The aim of the study is to investigate the regional characteristics of iron and zinc content in wheat and flour produced in Uzbekistan using instrumental neutron activation analysis, and on this basis to provide a scientific justification for effective approaches to flour fortification and the preservation of micronutrients during grain processing. The study analyzed wheat flour produced from grain grown in five regions of Uzbekistan (Khorezm, Surkhandarya, Bukhara, Tashkent, and Fergana). Including cheese products in daily diet will give tangible results, enriching body with nutrients rich in high-quality proteins. The aim of the research is to create an Italian semi-hard cheese, caciotta, from local cow's milk. In the experiment, pepsin of the CHY-MAX® Powder Plus NB brand was used. The resulting product contained 1.46 mg/kg zinc (Zn), which is approximately 34 times lower than the permissible limit (50 mg/kg), which is considered a high quality indicator. From a biological safety point of view, no aflatoxin M1 was detected in the cheese (0.0 mg/kg), indicating the absence of mycotoxin contamination of cow's …

Knowing your altitude is critical for canning. Safe home food preservation depends on adjusting processing times and pressures for altitude. This fact sheet provides a county-by-county and town-by-town listing of elevations across Utah, paired with the boiling-water and pressure canner adjustments recommended by the U.S. Department of Agriculture (USDA) and the National Center for Home Food Preservation. By referencing this resource, Extension educators, food preservation instructors, and home canners can quickly identify the correct processing adjustment for their location.

“Clemson Spineless” and “Jambalaya” okra were grown in a Tunnel House and field to compare yield and other growth parameters. A split-plot design with three replications/treatment was used; the Tunnel House and field were main plots, and varieties split plot. Plant height was significantly taller, and pod harvesting began two weeks earlier in the Tunnel House. Yield showed no significant differences between varieties, and Tunnel House vs. field-produced okra. However, “Clemson Spineless” produced 9% higher pod yield in the Tunnel House than “Jambalaya,” which had 23% higher field yield than “Clemson Spineless.” An enterprise budget analysis showed that Tunnel House …

Food loss and waste (FLW) present pressing environmental and economic challenges. Upcycling technologies provide a sustainable pathway by transforming food by-products into value-added products; however, consumer acceptance remains a critical barrier. Guided by Self-Determination Theory (SDT), this study investigates how environmental motivations influence consumers’ attitudes and purchase intentions toward milk enriched with upcycled peanut skins. Data were collected from a nationally representative sample of 1488 U.S. adults. Structural equation modeling (SEM) was employed to test hypothesized relationships among motivational constructs, and cluster analysis was used to identify consumer segments based on motivational profiles. This study examines the nexus between perceived and scientific weather patterns, and its effects on cereal crop production in Manyoni District; and involved 157 participants. Both quantitative and qualitative data were collected through a mixed methods research approach. The data were collected through a household survey, FGDs, in-depth interviews and documentary review methods for triangulation and complementarity purposes. The quantitative data were analysed through descriptive and inferential statistics with IBM SPSS (version 27) and Microsoft Excel Office (version 2007). This study explored the 3D printability and digestibility of pea and sorghum protein gels as novel plant-based bioinks. First, 25 % sorghum protein gel (SPG25) and 15–25 % pea protein gels were prepared, and the effect of extruders’ nozzle size on printability was evaluated. Samples produced at the optimized conditions were then used for analyzing particle size, microstructure, secondary structure, and in vitro digestibility. Pea protein gel at 20 % (w/w) (PPG20) and SPG25 showed ideal rheological properties, including shear-thinning behavior and rapid recovery. This study developed and characterized a novel antimicrobial food packaging film fabricated from electrospun polycaprolactone (PCL) nanofibers incorporated with thyme oil nanoemulsions (TONEs). The concentration of TONEs in the film ranged from 2.5 to 15 % (v/v). The physicochemical properties, including pH, viscosity, and water absorption of the film were evaluated, with results showing favorable values (TONEs pH ≈ 5.46, viscosity ≈ 0.26 cP, contact angle ≈ 109-1270 and water absorption ≈ 21.47 %). This study evaluated the impact of hibiscus and whey as alternative fermentation substrates on the physicochemical, phytochemical, and microbial properties of kombucha. A 2 × 2 full factorial design was used to compare four treatments: black tea + water (BW), black tea + whey (BH), hibiscus + water (HW), and hibiscus + whey (HH). The fermentation solvents (water or whey) were heated to 88 °C, infused with 0.6% (w/v) black tea or hibiscus for 10 minutes, sweetened with 10% (w/v) sucrose, cooled to 22 °C, and inoculated with 20% (v/v) kombucha starter culture. Utah's farmers markets are more than places to shop — they are essential community infrastructure. With more than 60 markets in operation across the state, people rely on their local market for food, leisure, and community connection. From 2023–2025, the Utah Farmers Market Network (UFMN) and Utah State University (USU) Extension led a three-year, mixed-methods evaluation to document the economic and social contributions of farmers markets across the state. The objective was to produce and characterize a red colorant resulting from interaction of sunflower-derived chlorogenic acid with L-tryptophan/Trp and to evaluate its applications. Yield, intensity, solubility, stability, protein, and metal content of colorants from pH 9 and pH 11 lyophilized sunflower flour- Trp colorants were measured. Red color formation took < 3 h with alkalization and subsequent acidification. The sunflower flour: Trp mixture ratio that produced the greatest redness was 10:2. The highest red pigment was in supernatants and not the precipitates. The red colorant intensity and solubility were highest at neutral pH when compared to acidic pH solutions. The color stability of the new red colorant in icing and refrigerated whole milk matrices, when assessed weekly for a month, showed no color change in refrigerated milk. After 30 min of incubation at 63 °C, pinkness in milk remained unchanged or increased. The pink color, however, faded in icing over time due to exposure to light. The present study established a new natural red colorant developed from sunflower protein-Trp mixtures at alkaline pH, as well as its application in icings and whole milk for commercial strawberry milk products. This colorant could serve as a replacement for the synthetic petroleum-based Red 3.

Electric pressure cookers (EPCs) offer convenience, versatility, and efficiency in everyday cooking. EPCs offer multiple cooking functions beyond pressure cooking, including sautéing, slow cooking, steaming, cooking rice, and preparing yogurt. They are not suitable for pressure canning, as confirmed by multiple Extension research studies and national guidelines. When used properly, EPCs provide a safe and effective way to prepare meals quickly while saving counter and storage space.
