Turkish Journal of Veterinary & Animal Sciences

In this study, the effects of food supplemented with different levels of DL-alanin and L-glutamic acid (1% and 2%) on the growth of sea bass juveniles were investigated. Fish fed with L-glutamic acid (1% of diet) and DL-alanin (1% of diet) supplemented diets had greater weight gains (54.23 ± 1.51 g and 55.03 ± 1.69 g, respectively) than those fed with a control diet (47.59 ± 1.83 g) (p < 0.05). It was found that the groups fed with 1% of attractant-supplemented diets had better food conversion ratios (1.11 and 1.13, respectively) than the control group (1.22) (p < 0.05). It was also found that the wet weight gain and food conversion ratios of the groups fed with 2% L-glutamic acid and DL-alanine were similar to those fed with the control diet and 1% attractant-supplemented diets (p > 0.05).

Turkish Journal of Veterinary & Animal Sciences

In this research the fatty acid composition of different tissues of mature trout caught from Yeşildere creek in the Fırat region were investigated. In the adipose, gonad, liver and muscle tissues, the differences among the percentages of monounsaturated fatty acids (MUFA), polyunsaturated fatty acids (n-3, n-6 PUFA) and the eicosapentaenoic acid (EPA)/decosahexaenoic acid (DHA) ratio were statistically significant (P < 0.01). However, the differences in the saturated fatty acids (SFA) of tissues were not distinctive. The most important fatty acids were palmitic (16:0), stearic (18:0) and miristic (14:0) in SFA and 18:1 n-9 and 16:1 n-7 in MUFA. The ratio of n3/n6, known as characteristic agents of marine fish, was as high as in marine fish but the differences among the tissues were not significant.

Effects On The Specific Quality Parameters Of Yellowfin Tuna (Thunnus Albacares) During Precooking And Sterilization, Taçnur Baygar, Altan Şentürk

Turkish Journal of Veterinary & Animal Sciences

The objective of this study was to determine changes in the quality of yellowfin tuna (Thunnus albacares) during precooking and sterilization. Samples were obtained at three stages: after thawing, after precooking and after sterilization. Total volatile basic nitrogen (TVB-N), trimethylamine nitrogen (TMA-N), histamine and pH analyses were performed in order to determine the quality of the samples. At the end of the study, TVB-N values of the thawed, precooked and canned fish samples were 11.56 ± 4.83, 19.25 ± 4.46 and 35.82 ± 2.18 mg/100 g; TMA-N values were 4.14 ± 0.35, 5.91 ± 1.76 and 5.75 ± 1.71 mg/100 …
