The fatty acid (FA) composition of some tissues of Salmo trutta labrax, Pallas, 1811 mature native freshwater wild salmon species caught from Kazandere creek in the Çoruh region in Turkey were investigated. Fatty acids profiles of muscle, liver, gonad, egg and adipose tissue were compared in terms of total and individual saturated and unsaturated fatty acids. The results showed that the highest total saturated fatty acid content was in the muscle (37.20 ± 1.13%) while the lowest value was in the egg (27.12 ± 2.53%), and the differences were significant (P < 0.05) among the tissues. Investigation Of Some Population Parameters Of Common Sole, Solea Solea (L., 1758) From İskenderun Bay, Mustafa Türkmen

Data on age, growth, reproduction, mortality and exploitation were examined for common sole collected in İskenderun Bay from March 2000 to February 2001. The examined individuals were aged between 1 and 8 years. Total length ranged from 8.8 to 28.2 cm. The length-weight relationships for males (a = 0.0117, b = 2.998) and females (a = 0.0091, b = 3.077) showed no significant difference from isometric growth. Çiğ köfte is a special Turkish meal prepared from minced meat, bulgur, onions, garlic and different spices. In this study, a total of 50 çiğ köfte samples sold in Ankara were microbiologically analysed in order to determine their microbiological quality. The numbers of total mesophilic aerobic bacteria, lactobacilli, micrococci/staphylococci, coagulase-positive staphylococci, enterobacteriaceae, coliform, enterococci, pseudomonas, yeasts and molds were determined by drop plating, whereas the B. cereus count was determined by spread plating, and the isolation of Salmonella involved enrichment procedures. Growth And Carcass Characteristics Of Three Fat-Tailed Pure Breeds Under Grazing With Concentrate Supplementation, Muhli̇s Maci̇t, Sirri Şahi̇n, Nuri̇ni̇sa Esenbuğa, Mevlüt Karaoğlu

Growth performance, carcass measurements and carcass characteristics of three fat-tailed Turkish breeds (Awassi = A, Morkaraman = M and Tushin = T) weaned at 2.5 months of age and subjected to semi-intensive feeding during a grazing period on pasture for 70 days were evaluated. At the end of the 70-day grazing period, M lambs showed the highest performance for daily weight gain and the amount of concentrate consumed per bodyweight gain in addition to grazing on pasture. The effects of the breed and sex of lambs on daily weight gain on pasture were significant (P < 0.05) and highly significant (P < 0.01), respectively. Male lambs were superior to female lambs with respect to daily weight gain on pasture. The slaughter traits, carcass measurements and carcass characteristics of 14 male lambs representing three fat-tailed breeds were compared at the end of the grazing period of the year in which they were born. After slaughter, carcasses were chilled at +4 °C for 24 h and measurements were taken on the intact cold carcasses. The carcasses were then dissected into wholesale cuts. The hot carcass weight and hindshank weight of M lambs were heavier than those of A and T lambs. M had a higher hot dressing percentage and larger M. longissimus dorsi (LD) area than those of A and T lambs. Most of the weights of wholesale cuts such as foreshank and breast, sirloin, leg, rib and hindshank were significantly (P < 0.05; P < 0.01) affected by sheep breed. It is recommended either that A, M or T male and female lambs weaned at 2.5 months of age in eastern Turkey should be fed with 450 g concentrate per head per day on pasture for 3 to 3.5 months of grazing season, or lambs should be supplemented with more than 450 g concentrate feed on pasture because native fat-tailed Turkish breeds supplemented with 450 g concentrate on pasture did not give carcasses with an adequate commercial weight at the end of a 70-day fattening period.

The aim of this study was to compare the effects of isotonic sodium chloride (ISS-0.9%), hypertonic sodium chloride (HSS-7.2%), HSS + lactate ringer solution (LRS) and HSS + sodium bicarbonate solution (SBS-1.3%) in the treatment of dogs with endotoxaemia. Endotoxaemia was induced by slow injection of a 1 mg/kg/i.v. dose of E. coli endotoxin (0111:B4). Periodontal disease in cats was investigated with respect to clinical, radiological and microbiological evaluations. Each tooth group was evaluated according to plaque index, gingival index, sulcus bleeding index, calculus index, periodontal disease index, furcation exposure index, feline odontoclastic resorptive lesions (FORL) and tooth mobility. The prevalence of the disease was evaluated statistically. Upper and lower premolars were affected by periodontal disease at a higher rate than others. Tooth loss was often observed in incisives, premolars and canines concurrently. The intrinsic membrane properties of the neurons in the cortices of the inferior colliculus were studied in 300-µm transversal slices. The membrane properties, including the sub- and superthreshold, of the neurons were determined by intracellular stimulations with current injections. Of 49 intracellularly recorded neurons, 21 were successfully stained with intracellular biocytin injection. Morphologically all of the 21 neurons were identified as multipolar. Physiologically three firing patterns (onset, regular and adapting) were identified on the basis of response patterns to depolarizing current injections. The aim of the present study was the confirmation of pregnancy diagnosis in mares by the determination of oestradiol-17 b in faeces. The research was carried out on 30 cyclic mares. Faeces samples were collected through pregnancy at monthly intervals. The faeces samples of pregnant and non-pregnant mares contained a mean oestradiol-17 b concentration of 9.39 ± 2.63 and 7.70 ± 2.00 ng/g, respectively in the 4^{th} month of gestation. From the 5^{th} month of pregnancy the oestradiol-17 b concentration in pregnant mares was significantly higher than in non-pregnant mares. Skeletal muscle development in avian embryos depends on the activation, proliferation, differentiation, and fusion of embryonic myoblasts. These processes as well as early embryonic development are mainly regulated by major growth factors such as IGF-I, IGF-II, TGF-b and FGFs. Cyclodextrins are used extensively in food, cosmetic, drug and chemical industries to increase aqueous solubility and stability, and reduce or eliminate the unpleasant taste and smell of many products. Experiments were conducted to examine the effect of a pre-haemolytic dose of methyl b-cyclodextrin (MBCD) on the osmotic fragility of erythrocytes collected from sheep, cattle and humans. Forty-eight Sprague-Dawley rats were killed by cervical dislocation, electric shock and drowning to investigate the correlations between types of death and levels of adenosine triphosphate (ATP), adenosine diphosphate (ADP) and adenosine monophosphate (AMP) in heart tissue after death. The hearts were taken out after death and ATP, ADP and AMP levels in the heart muscle were measured. The ATP and ADP levels were lower in rats killed by electric shock and with drowning. Effect Of Low Birthweight On Serum Thyroid Hormones, Glucose, Urea And Blood Ph In Newborn Lambs, Tufan Keçeci̇

In this study, serum thyroid hormone, glucose and urea levels as well as blood pH values were compared between six control (birthweight ? 2.5 kg) and seven experimental Merino lambs (birthweight < 2.5 kg, hypotrophic) at 2, 4, 8 and 24 h postpartum. Serum levels of total thyroxin (T_4), free thyroxin (FT_4), total triiodothyronine (T_3; with exception of 24 h postpartum), free triiodothyronine (FT_3; with the exception of 4, 8 and 24 h postpartum) and glucose were lower in hypotrophic lambs compared to the controls. However, the serum urea levels of hypotrophic animals were higher than those of the controls. On the other hand, serum T_3, FT_3 and FT_4 levels determined at 4 and 8 h were higher than those at 2 and 24 h postpartum in both groups. A similar case was also observed in the serum T_4 levels of hypotrophic lambs. In addition, the serum glucose levels of hypotrophic lambs were higher and the blood pH values of both groups were lower at 2 h postpartum. In conclusion, It was observed that low birthweight affected neonatal thyroid function, serum glucose and urea levels in lambs.

Experimental pregnancy was induced with gonadal steroids in in vivo ovariectomized rats. Conditions for premature delivery were established by giving a salt-rich diet and administering oxytocin to induce high-risk pregnancy. The optimum UV duration times of eggs were examined in order to develop a simple and safe method for inducing androgenetic development in the Nile tilapia, Oreochromis niloticus. The yield of androgenetic haploid O. niloticus to the pigmentation stage was 18.53 ± 5.3% (relative to controls) with an optimal UV irradiation dose of 540 Jm^{-2} (at 150 µWcm^{-2 }) for 6 min. Most embryos developing after fertilisation with normal spermatozoa showed abnormal morphology and a haploid number of chromosomes (n = 22). The success of oocyte denucleation was also assessed by using the recessive "blond" skin pigmentation character.

The Effects Of Electrical Stimulation On The Sensory And Textural Quality Properties Of Mutton Carcasses, Mete Yanar, Hasan Yeti̇m

The objective of this research was to investigate the influence of electrical stimulation (ES) on the sensory and textural quality characteristics of mutton carcasses from elderly ewes. For this purpose, 14 ovine carcasses from 3-5-year-old ewes were subjected to ES with 350 V, and the effects of ES on the organoleptic and instron textural parameters were evaluated. The ES significantly (P < 0.01) improved the panel tenderness scores of the Longissimus dorsi (LD) muscle. Some of the Instron Warner Bratzler Shear parameters such as peak force and initial yield force values of the LD muscle were also highly significantly (P < 0.01) affected by ES, while the Semimembranosus (SM) muscle was not affected. Hardness and peak force 2 values of LD obtained from the Instron compression test were also significantly (P < 0.05) affected by ES. However, Instron compression parameters of SM muscles were not significantly influenced by ES treatment. The results revealed that the ES could considerably improve the tenderness of the LD from mutton carcasses. In conclusion, the application of ES to mutton carcasses from elderly ewes could be beneficial for the meat industry by increasing the merchandising value and quality of this sort of carcass.

This study was carried out to determine Eimeria infection in goats in nine different districts in Van province in Turkey. Faecal samples (approximately 3-5 g) were obtained from the rectums of 242 goats. The samples were examined by Sheather's sugar flotation technique and determined microscopically for the presence of oocysts. Eimeria species were identified following sporulation of faeces in a thin layer of 2.5% potassium dichromate for one or two weeks at 25 ºC. Faecal samples collected from 206 chickens, 170 sheep and 130 cattle were investigated for the presence of Listeria monocytogenes in animals slaughtered at local abattoirs in Elazığ. The prevalance of L. monocytogenes was 4.36% in chickens, 0.58% in sheep and 1.53% in cattle. Of the 12 L. monocytogenes isolates, seven (58.33%) and five (41.66%) belonged to serotypes 1 and 4, respectively. Other species isolated were L. innocua, L. welshimeri, L. seeligeri, L. murrayi and L. grayi. These results indicate that animal faeces could be a source of contamination of carcasses with L. monocytogenes and may lead to foodborne listeriosis.

The objectives of this study were to estimate genetic parameters and breeding values for test-day (TD) and 305-day milk yields, and to compare the results from TD and 305-day analyses. The data comprised 10,822 TD records from 1103 first lactations of Holstein cows from state farms in the western part of Turkey. Additive genetic, residual and permanent environmental variances, heritabilities and breeding values for 305-day and TD milk yields were estimated by the REML method using animal models. Non-motile, Gram-positive and catalase-negative anaerobic Leuconostoc sp. were found to be involved in the spoilage of vacuum-packaged refrigerated sucuk samples. The spoilage was associated with an accumulation of large quantities of foul-smelling gas and purge in the bag and loss of colour and texture in the meat. Many of these isolates produce bacteriocins, to which the predominant Gram-positive bacteria normally found in these products are sensitive. As the leuconostocs grew at low temperatures and produced bacteriocins, they inhibited the growth of associated sensitive bacteria. The clinical, laboratory, ultrasonographic and pathological characteristics of a poorly differentiated pancreatic carcinoma in a 6-year-old cat are described in this study. Clinical abnormalities included severe dehydration, icterus, and partial alopecia on the medial surface of the limbs and ventral abdomen. A nodular mass was detected on abdominal palpation. Ultrasonography of the abdomen revealed a hypoechoic mass including hyperechoic and anechoic areas in the pancreatic region, and several hypoechoic areas and dilatation of the biliary duct and gallbladder in the liver. This study was carried out to determine the microbiological and chemical quality and the meat yields of shrimp (P. semisulcatus) caught from the Antalya region. Twenty shrimp samples were used for microbiological analyses, 36 for chemical quality analyses and 60 for meat yield analyses. According to microbiological findings, the average numbers of total aerobic mesophilic bacteria, coliforms, staphylococcus-micrococcus, and V. parahaemolyticus in shrimp meat were 5.8 x 10^4 cfu/g, 1.9 x 10^2 cfu/g, 9.2 x 10^2 cfu/g, and 7.5 x 10^1 cfu/g, respectively. The arginase was partially purified from cattle rumen tissue and its properties were investigated and thereafter compared with those of other tissue arginases. The specific activity of the purified enzyme was found about 150 times greater than that of the crude rumen homogenate. The molecular weight of native arginase, estimated by gel filtration on a Sephadex G-150 column, was 122 500 ± 2500 and those of subunits of the enzyme, estimated by SDS-PAGE and gel filtration on a Sephadex G-100 column, were 44 000 ± 1000 and 34 500 ± 500.
