The Energy-adjusted Dietary Inflammatory Index (E-DIITM) is a comprehensive, literature-derived index for assessing the effect of dietary constituents on inflammatory biomarkers and inflammation-related chronic diseases. Several studies have examined the association between E-DII scores and mortality, with results that vary across populations. Therefore, in the present study, we aimed to investigate the potential association between E-DII scores and all-cause, cardiovascular disease (CVD), and cancer mortality using data from the Prostate, Lung, Colorectal and Ovarian (PLCO) Screening Trial. Purpose: This study seeks to examine how the impacts of physical and mental comorbidities and functional limitations on depressive symptoms vary by the major racial ethnic groups (i.e. Whites, Blacks, and Hispanics).Methods: The empirical work of this is based on the United States using data from the 2020 Health and Retirement Study (HRS) COVID-10 Project.Results: Findings suggest that physical and mental comorbid conditions, functional limitations and depressive symptoms co-occur more commonly than expected for all racial ethnic groups. To investigate community members’ beliefs about the COVID-19 vaccine and perceived barriers and enablers of vaccination to inform the development of vaccine education materials.Methods. We conducted in-depth interviews with 20 adult community members in the Appalachian region of Mississippi. Interview notes were analyzed using thematic analysis.Results. Stakeholders sought to reduce the burden of preventable diabetes among adults in Utah via a “Food as Medicine” webinar series. The “Food as Medicine” webinar series sought to increase awareness of and enrollment in public diabetes programs. Evaluation results from the webinar series indicated an increase in awareness of diabetes programs and nutrition information needed to improve personal diabetes management.

In June 2020, young adults comprised 20% of the COVID-19 cases and asymptomatic individuals were seen as “carriers” taking the virus into their homes and social settings. As with many health issues, the minority population was dealing with worse health outcomes. African Americans young adults were not excluded from this circumstance. Rural populations have less access to cancer care services and experience higher cancer mortality rates than their urban counterparts, which may be exacerbated by hospital closures. Our objective was to examine the impact of hospital closures on access to cancer-relevant hospital services across hospital service areas (HSAs).

Methods

We used American Hospital Association survey data from 2008 to 2017 to examine the change in access to cancer-related screening and treatment services across rural HSAs that sustained hospitals over time, experienced any closures, or had all hospitals close. Objective: The purpose of this study was to explore attitudes and perceptions on COVID awareness and education among African American and Latinx community members and stakeholders in South Mississippi through qualitative methods. Design: Virtual focus groups were conducted in Forrest, Hancock, Harrison, Hinds, and Jackson Counties through Zoom meetings. Community residents and stakeholders (N=56 total) participated. The impact of the COVID-19 pandemic presented challenges for academic medical centers in each of their tripartite mission areas of education, health care, and research. For students, in-person classes and clinical rotations were temporarily suspended in the spring of 2020. Educational and clinical leaders at the University of Mississippi Medical Center, located in Jackson, Mississippi, immediately identified how students could continue training by volunteering in numerous interdisciplinary pandemic relief efforts. Study objectives: We aimed to estimate the prevalence of intimate partner violence (IPV) and associated risk factors in married women in rural villages of Gilgit Baltistan in Pakistan.
Methods: A cross-sectional design to assess the magnitude and factors associated with IPV in a random sample of 789 married women aged 18-49 years. A World Health Organization screening instrument was used to assess the presence of IPV in the previous 12 months. A locally validated instrument was adopted to identify self-reported symptoms of major depression according to the DSM IV. Working in agriculture can be dangerous. Despite ongoing efforts of Extension, animal production worker safety has not been adequately addressed. We present state, regional, and national counts and rates on fatal and nonfatal injuries in agriculture and animal production using publicly available data from the Bureau of Labor Statistics. We found that animal production had a high number of fatal injuries and a higher rate of nonfatal injuries than the average within agriculture. More needs to be done to protect livestock workers from injury. Extension professionals can play a key role in increasing safety knowledge and changing behaviors.

The COVID-19 pandemic has dramatically impacted the delivery of nutrition education through Cooperative Extension. This study aimed to identify a Cooperative Extension audience’s attitudes towards virus prevention behaviors, preferred sources of information regarding COVID-19, and nutrition education preferences during the pandemic. We distributed an online survey to 477 potential nutrition education participants including questions about behaviors like mask wearing, preferences for virtual nutrition lesson delivery, and attitudes towards sources of information about COVID-19. Attitudes towards mask wearing and preferred sources of information differed significantly by race, income, and age. These differences have serious implications for future outreach and program delivery.

Minnesota Cottage Food Industry: Insights From Extension Food Safety Education, Morrine Omolo, Regina Mcgoff, Suzanne Driessen, Katherine Brandt, Joanne Slavin, Michael Schmitt

The cottage food industry has become a significant part of the food supply in Minnesota, most likely as a result of the growing consumer demand for locally produced, minimally processed and value-added foods. Using post-training evaluations, we characterized the cottage food producers in Minnesota and assessed the impact of our food safety course. The results showed that the producers are mostly white women (71%), producing and selling a variety of products. The learners gained knowledge to safely produce and handle homemade food products for direct sale to consumers. Majority (80%) of the learners were satisfied with the course.

BACKGROUND: The COVID-19 pandemic caused widespread changes to healthcare, but few studies focus on ambulatory care during the early phase of the pandemic. We characterize veterans' ambulatory care experience, specifically access and satisfaction, early in the pandemic.

METHODS: We employed a semi-structured telephone interview to capture quantitative and qualitative data from patients scheduled with a primary care provider between March 1 - June 30, 2020.
