With the FDA mandating that all foodstuff labels list the amount of trans fates within their product, it becomes necessary to have a rapid and reproducible method for quantifying trans content within foods. Research has led to the advent of an analytical method that utilizes attenuated total reflectance with a Fourier transform infrared spectrometer to quantitatively measure trans fat in foodstuffs. The method is possible because of an infrared absorbance band at 966 cm that is unique to nutritional trans fats. Contamination of cold-smoked salmon with Listeria monocytogenes, a bacterium causing listeriosis, presents a risk to consumer health. The overall aim of this thesis was to investigate the prevalence and source of L. monocytogenes in different stages of vacuum packed cold-smoked salmon production chain/retail market and to develop a risk assessment model to quantitatively assess the risk of human listeriosis upon consumption of vacuum packed cold-smoked salmon. The study necessitated the identification of novel isolation techniques for the isolation and quantification of L. monocytogenes in vacuum packed cold-smoked salmon. Microwave (MW) ovens are used extensively for heating a variety of not-ready-to-eat food products. It is vital to achieve target temperature uniformly throughout the food to inactivate foodborne pathogens to assure safety. Non-uniform heating of foods in microwave ovens is the major concern in assuring microbiological safety of such products. The non-uniform heating of foods in domestic microwave ovens is due to complex interactions of microwaves with foods. Leakage of ammonia in food facilities has been known to occur in the past. Ammonia leaks often lead to food contamination in food plants and can cause illness among consumers who accidentally consume the food products contaminated with high levels of ammonia. Therefore, a rapid, simple yet accurate method has to be established for on-site ammonia level screening in food plants to ensure the food is safe. To test the hypothesis that white potatoes (WP), oven-baked fries (OBF), and french fries (FF) contribute important nutrients within energy needs to children's and adolescents' diets, secondary analysis of 24-hour dietary recall data from the National Health and Nutrition Examination Survey 2003-2006 was conducted. Potato content of survey foods was determined using US Department of Agriculture recipe databases (Standard Reference (SR)-Link files). Nutrient content of potatoes was determined by linking SR codes to US Department of Agriculture food composition data. With a warming Arctic, degradation of permafrost is expected to release organic and inorganic materials into aquatic ecosystems; however, there are few long-term datasets with which to test this prediction. The Arctic tundra ponds at the International Biological Program (IBP) site in Barrow, Alaska, studied for the first time in the 1970s, represent one of the very few locations in the Arctic where long-term data are available on freshwater ecosystem structure and function.

A Virginia native and graduate of Virginia Tech, Peggy H. Lee began her career in restaurant management, but soon switched to school food service. She first worked as a supervisor of twenty-two schools in the Norfolk school system and then became the nutritionist for Virginia Beach Schools. From Virginia Beach she moved to Norfolk as a supervisor and then took the director’s position in Chesapeake. After thirty years of service she retired and now works for the National Dairy Council.

After college in the SUNY system, where she earned a degree in food service management and nutrition, Hanks worked in healthcare, before taking her first job as director of a small school district. She has progressively worked her way through steadily larger districts and is now the director of the South Colonie School District.

A firm believer in networking, he has been active in the School Nutrition Association. He is now director of three districts in Roswell, New Mexico, Carlsbad, New Mexico, and Dexter, New Mexico.

Despite the successes provided by vaccination, many challenges still exist with respect to controlling new and re-emerging infectious diseases. Innovative vaccine platforms composed of adaptable adjuvants able to appropriately modulate immune responses, induce long-lived immunity in a single dose, and deliver immunogens in a safe and stable manner via multiple routes of administration are needed. This work describes the development of a novel biodegradable polyanhydride nanoparticle-based vaccine platform administered as a single intranasal dose that induced long-lived protective immunity against respiratory disease caused by Yesinia pestis, the causative agent of pneumonic plague. For the past 40 years, antiangiogenic approaches have been of major interest in the development of methods to cure and prevent cancer. Angiogenesis, the development of blood vessels from pre-existing vascularization, is essential for cancer growth and spread of metastasis through the delivery of nutrients and oxygen essential to sustain the metabolic activity of these malignant cells. Blocking access to blood will cause cancerous cells to assume a dormant state creating inactive micro-tumors innocuous to the host. Vertebrates engage in symbiotic associations with vast and complex microbial communities that colonize their gastrointestinal tracts. Recent advances have provided mechanistic insight into the important contributions of the gut microbiome to vertebrate biology, but questions remain about the evolutionary processes that have shaped symbiotic interactions in the gut and the consequences that arise for both the microbes and the host. Here we discuss the biological principles that underlie microbial symbiosis in the vertebrate gut and the potential of the development of mutualism. Sterile apple juice inoculated with S. cerevisiae ATCC 9763 (103 CFU/mL) was processed in a bubble column with gaseous ozone of flow rate of 0.12 L/min and concentration of 33-40 µg/mL for 8 min. The growth kinetics of S. cerevisiae as an indicator of juice spoilage was monitored at 4, 8, 12 and 16 ºC for up to 30 days. The kinetics were quantitatively described by the primary model of Baranyi and Robert’s and the maximum specific growth rate was further modeled as a function of temperature by the Ratkowsky type model. In Zambia, sorghum was considered a traditional crop with limited industrial uses.
Research and transformations in consumer tastes and preferences have led to the development of new uses for sorghum.
Potential markets for industrial utilization of sorghum have been identified as food processing, beer brewing, feed concentrates and energy production.

Rationale: Parvalbumin is recognized as pan-allergen in fish and frog. However, previous studies demonstrated that the IgE- and IgG-binding patterns to parvalbumins vary depending on the fish species. We aimed to use 3 anti-parvalbumin IgG and human IgE to investigate the contributing factors for the binding differences.
Methods: Indirect enzyme-linked immunosorbent assay (ELISA) and IgG immunoblotting were used to determine the reactivity of the polyclonal anti-cod parvalbumin antibody and the commercially available, monoclonal anti-frog and anti-carp parvalbumin antibodies against raw muscle extracts of 25 fish species.
