Over the past two-hundred years, the industrialization and mechanization of agriculture has slowly dissolved the centuries-old bond between human beings, the land and their food. Today, this disconnect threatens to exacerbate wide scale environmental degradation and a wide array of chronic diseases. However small, local farms that sell their produce directly to consumers are in a position to reverse this trend and reconnect consumers with their food. Small-scale farmers are able to see the health of the environment as instrumental to their economic and personal wellbeing and are able to be held accountable for their farming practices by their customers. …

Women are influential in the production and reproduction of food systems. Historically, domesticity positioned women as gatekeepers to their family’s food consumption; these food practices have in turn informed cultural codes that construct personal identity. Feminist scholars have investigated how cooking and feeding practices affect a woman’s perception of self and interaction with society. Both practices are viewed as a simultaneous burden and pleasure, as an act of victimization and empowerment. These binaries must be deconstructed in order to create change within the food system. This paper explores various food-­‐related narratives, including meat production in Kathmandu, organic farming, the separate experiences of American researchers and American missionaries, "haute cuisine" in a luxury hotel, and a nutritional rehabilitation clinic for malnourished children. Accompanying these narratives are my own experiences that are made communicable through making, or watching food being made. The result of these narratives is a growing picture of the various roles food plays within our lives-­‐ generated by what was communicated by the people who source, cook, and eat food, but also infused by my own observations. Each year, the University of Nebraska – Lincoln develops multiple displays for Husker Harvest Days, a Nebraska-based agricultural trade show. The University’s 2012 theme was “Strengthening the State of Beef”. The Animal Manure Management workgroup, along with others working in environmental stewardship at the University of Nebraska – Lincoln came together to develop a backdrop titled “Nebraska’s beef industry thrives by its stewardship”. Mozzarella cheese is currently the highest consumed cheese in the United States. The popularity of mozzarella cheese is typically attributed to the high consumption rates of pizza cheese and string cheese; both of which are low moisture part skim (LMPS) mozzarella cheese. A single serving of LMPS mozzarella cheese contains approximately 8% of the daily value (DV) for sodium, a mineral which is currently consumed in excess among most Americans. The more statistical analyses performed in the analysis of research data, the more likely it is that one or more of the conclusions will be in error. Multiple statistical analyses can occur when the sample contains several subgroups and the researchers perform separate analyses for each subgroup. For example, separate analyses may be done for different ethnic groups, different levels of education, and/or for both genders. Media reports of research frequently omit information on the number of subgroup analyses performed thus leaving the reader with insufficient information to assess the validity of the conclusions. By 2050, the Philippine population is projected to increase by as much as 41 percent, from 99.9 million to nearly 153 million people. Producing enough food for such an expanding population and achieving food security remain a challenge for the Philippine government. This paper argued that intellectual property rights (IPR) can play a key role in achieving the nation’s current goal to be food-secure and provided examples to illustrate that the presence of sound intellectual property (IP) helps foster research, development, and deployment of agricultural innovations. Rice is one of the most popular cereal grains in the world. Rice bran, a by-product of the rice milling process, contains an abundance of nutrients including protein, fiber, vitamin B complex, vitamin E, and other nutraceuticals. However, rice bran is underutilized in the food industry. In this project muffins were prepared with varying concentrations (2.5%, 5.0%, 7.5%, 10.0%, 15.0%, 20.0%, and 25.0%) of 60 mesh (250 µm) fermented rice bran (60 mFRB) and 80 mesh (180 µm) fermented rice bran (80 mFRB). In order to examine and obtain a better understanding of the local food system within Adams County, Pennsylvania, this study explores the characteristics and perspectives of the customers and vendors at the farmers markets in Gettysburg, Pennsylvania. Survey findings from the Gettysburg Farmers Market and the three Adams County Farmers Markets include customer demographic information, perspectives and shopping behavior as well as vendor product information, farm size and location and preference for market management. The Trade And Welfare Impacts Of Australian Quarantine Policies: The Case Of Pigmeat, John C. Beghin, Mark Melatos

We analyze the trade and welfare impact of quarantine measures imposed by Australia on imports of pigmeat. In particular, we account for changes to Australia’s pigmeat quarantine policy over time, including those changes related to the recent resolution of a WTO dispute between Australia and the European Union. Using a random utility model and applying it to corner solutions in import decisions, tariff equivalents (by major trading partner) are estimated for the different pigmeat quarantine regimes implemented by Australia during the period 1988-2009. Postmenopausal osteoporosis is the most prevalent form of osteoporosis and results in fragility fractures. Smoking is one of the major risk factors for osteoporosis and is known to aggravate bone loss in postmenopausal women due to increased oxidative stress and inflammation. Diet-based interventions using berries have shown bone protective affects in animal studies partially due to antioxidant and anti-inflammatory properties of their phenolic compounds. The goal of this research was to determine the effects of antioxidant-rich fruits in the prevention of postmenopausal bone loss. The first chapter situates the program-specific analysis by providing background information of the edible education movement, a history of the Edible Schoolyard in Berkeley, California, and an explanation of why food is a powerful teaching tool. Meat originating from U.S. horses may contain residues from substances banned by the U.S. Food and Drug Administration and the European Union for use in animals intended for consumption. Phenylbutazone, for example, is commonly administered to U.S. horses and has been associated with life-threatening reactions in humans. Requiring a thorough drug history for each U.S. horse intended for human consumption may help circumvent human health risks.

CERES Fair Food, an organic food delivery system in Melbourne, VIC was evaluated in terms of its transportation resource consumption, ability to enhance food security, and support of local organic farmers, which are key factors in sustainable food systems for urban areas.

Transportation resource consumption was analyzed by calculating the food miles for a selection of Fair Food’s products and comparing them to data on typical products consumed in Victoria. Most of Fair Food’s products had similar or lower food miles, particularly the fresh produce. But many assumptions had to be made in the calculations due to limited information. Food …

Diabetes has become a cultural problem across America, but particularly in the Midwest and Southern regions. For my film, I explored these two areas and compared the food and exercise culture to one of the healthier regions, the West. Having moved from Indiana to Colorado, I used my own personal experiences to analyze why people in the Midwest struggle with diabetes and obesity at such a higher rate than those nearer to the Pacific Ocean. The federal government’s regulatory approach to genetically engineered (GE) crops, known as “The Framework”, is now twenty-five years old. Despite two and half decades of a consistent regulatory regime, GE crop and food regulation remains controversial. This article suggests that regulatory science and its tenets of independence, transparency, and public science should guide reforms of The Framework so that it is an efficient and reliable regulatory system. Obesity, diabetes, cardiovascular disease, and poor dietary habits are major healthcare problems in the United States. These issues are especially prevalent in the state of Kentucky and among at-risk populations such as Women, Infants, and Children (WIC) participants. Studies have found that whole grains play a role in weight maintenance, protection against type 2 diabetes, and lowering cholesterol. Interventions aimed at improving WIC participant dietary behavior and intake has been successful as well.
