Food and technology have had a long and tempestuous relationship. Current methods of food production and processing in the industrialized world depend heavily on technological developments. However, all technologies are not created equal. Some can produce food that is safer, more sustainable, more nutritious, or longer lasting. Some can have the opposite effect: increasing opportunities for adulteration, increasing the difficulty in detecting food fraud, and contributing to both foreseeable and unforeseeable health or ecological costs. Human noroviruses (HuNoV) are the most common cause of foodborne disease outbreaks in the United States and the most common food commodities implicated in HuNoV outbreaks are leafy greens; however, the vehicle of transmission and point of contamination are often unknown. Despite growing attention to the unintended consequences of paternal incarceration for children’s wellbeing across the life course, little is known about whether and how paternal incarceration is related to food insecurity among children, an especially acute and severe form of deprivation. This paper shares challenges faced and overcome by four African American women on their 2013 journey to secure USDA’s Produce Good Agricultural Practices (GAPs) Harmonized Food Safety Standards with the Global Addendum (Global Markets Primary Production Assessments: GMPPA). Collaboration, consistent training, and technical support from the Tuskegee University Extension and Research staff, and the Small Farmers Agricultural Cooperative undergirded the preparation of the farms for GAPs Certification. The timely sharing of staff expertise and experience from commercial partners (Walmart, Purivida, C.H. Robinson, W.P. Many individuals have difficulty adhering to a weight loss diet. One possible explanation could be that dietary restriction paradoxically contributes to overconsumption. The objective of this study was to examine ingestive behavior under a forced chocolate restriction, with a focus on the anticipatory restriction period and the post-restriction period in frequent chocolate consumers. Fifty-six male (N=18) and female (N=38) high chocolate consumers with high or low cognitive disinhibition aged 27.70 ± 11.09 years with a mean BMI of 25.68± 5.92 kg/m2 participated. A prominent component of the factory farmed by-product industry is the battery cage egg-farming scheme, which has cultivated immense amounts of ecological damage to the hens and environment involved. Improperly cleaned and sanitized chef knives may present a potential contamination risk and thus be a risk for foodborne illness. Therefore, ensuring effective cleaning and sanitization of knife surfaces may help prevent the spread of foodborne pathogens. The primary objective of this research was to compare the efficacies of two different cleaning methods (three-compartment manual dishwashing and sanitizer wiping) at removing food soils from contaminated chef knives using procedures that are typical of restaurant kitchens. This study investigated what impact ethnic music had on ethnic menu item selection. College students were randomly divided into three groups and listened to one randomly assigned sound treatment in sensory booths. Three hundred and five participants completed the questionnaire with measures of expected price value and willingness to pay value. One of the groups listened to an Italian folk music, the second group listened to a Thai folk music, and the third group listened to a restaurant background noise in order to examine if the music will impact each participant menu items selection and perceived price values. The purpose of this project was to create a video designed to educate the public about chicken egg storage and refrigeration. The information in the video was based on a research experiment performed by the author, which was designed to measure the chronological decline of internal egg quality over a ten-week period. By creating an educational video about the longevity of chicken eggs, it is hoped that consumers will learn to keep their eggs past their sell-by dates. The objective of this research was to quantify and assess the energy use and efficiency of commercial cross-flow dryers when drying rice using a range of drying and ambient conditions. First, equations that predict the theoretical energy required to dry rice from any given initial moisture content to a desired final moisture content were developed for several rice cultivars using a semi-theoretical approach to obtain a basis for comparison to calculate energy efficiency. Theoretical energy requirements, expressed as the energy required per unit mass of water removed, increased exponentially as initial moisture content decreased.
