Archaeological cobs free of mineral contaminants should be used to source the soils in which they were grown. Mineral contaminants often contain much higher concentrations of metals than vegetal materials and can alter a cob’s apparent metal and heavy-isotope content. Cleaning a cob via immersion in an acid solution for more than a few minutes will result in the incongruent and sometimes complete leaching of metals, including strontium (Sr), from the cob. Chokeberries (Aronia melanocarpa) are an antioxidant-rich plant product due to their high content of polyphenols, especially anthocyanins and procyanidins. These polyphenols have been shown to provide protection against coronary heart disease, stroke, and lung cancer, as well as against oxidative stress, the main cause behind chronic diseases promoted by free radicals. The objective of this study was to determine the storage effects of gelatin encapsulation on monomeric anthocyanins, procyanidins, color density, and percent polymeric color of three gummy candies of different strengths formulated with a base of 25.4% chokeberry concentrate, 47.6% sucrose, 1.3% Splenda, and 0.025% potassium sorbate. The Prospects Of Using Athrospira Platensis As A Malnutrition Treatment In Kenya, Kari N. Harris

Independent Study Project (ISP) Collection

The purpose of this research was to explore the current efforts using spirulina as a malnutrition treatment in Kenya. There are currently five spirulina cultivation sites that growing spirulina, four of which are located in the Nyanza Province. Their production and scope of advocacy efforts are limited. Some of the cultivation sites have a better quality control measures and strategic plan in place for expanding cultivation. Significant efforts need to be made to improve the scope of production and create links with nutrition experts in other non-governmental organizations and at the national level.

Numerous models and indices exist that attempt to characterize the effect of environmental factors on the comfort of animals and humans. Heat and cold indices have been utilized to adjust ambient temperature (Ta) for the effects of relative humidity (RH) or wind speed (WS) or both for the purposes of obtaining a “feels-like” or apparent temperature. However, no model has been found that incorporates adjustments for RH, WS, and radiation (RAD) over conditions that encompass hot and cold environmental conditions. The Green Revolution was initiated in the 1960’s to address the issue of malnutrition in the developing world. The technology of the Green Revolution involved bio-engineered seeds that worked in conjunction with chemical fertilizers and heavy irrigation to increase crop yields. The technology was readily adopted in many stated in India and for some was a great success. However, there were many farmers who could not afford the inputs necessary to participate in the Green Revolution and gaps between social classes widened as wealthy farmers got wealthier and poor farmers lagged behind. An Hsi Report: Food Safety And Cage Egg Production, Humane Society International

HSI REPORTS

Governments have begun legislating against cage egg production and a growing number of major food retailers, restaurant chains, and foodservice providers worldwide are switching to cage-free eggs. Extensive scientific evidence strongly suggests this trend will improve food safety. All fifteen scientific studies published in the last five years comparing Salmonella contamination between caged and cage-free operations found that those confining hens in cages had higher rates of Salmonella, a leading cause of food poisoning worldwide. This has led prominent consumer advocacy organizations, such as the Center for Food Safety, to oppose the use of cages to confine egg-laying hens.

Crises impacting agriculture cost the nation billions of dollars in expenses and lost revenues annually. Organizations and governmental agencies continue to refocus energies on improving crisis communication plans in an effort to lessen economic impacts of unanticipated events. This study brought together an advisory team of agricultural communications professionals to gather perceptions of crisis communications educational needs for new professionals and to identify the best practices for using Second Life© (SL), a 3-D virtual world, simulations for training. Objective—Characterize the process of family vegetable selection (especially cruciferous, deep orange, and dark green leafy vegetables); demonstrate the usefulness of Exchange Theory (how family norms and past experiences interact with rewards and costs) for interpreting the data.

Design—Eight focus groups, two with each segment (men/women vegetable-likers/dislikers based on a screening form). Participants completed a vegetable intake form.

Setting—Rural Appalachian Pennsylvania.

Participants—61 low-income, married/cohabiting men (n=28) and women (n=33).

Analysis—Thematic analysis within Exchange Theory framework for qualitative data. Descriptive analysis, t-tests and chi-square tests for quantitative data.

Results—Exchange Theory proved useful for understanding that regardless …

It can be used to develop crop varieties that would otherwise be unavailable and can facilitate much faster and more precise ways of developing improved varieties. It can help to increase yields and reliability and thus reduce food costs for the consumer while helping to control input costs for farmers through reduced applications of herbicides, pesticides, and fertilizer.
