In terms of energy density, the cost of shipping hay is often not justified in yr where adverse conditions limit available forage. Our objective was to determine if co-product feedstuffs could be used to meet the energy demands for cows in late pregnancy. Eighty-six crossbred cows (527 ± 0.8 kg BW) in late gestation were stratified by BW, BCS and age and allocated randomly to 1 of 6 groups held on 2-ha dormant bermudagrass pastures for 68 d. Orofacial clefts (OFCs) are facial malformations that happen during early pregnancy and have a complex and heterogeneous etiology, involving both genetic and environmental risk factors. This project examined the association between maternal nutrition, folate-related biomarkers, candidate genes involved in one-carbon metabolism (OCM), and OFCs in order to achieve more comprehensive knowledge of how nutrition and genetics influence OFC risk. All studies performed in this project used the data collected in the Utah Child and Family Health Study (UCFHS) and the Johns Hopkins International Cleft Consortium.

This case study examined methods used in a food safety/Good Agricultural Practices (GAPs) educational program with small and limited resource produce farmers in Alabama to assist them with obtaining certification. Two methods were used, namely, the identification of challenges to food safety certification and development of strategies to address the challenges, and the enlistment of educational methods to facilitate food safety certification. As a result, there were four challenges to food safety certification identified; needs for motivation, information, clarification, and resources. This project examines the avenues by which nutrition science impacts individuals in society. It examines the factors that influence consumer behavior and food choice and the importance of health literacy in guiding nutrition and health. It elucidates the role of the Food and Drug Administration (FDA) in regulating food labeling and the implications that such regulation has on consumer perception and possible health outcomes. Further, this project outlines recently proposed changes to the “Nutrition Facts” panel. In investigating nutrition education and outreach programs, this project includes a case study of Farm Fresh Rhode Island and the organization’s nutrition initiatives.

Finfish are consumed across the United States and constitute an important part of the American diet. However, seafood consumption can be a tenuous topic, with supporters highlighting the health benefits of eicosapentaenoic acid (EPA, C20:5n3) and docosahexaenoic acid (DHA, C22:6n3) and opponents emphasizing the neurotoxicity of methylmercury. Because all fish contain varying amounts of EPA, DHA, and methylmercury, the need for clear and unbiased information is essential to alleviate the confusion experienced by many consumers and empower them to make informed decisions regarding seafood consumption. Sleep-deprivation is thought to be a factor in the rising American obesity epidemic. Altered sleep cycles affect appetite-regulating hormone levels and enhance the hedonic effect of food consumption. As a result, sleep restriction has been associated with an increased daily energy intake of more than 500 calories and high-carbohydrate/high-fat consumption. The annual Sigmon Farm Tour was started in 1992 as an agricultural education program where students could experience being on a farm with the goal of increasing the agricultural literacy levels of the participants. Every year the entire 4th grade student population of Rockcastle County spends the day touring the farm and participating in experiential mini lessons given by the cooperating farm service and health agencies. The program has continued for 20+ years without an evaluation as to whether it is achieving its objectives. This laboratory study examined the effects of acetaminophen overdose in normal fed and high-fat fed female mice. Forty female mice were placed on normal and high-fat diets at 4 weeks old. When the mice were significantly different in weight (between 6 and 9 months old), half the mice were dosed with acetaminophen. These mice were daily given an overdose of acetaminophen for 14 days. The dose used was 300 mg/kg mouse (LD50 = 338 mg/kg). The control group was given 10 µl water/g mouse. Levels of serum glutamate dehydrogenase (GDH) were measured to indicate liver damage. The amount and type of antioxidants present in raspberries is dependent upon cultivar, ripeness, and growing conditions. Previous research on raspberry jam has reported some color, antioxidant, and flavor loss after processing and storage, though it is unknown to what extent similar changes will occur in raspberries grown in Utah. Background: Increasing evidence suggests that oral microbiota play a pivotal role in chronic diseases, in addition to the well-established role in periodontal disease. Moreover, recent studies suggest that oral bacteria may also be involved in carcinogenesis; periodontal disease has been linked several cancers. In this study, we examined whether lifestyle factors have an impact on antibody levels to oral bacteria.

All-purpose wheat flour is a useful long-term storage commodity, but is subject to off-odor formation. Although flour stored in a low oxygen atmosphere should inhibit rancid odor formation, it elicits consumer complaints about odor. This retrospective study involved a fitness gym located in Utah County, Utah with a total membership of 1,100. Protein malnutrition is responsible for half the deaths of children under the age of five each year in developing countries. More than 4%, 26%, and 70% of children with protein malnutrition live in Latin America/the Caribbean, Africa, and Asia, respectively. The objective of this research was to develop a novel snack made with millet, black eye bean (from Niger Republic), and rice flour fortified with soybean meal protein using extrusion technology.
