Two studies were conducted to determine the effect of panelist participation frequency and specific aspects of questionnaire design on overall acceptance scoring in consumer central location tests. Regarding participation frequency, research subjects who participate frequently in some survey types are known to provide responses that differ from subjects who participate less frequently, known as panel conditioning. With respect to questionnaire design, overall acceptance (OA) question placement and usage of pre-evaluation instructions (PEI) in questionnaires for food sensory analysis may bias consumers' scores via carry-over effects. Beans are a commonly consumed food and a staple in many regions worldwide. Pinto beans (Phaseolus vulgaris), categorized as legumes, are dried seeds from plants and are high in protein, carbohydrate and fiber, and low in fat. Lactic acid bacteria (LAB) and Bifidobacterium are the most common types of microbes used as probiotics. They are present in the human gastrointestinal tract and have a significant influence on our health and well-being. Microbiota plays an important role in host metabolism and provides a natural defense mechanism against invading pathogens. Explore traditionally used medicinal plants for diabetes mellitus would be beneficial to find an alternative option for controlling global diabetic prevalence. Present study aims to compare and identify potential antidiabetic activity in Tinospora cordifolia, Gymnema sylvestre and Aegle marmelos. Fifty percent acetone and ethyl acetate extracts of each plant were studied for anti-diabetic activity using different assays (ORAC, DPPH, ABTS, TPC, α-glucosidase inhibition). Total phenolic content and anti oxidant properties were significantly different among three plants. Tinospora cordifolia ethyl acetate extract possessed significantly higher anti oxidant activity and total phenolic content. DPPH and ABTS results were significantly correlated with each …

The organic industry is full of opinions and perceptions, which influence consumer purchasing decisions. A convenience sample of 69 college students between the ages of 19-23 registered in a basic food preparation class participated in this study. A sensory analysis of organic and conventional fruits, vegetables, meat and poultry, eggs and dairy measuring categorical taste differences between the two types of food. Student perceptions of organic foods in relation to health, environment and pricing and the likelihood of purchase were also studied. The influence of Diet and Well-being on organic purchases predominantly mattered somewhat to students, while price mattered completely. …

An obligatory heterofermentative lactic acid bacterium, Lactobacillus wasatchii sp. nov., isolated from gassy Cheddar cheese was studied for growth, gas formation, salt tolerance, and survival against pasteurization treatments at 63°C and 72°C. Initially, Lb. wasatchii was thought to use only ribose as a sugar source and we were interested in whether it could also utilize galactose. The Jains are a small but influential minority community in India. Their religion is structured around the concept of ahimsa, the strict adherence to nonviolence in one’s every under taking. The ideal Jain diet does the least amount of harm to both oneself and one’s environment, including plants and microscopic organisms. Many foods — including meat, honey, alcohol, and underground vegetables — are forbidden. While Jain philosophy is adamant about avoiding foods that are obtained through violence, it says little about the perspectives and lifestyles of those most often charged with maintaining this diet: Jain laywomen. Prediabetes is a sub-health condition in the development to type 2 diabetes, which has been long overlooked. Grain sorghum contains functional starch fractions, which have been widely reported for their potential on blood glucose control and diabetes prevention. A human study with prediabetic men was conducted to investigate the effects of sorghum starch on postprandial blood glucose and insulin levels. Breast cancer is the most commonly diagnosed cancer among women and there are expected to be 1,665,540 new cases diagnosed in 2014. Advancements in early detection, have greatly improved treatment outcomes for the majority of these patients and the 5-year survival rate is 89.2%. Starch serves as the main energy source in cereal and tuber-rich diets, and its glycemic response profile has been associated with health-related conditions. Sorghum and millet are known to have relatively low starch digestibility, a potentially desirable property for controlling blood glucose response and providing sustained energy. Gastric emptying rates of traditional sorghum and millet-based African foods of the Sahelian region (couscous, thick and thin porridges made from millet and/or sorghum) were compared to those of non-traditional "modern" foods that are mostly consumed in urban areas using a non-invasive 13C-labelled octanoic acid breath test in healthy volunteers. Editors’ Note: At the December 2013 Professional Agricultural Workers Conference, several women were invited to share, information about their unique businesses. One such presenter was Marsha L. Thadison, owner of Yesterday’s Kitchen 4 Today, a company that focuses on promoting functional foods. Thadison shared that food is produce and consumed differently from previous generations. Today's food, she argued, involves many more agricultural inputs that aid in food preservation, extension of shelf life, and promotion of animal health. She espoused the benefits of fermented food.

By-products from the dry-milling ethanol process can be used in cattle diets to replace corn. There is a significant interaction between corn processing methods as CCDS concentration increases in the diet. Improvements are observed for SFC in final BW, ADG, and G:F over DRC. An experiment was conducted to determine if greater concentrations of CCDS could be fed in SFC based diets and maintain or improve performance. Performance and carcass characteristics were evaluated with increasing concentrations of CCDS at 0, 9, 18, 27, or 36% in place of SFC in feedlot finishing diets. As CCDS concentration increased, DMI decreased quadratically. …

The human gut microbiome consists of at least 3 million non-redundant genes, 150 times that of the core human genome. Herein, we report the identification and characterisation of a novel stress tolerance gene from the human gut metagenome. The locus, assigned brpA, encodes a membrane protein with homology to a brp/blh-family β-carotene monooxygenase. Cloning and heterologous expression of brpA in Escherichia coli confers a significant salt tolerance phenotype. Furthermore, when cultured in the presence of exogenous β-carotene, cell pellets adopt a red/orange pigmentation indicating the incorporation of carotenoids in the cell membrane.

The current study is an attempt to better understand the motivations of consumers that engage in target shooting as a serious leisure activity. The instrument design was based on the Leisure Satisfaction Scale and the Leisure Motivation Scale. A total of 5502 usable surveys were collected utilising the Internet and a website related to gun ownership and target shooting. Exploratory in nature, results indicated that three variables in particular, Escapism, Social Interaction and Self-Actualisation, were primary motivators when it comes to engagement in target shooting as a serious leisure pursuit. Chemical treatment and decreased particle size are methods used to improve digestibility and utilization of the available nutrients in low quality forages. Previous research has indicated that chemically treated corn residue can take the place of corn when included in finishing rations containing distillers grains. Also, decreasing particle size utilizing methods such as pelleting has been shown to improve DMI and ADG. Vending machines may be contributing to the obesogenic food environment. The Health Density Vending Machine Audit Tool (HDVMAT) was developed to comprehensively evaluate and score vending machines based on machine accessibility, product healthfulness, price, and promotion. A novel nutrient-dense scoring system was created to determine the healthfulness of vended snacks based upon calories and macro/micro-nutrients and of beverages based on type and/or calories. The HDVMAT was implemented in snack and beverage university machines in different states. Nutrition Environment Measures Survey-Vending (NEMS-V) was used to validate the nutrient-density score. The DeepWater Horizon (DWH) oil spill contaminated a large area in the Gulf of Mexico in summer 2010. It is likely that many aquatic species in the Gulf were affected by the spill. Crude oil contains polycyclic aromatic hydrocarbon (PAHs). Some PAHs are carcinogenic to fish and humans. The purpose of this project was to develop menhaden fish oil as a biomonitoring tool for crude oil contaminants such as PAHs using scanning fluorescence spectroscopy (SFS). This study examines models of community gardens and urban farms and determined a successful hybrid model for future implementation at the Huerta del Valle Community Garden. This was accomplished through analyzing the unique benefits and drawbacks of community gardens and urban farms as defined by the author, and then determining the components of each model that would maximize Huerta del Valle’s social and economic potential. Background: Aronia berries (chokeberries) have very high levels of health-promoting polyphenols yet cause "choking" sensations due to bitterness and astringency. We aimed to describe oral sensations and palatability of aronia juice by variations in harvest time and oral sensory phenotype. Sensory blocking combinations were tested to improve juice acceptability. Methods: Ripe aronia berries were harvested at 7 time points and juiced for oral sampling by 50 adults who underwent bitter taste phenotyping. The adults reported quality intensities of prototypical tastes, foods, and aronia juices. Ethyl butyrate (10ppm) and/or sucrose (0.15 and 0.3M) were added to prototypical oral stimuli and aronia …
