The purpose of the present study was to assess the effectiveness of hydrogen peroxide vapor (HPV) at inactivating Salmonella inoculated in whole black pepper when used as fluidizing gas media. HPV treatment was conducted at two different temperatures (45°C and 60°C) and two dwell times (30 min and 60 min). Microbial reduction and residual hydrogen peroxide were measured at three storage times: 0 h (immediately after treatment), 24 h and 48 h post-treatment. One of the Carbo Rock-It’s main features is that it does not add a significant volume of undissolved gas bubbles to the brite tank in which the beverage is carbonated. From 2022, the European Union Waste Framework Directive (WFD) requires member states to report annual food waste from each food supply chain stage. Comprehensive food losses and waste (FLW) data can be challenging to obtain for the primary production stage, i.e., farming and fishing. However, this information is vital in developing FLW mitigation actions appropriate to each country. This study describes the nature and extent of FLW from primary production in Ireland, using methods approved for WFD reporting. Coffee consumers want an affordable, high-quality cup of coffee that takes minimal time to brew and does not excessively contribute plastic to landfills. A fully autonomous system which utilizes whole coffee beans, water, and filters to brew coffee was designed to meet this need. This system accepts user requests which specify the brew’s portion size, water temperature, and brew strength, as well as the time which the system should begin the brewing process. Integrated models considering the complex interactions across food, energy, and water (FEW) enhance decision-making and strategic planning towards resilience. In recent years, proprietary hops (Citra, Simcoe, and Mosaic) become the most sought-after hops among brewers due to their excellent aroma. However, they are restricted to the owners unless other growers purchase the costly licensing agreements. In this work adjustments in the rotogravure printing process are proposed to the varnish water vapor transmission rate (WVTR) aiming to obtain results smaller than 20g/m²/24h. One case study was used for the propositions for improvements, where focused on varnish application process in a gravure printer for an eight-printing unit cartonboard packaging, maximum printing speed of 175 m/min and a 285 g/m² weight cartonboard. This study provides a mixed-methods approach in analyzing a potential closed-loop system between renewable biogas production from anaerobic digestion, vermiculture production, aquaculture production, and organic wastes with a particular focus on stillage wastes. Such system may hold significant promise for significantly reducing organic carbon and methane emissions from its components, and should be assessed for such. The 2021 IPCC report essentially identified methane reduction as the single fastest way to slow global warming (IPCC, 2021), making the study and implementation of methane-reducing systems and supportive policy for them critical. To improve image quality generated from the electrical capacitance tomography measurement system, the use of entropic thresholding techniques is investigated in this article. Based on the analysis of the principle of Electrical Capacitance Tomography (ECT) image reconstruction and entropic thresholding, various algorithms have been proposed for easy extraction of quantitative information from tomograms generated from the ECT system. Experiments indicate that proposed algorithms can provide high-quality images at no or minimum computational cost. It is easier to implement and integrate with classical algorithms such as Linear Back Projection, Singular value decomposition, Tikhonov regularization, and Landweber. Hand-hygiene is a critical component for safe food handling. In this paper, we apply an iterative engineering process to design a hand-hygiene action detection system to improve food- handling safety. We demonstrate the feasibility of a baseline RGB-only convolutional neural network (CNN) in the restricted case of a single scenario; however, since this baseline system performs poorly across scenarios, we also demonstrate the application of two methods to explore potential reasons for its poor performance. Effective laboratory and classroom demonstration of microbiome size and shape, diversity, and ecological relationships is hampered by a lack of high-resolution, easy-to-use, readily accessible physical or digital models for use in teaching. Three-dimensional (3D) representations are, overall, more effective in communicating visuospatial information, allowing for a better understanding of concepts not directly observable with the unaided eye. Microwave-assisted deep eutectic solvent and gamma-valerolactone metallic chloride catalyzed conversion of xylan to furfural were investigated using a 2x3 factorial experimental design at two levels of percent microwave power, reaction time, and catalyst concentration. The levels of each factor studied were (20%, 60% microwave power, 2, 4 minutes, and 10, 20mg) respectively. The effect of three metallic chloride catalysts (LiCl, FeCl3.6H20, CuCl2) on the conversion of xylan to furfural was also investigated. Salmonella Typhimurium is a foodborne pathogen associated with raw and undercooked eggs, poultry, beef, fruits, and vegetables. In the United States, Salmonella is responsible for approximately 1.2 million illnesses, 23,000 hospitalizations, and 450 deaths annually. Nanocomposite film can be used to prolong the shelf-life of fruits and vegetables. This research was undertaken to investigate the effects of packaging period and temperature on the quality and self-lives of cucumber and garden-eggs packaged using cassava starch-zinc nanocomposite film. It is estimated that roughly 103, 515 tons of peach waste is produced annually in the US. The majority of the waste is disposed of in landfills, which contributes to climate change as they release 93 million metric tons of CO2 equivalent. Hybrid life cycle assessment (LCA) incorporating process-based and economic input-output (EIO)–based inventory data has been applied in various industries (e.g., wind energy, biofuel). Few hybrid LCA studies have been found in the food industry. This work analyzes the life cycle environmental impacts of the US beef processing industry using process-based and integrated hybrid LCA. The process-based inventory includes all resource inputs and waste outputs associated with a beef processing plant. The EIO-based inventory includes key activities missing in the process-based inventory, such as technical and management service, wood and paper, and industrial equipment. Recent foodborne illness outbreaks in US associated with consumption of low-moisture foods (LMF) have heightened concerns of their microbial safety. Salmonella is a pathogen of major concern in LMF due to its ability to persist in low water activity (aw) environments. The disadvantages of existing decontamination technologies for LMF call for novel and efficient intervention technologies. Radio frequency (RF) and ethylene oxide (EtO) were evaluated in this dissertation for improving microbial food safety and quality of LMF. Economically, discolored rice kernels have less market value, which can seriously impact farm net profit. The reasons for rice discoloration during storage have not been studied extensively and many questions remain. Therefore, the primary goal of this study was to improve understanding of the role and contributions of storage practices on rice quality degradation and discoloration. The traditional method for the carbonation of beer includes bubbling CO2 through a pressurized brite tank until the desired level of carbonation concentration is reached. The gas either dissolves in the liquid volume or passes through the beer into the gas headspace above the bulk volume of beer. The gas that passes through the liquid can strip the beer of flavors, and this undissolved gas is vented to the atmosphere. The reputation of low-moisture foods as safe foods has been crumbling over the past decade due to repeated involvement in foodborne illness outbreaks. Although various pasteurization technologies exist, a majority are thermal processes and have not been well-characterized for pasteurizing low-moisture foods. In addition, the nature of a low-moisture food matrix introduces various experimental complications that are not encountered in high-moisture foods. Wastewater with 0.2, 0.4, 0.8, 1.0 mg/L free chlorine was biologically treated using co-immobilized microalgae/ bacteria. In contrast, non-pretreated wastewater was treated with beads (control) and blank beads (blank) under the same operating condition. Results showed that NaClO pretreatment removed 8–33% total nitrogen (TN), 31–45% true color and 0.7–2.5 log CFU/mL aerobic-bacteria. At the end of treatment, maximum algal biomass (2,027 dry weight mg/L) was achieved with 0.2 mg/L free chlorine. Bacterial growth in wastewater was decreased by NaClO pretreatment before reaching 7.2–7.7 log CFU/mL on the fifth day.
