This research studied the effect of transportation hazards on food product shelf life and package performance. Studies were conducted to determine the effect of package headspace volume, product viscosity and storage temperature on package integrity. Finally, accelerated shelf life testing (ASLT) was utilized to determine how simulated transportation hazards affected the shelf life of a specific food product. Institutional retort pouches containing either water or 5% starch solution were filled with varying amounts of headspace volume to determine if package headspace volume could aid in package performance during simulated engineering tests for packaged products. Dairy operations suffer frequent stops. Product shrinkage is a consequence of downtime, which includes losses of packaging material, scraped finish product and capacity. This work proposes a troubleshooting methodology to identify causes of downtime, estimation of waste cost, and minimization of operation disruptions by applying a combination of a cost function to assess waste, and performance measurements. The drinkable yogurt process is evaluated to find the principal areas for wasted bottles and yogurt. This research determines if there is any relationship between the peel force, the opening force and the burst force for a semi-rigid cup and lid system, for pre- and post-retort conditions. It also compares the relationship (regression lines) between these forces pre- and post-retort. These seal results were studied by varying the sealing parameters of dwell time and temperature while keeping the pressure constant. Polylactic acid (PLA) is becoming an increasingly important biopolymer for packaging applications. PLA brittleness limits its applicability. This study evaluated PLA properties with increasing amounts of added polyethylene glycol (PEG) plasticizer. Oxygen transmission rate (OTR) of cast films was determined using the newly available Dynamic Accumulation (DA) method. Arrhenius temperature sensitivity of OTR and polymer Permeability was also determined. Soft condensed matter (SCM) physics has recently gained importance for a large class of engineering materials. The treatment of food materials from a soft matter perspective, however, is only at the surface and is gaining importance for understanding the complex phenomena and structure of foods. In this work, we present a theoretical treatment of navy beans from a SCM perspective to describe the hydration kinetics. We solve the transport equations within a porous matrix and employ the Flory–Huggin’s equation for polymer–solvent mixture to balance the osmotic pressure. By-products from the dry-milling ethanol process can be used in cattle diets to replace corn. There is a significant interaction between corn processing methods as CCDS concentration increases in the diet. Improvements are observed for SFC in final BW, ADG, and G:F over DRC. An experiment was conducted to determine if greater concentrations of CCDS could be fed in SFC based diets and maintain or improve performance. Performance and carcass characteristics were evaluated with increasing concentrations of CCDS at 0, 9, 18, 27, or 36% in place of SFC in feedlot finishing diets. As CCDS concentration increased, DMI decreased quadratically. …

Shelled corn was collected from two sources - commercial grain elevators and corn harvested from Purdue University farms and then frozen until tested. Using a carbon dioxide (CO2) test kit manufactured by Woods End Laboratories, CO2 evolution measurements were conducted on shelled corn from both sources, after the samples were re-wetted to approximately 21% moisture content, placed in a 473 ml glass jar, and incubated at room temperature for 72 hours. The CO2 test kit uses a gel that changes color in response to a change in the level of CO2 in the surrounding air. …

Pectin is an important polymer used in the food industry as a thickening and gelling agent. Though pectin is ubiquitous in plants, chemical and structural differences among pectin molecules prevent most from being viable for industrial use. Enzymes found naturally in fruit cell walls during the ripening process impair many desirable attributes of fruit pectins, rendering them unsuitable for industrial applications. Pectin methylesterase (PME) is one such enzyme whose expression can be altered during ripening through the use of recombinant genetic engineering. Chemical treatment and decreased particle size are methods used to improve digestibility and utilization of the available nutrients in low quality forages. Previous research has indicated that chemically treated corn residue can take the place of corn when included in finishing rations containing distillers grains. Also, decreasing particle size utilizing methods such as pelleting has been shown to improve DMI and ADG. However, limited research has been completed on use of chemical treatment and pelleting in growing and receiving rations. The release of the Final Guidance from the US Food and Drug Administration on the commercialization of genetically engineered animals has sparked renewed discussion over the ethical, consumer, and regulatory implications of transgenesis in animal agriculture. Animal welfare critiques have focused on unexpected phenotypic effects in animals used in transgenic research, rather than on the health and welfare implications of the intended productivity enhancement. Unless breeding goals are redefined to reflect social concerns, the occurrence and magnitude of undesirable side effects may increase and consumer confidence in the nascent technology may be undermined.

Though using treated wastewater for irrigation is a sustainable practice, it may introduce trace levels of Salmonella that may contaminate food crops. Starch and pectin are two food-grade carbohydrates widely utilized in the food industry. Starch and pectin polymers have been investigated in encapsulating functional food ingredients and in pharmaceutical applications. Resistance to enzyme hydrolysis, differential solubilities, depending on the pH, and the ability to ‘protect’ unstable molecules are considered some of the beneficial properties of starch and pectin polymers, for encapsulation applications. Hermetic storage has been shown to be effective in controlling insect pests and maintaining grain quality of dry grains at 13% moisture and below. However, the feasibility and use of hermetic storage for grains at intermediate mid-moisture levels under the influence of the sub-Saharan African weather conditions is relatively unknown. Hermetic storage experiments were conducted on grade 1 "6297 and 6333 VT RIB" hybrid corn under controlled temperature conditions at 10 degrees centigrade and 25 degrees centigrade at target approximate moisture content levels of 11, 15, 18 and 21% wet basis for a total storage period of 6 months. Fibers composed of soy flour (soy) and linear low density polyethylene (PE) were produced by melt spinning method. The mixing time of soy flour and PE was adjusted to get better dispersion of soy flour inside the matrix. The inclusion of soy decreased tensile modulus by 35% and tensile strength by 30% of the fibers compared with 950 MPa and 43 MPa, respectively, for PE fibers. Strain to failure for soy-PE fibers was 292% where PE fibers have strain to failure at 513%. Tensile properties of soy-PE fibers are comparable to those of pure PE. In-package nonthermal plasma (NTP) technology is a novel technology for the decontamination of foods and biological materials. This study presents the first report on the potential of the technology for the degradation of pesticide residues. A cocktail of pesticides, namely Azoxystrobin, Cyprodinil, Fludioxonil and Pyriproxyfen was tested on strawberries. The concentrations of these pesticides were monitored in priori and post- plasma treatment using GC-MS/MS. An applied voltage and time dependent degradation of the pesticides was observed for treatment voltages of 60, 70 and 80 kV and treatment durations ranging from 1 to 5 min, followed by 24 h in-pack storage. …

En Colombia se sacrifican en promedio tres millones de cabezas de ganado bovino por año, existen diferentes técnicas de proceso y utilización de desechos comestibles de matadero. Los principales centros de sacrificio procesan sus propios desechos, mientras que otros mataderos, venden la mayoría de sus desechos a las plantas de subproductos, o las arrojan a las cañerías provocando problemas ambientales. Esta investigación se realizó con el objetivo de evaluar el comportamiento tecnológico del aislado de proteína de amaranto como extensor sustituto en salchicha tipo Frankfurt usualmente formulada con aislado de proteína de soya. Dielectric barrier discharge atmospheric plasma is a novel non-thermal technology for the food and packaging industry. The effects of dielectric barrier discharge plasma on the surface, structural, thermal and moisture sorption properties of edible zein films have been examined. Plasma treatment increased the surface roughness and equillibrium moisture content of the zein film in a direct relationship with the applied voltage level. No significant difference in the thermal stability of the zein film is also observed after plasma treatment. The use of ultrasound to enhance the transport phenomena in food processes has been well recognised in recent times. The objective of this study was to evaluate the effect of sonication on hydration rate and pasting profile of navy beans. The hydration kinetics for control and ultrasound assisted soaking was mathematically described using mechanistic (Fickian diffusion) and empirical (Peleg’s equation, Weibull model and First Order equation) models.
