Faculty Scholarship and Creative Works
This study investigates the impact of an exogenous and unexpected shock (COVID-19) on the wine tourism business from the winery's perspective. A sample of 146 Portuguese wineries was surveyed. The econometric results show that the share of wine tourism sales, the amount of dependence on exports and the assertiveness of brand recognition have a structural effect on direct-to-consumer tasting room wine sales, even when the winery's business is disrupted by a shock that degrades the dynamics and flows of international trade. The research establishes a starting point that allows to understand the implications of an exogenous shock on the structure …

Student Attitudes And Perceptions Regarding Food Waste At Unh Dining Halls, Alexander Soule
Honors Theses and Capstones
UNH works in the hospitality sector of businesses. Over the years, food waste has grown to become an alarmingly increasing problem for both the environment and businesses operating in the sector. While UNH has many food waste mitigation efforts, there is still an opportunity for both the dining halls and students to work together to help reduce food waste. A survey was performed and analyzed which reveals that many students who frequented the dining halls are willing to better adjust their dining practices to help mitigate food waste. However, this is contingent on the dining halls presenting the information of …

Interviews with individuals in Gen Z were collected in a semi-structured format with open-ended questions. The findings reveal that consumers are now more likely to choose vacation rental homes over other accommodations due to the space and privacy that rental homes provide. As a result of Covid, individuals …

This dissertation analyses the Airbnb market in Orange County, FL to provide insight on the performances of short-term vacation rentals listed on the platform. In the first essay we examine the factors affecting the demand and supply of this real estate sector before and after the Covid-19 pandemic, using occupancy, pricing and revenue models. The results identify the aspects of the Airbnb peer-to-peer sharing model that do and those that do not recover quickly after local covid restrictions are lifted. In particular, host experience, professional management, and proximity to major tourist attractions are some of the key factors that generate …

What Makes Travelers Choose Japan Over Other Destinations: The Application Of Customer-Based Brand Equity Theory And Tourism Xenophilia, Midori Yamazaki
Graduate Thesis and Dissertation 2023-2024
Customer-based brand equity (CBBE) has been extensively applied to examine a variety of travelers' behavioral intentions and tourism destination choices. However, from the perspective of competition among destinations, the use of the overall destination brand equity (ODBE) dimension is still in its experimental stage. The objective of this research is to determine the impact of destination brand awareness (DBA), image (DBI), quality (DBQ), and value (DBV) on ODBE. Specifically, this study focuses on the case of Japan tourism from the view of American travelers. Age Diversity In The Hospitality Workplace, Cass Shum, Ankita Ghosh, Yunxuan (Carrie) Zhang, Yuang-Sheng (Ken) Chiu
Hospitality Faculty Research
Because of the large number of available positions with low-skill requirements and delay of retirement age, the current hospitality workforce is at the peak of age and generational diversity. The current hospitality industry employs employees from four generations, including Baby Boomers, Generation X, Generation Y, and Generation Z. After briefly explaining the difference between age and generation, we first describe generational values and characteristics in this chapter. Next, we critically evaluate the benefits and disadvantages of having age-diverse teams. Finally, we focus on the talent management and leadership needed to manage employees from different generations.

Moderating Effects Of Relationship Length And Contact Frequency On Customer Citizenship Behaviors, Laee Choi, Mi Ran Kim
ICHRIE Research Reports
Studies show that contact frequency and relationship length impact co-creative and in-role behaviors with service providers. However, their influence on extra-role or customer citizenship behaviors (CCBs) remains unexplored. This study delves into the moderating role of relationship length and contact frequency within the CCB model. Utilizing an online survey (n = 665), the study unveils that perceived justice’s impact on affective commitment is not moderated by contact frequency, whereas the impact is stronger in short-term than in longer-term relationships. The perceived support-affective commitment-CCBs relationship is stronger in high contact than in low contact group. Similarly, the relationship is stronger for …

Mergers In The Us Gambling And Horse Racing Industries: What It Means For Local Economic Development And Taxation, Thomas E. Lambert
Faculty and Staff Scholarship
Even before the Covid-19 pandemic, most sectors of the various gambling industries in the United States were showing signs of stagnation. Over the last few years, these industries have seen mergers between horse racing tracks, between horse racing tracks and casinos to form “racinos”, and between casino companies. Many gambling facilities and racetracks have closed and have been sold to developers to be used for other purposes. An industry “shakeout” is occurring, and there appears to be a trend toward greater industry concentration as consumers are showing less and less interest in gambling in general. This has been partially fueled …

Host Perceptions Of Socio-Cultural Impacts Of Volunteer Tourism In Vietnamese Farm Communities, Tuan Nien Tran
Theses, Doctoral
Volunteer tourism has grown significantly, contributing enormous economic, environmental, and socio-cultural impacts to host communities over 20 years (Aquino & Andereck, 2018; Lee & Zhang, 2019; Olsen et al., 2021). The academic literature lacks an agreed framework to understand the socio-cultural impacts (Zamani-Farahani & Musa, 2012). The aim of this study is to provide an in-depth understanding of the socio-cultural impacts of volunteer tourism in Vietnamese farms on the host communities. Drawing on the multiple forms of capital perspectives and theoretical …

An analytical review of the literature on the effect of the Blue Flag eco-label on tourism demand reveals clear divergences. Certain free sources provide valuable panel data to study trends over time in Blue Flag awards to beaches, on one side, and the demand for accommodation in bathing season, on the other. These data also serve as a basis for the construction of correlation models, such as the simple approach tested here in a representative territory of sun&beach tourism, on the south and east coasts of Spain. As a result, these two variables follow a similar trend, and the Blue …
