A Multi-Method Analysis Of Diversity, Equity, And Inclusion Websites Of Fortune 500 Agricultural And Food Companies, Garrett M. Steede, Rebecca Swenson, Troy Mckay
Journal of Applied Communications
Each year, Fortune magazine publishes a list of the 500 largest corporations in the United States of America based on total revenue in the previous fiscal year. As successful companies, these organizations must prioritize diversity, equity, and inclusion (DEI) for a multitude of reasons. The purpose of this study was to determine how agricultural and food companies on the 2021 Fortune 500 list demonstrated a commitment to DEI efforts on their corporate websites. Thus, we analyzed the DEI website of each food and agricultural company listed on the 2021 Fortune 500 list. Quantitatively, most websites only required two clicks to …

Pollution Status And Research Progress On The Detection Technology Of Alternaria Mycotoxins In Foods, Wang Xia, Feng Dong-Sheng, Tong Jin-Rong, Gao Meng-Feng, Zhang Wei-Yi
Food and Machinery
Alternaria mycotoxins are the secondary metabolites of Alternaria species, which have obvious toxicity (mutagenicity, teratogenicity and carcinogenicity, etc) to humans and animals. Alternariol (AOH), alternariol monomethyl ether (AME), alternuene (ALT), tenuazonic acid (TeA) and tenoxin (TEN) are the most studied at present. Alternaria mycotoxins was reported in apples, orange, tomatoes, corns and other agricultural products. Eating these foods contaminated by Alternaria mycotoxins will cause serious harm to human health. In this paper, the pollution status and the detection technology of Alternaria mycotoxins were summarized, and the future research direction of Alternaria mycotoxins was prospected. The purpose was to provide …

The Influence Of Nutrition On The Gut Microbiota And Psychiatric Disorders: A Review, Megha Bhagavan, Francis Jenney
The Influence Of Nutrition On The Gut Microbiota And Psychiatric Disorders: A Review, Megha Bhagavan, Francis Jenney
Research Day
The symbiotic harboring of gut microorganisms within the gastrointestinal tract has a profound influence on host physiology, well-being, and disease pathology. More specifically, the gut bacteria are able to interact with dietary components from foods chosen by the host and consequently relay their beneficial or precarious effects locally and systemically. The gut bacteria have the capacity to maintain a healthy gut microbiome or perpetuate intestinal imbalance, known as gut dysbiosis. Gut dysbiosis has both local effects in gastrointestinal pathologies, such as intestinal bowel syndrome (IBS) and intestinal bowel disorder (IBD), as well as systemic pathologies, such as type II diabetes, …
Cenabis Bene: A Culinary Odyssey Through Apicius, Kathryn Atkinson
Cenabis Bene: A Culinary Odyssey Through Apicius, Kathryn Atkinson
University Scholar Projects
Apicius is the sole surviving cookbook from classical antiquity; as such it is invaluable for what it tells us about ancient feasting customs. Yet the gluttony typically associated with classical antiquity has no place in Apicius beyond the art that is inherently associated with food; we are not so much given a seat at the cena (dinner) as we are led into the kitchen, handed an apron, and instructed to cook. This critical analysis explores each recipe not only on the surface—i.e., examining the ingredients and recreating selected recipes—but also on a deeper level, lifting food above its concrete reality …

The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
The Impact Of Nutrition On The Mental And Physical Health Of Young Adults, Dareena El-Far
WRIT: Journal of First-Year Writing
Upon close examination by nutritional professionals, concern has arisen regarding the typical contents of a young adult diet. In terms of the rate at which young adults choose to consume nutritionally-dense food items, the rate at which nutrition-deficient junk food items are chosen over the former is significantly higher. Among further examinations of this issue by researchers, it has become evident that the nutritional decisions made by young adults are increasingly associated with several social, commercial, mental, educational, and economic influences. As a consequence of these factors, research has uncovered a connection between the consumption of a poor diet and …

Novel Approaches For Preventing Lipid Oxidation In Emulsion-Based Food Systems, Mitchell D. Culler
Novel Approaches For Preventing Lipid Oxidation In Emulsion-Based Food Systems, Mitchell D. Culler
Doctoral Dissertations
Consumer interest in “clean” labels has continued to be a key driver of consumer behavior and purchasing habits over the past decade. Food manufacturers are therefore eager to replace synthetic antioxidants such as ethylenediaminetetraacetic acid (EDTA) with natural alternatives, however alternative chelators that will bind iron at low pH remain elusive. Coupled with the current oil shortages and supply chain challenges that have arisen recently, there is an urgent need for innovative solutions to increase the oxidative stability of edible oils. One available strategy is diluting oils high in unsaturated fatty acids into more stable, more saturated oils, thus delaying …

Influence Of Temperature On Passage Rate In Sceloporus Consobrinus, With Comparison To Congeners, Allison Litmer
Influence Of Temperature On Passage Rate In Sceloporus Consobrinus, With Comparison To Congeners, Allison Litmer
Arkansas Women in STEM Conference
Variation in energy acquisition, genetics, and environment determine life history traits among individuals, populations, and species. Therefore, influence of climate change may differ by population or even individual. Sceloporus lizards are used as model organisms for thermal biology, and climate modeling. However, it is often assumed that locally-measured thermal and bioenergetic responses apply among broadly similar species, and throughout intraspecific geographic range. The objective of this project was twofold: 1) to quantify the influence of temperature on passage rate in Sceloporus consobrinus from Arkansas, and 2) compare the influence of temperature on passage rate between S. consobrinus, and published …

The Relationship Between Food Retailers And Distributors, Madison Seigler, Julia Anderson, Aidan Morton, Cassandra Williams, Victoria Bloomgren, Jacob Tutty
Undergraduate Theses, Professional Papers, and Capstone Artifacts
Our understanding of the science of anthropogenic climate change and its immediate and indirect impacts has grown within the last decade.Alongside anincrease in concern for the inequities within the industrialized food system, climate change is impacting agriculture and the communities that depend on it in myriad ways. These challenges have catalyzed investment in sustainable agriculture, “eat local” food movements, and rethinking of all aspects of food systems, including consumers, producers, retailers, and distributors. The body of literature on food systems primarily focuses on the connection between consumers and retailers; however, there is a notable absence of literature on the relationships …
