Measuring Food Literacy Among Limited-Resourced Adults, Emelia Clement

Food literacy is the interrelated knowledge, skills and behaviors needed to plan and manage, select, prepare, and eat healthy food. It is positively associated with improved consumption of nutritious diets, and can be beneficial to limited-resource adults, who are often at risk for chronic diet-related diseases. Valid instruments for measuring food literacy in this population are scarce but urgently needed. The Eating and Food Literacy Behavior Questionnaire (EFLBQ) can be used to measure food literacy among limited-resource audiences.

Whole and fresh-cut produce are minimally processed and, therefore susceptible to microbial contamination. This study examined the survival or growth of Listeria monocytogenes on whole, and fresh-cut produce at different storage temperatures. Fresh fruits (cantaloupes, pears, pineapples, papayas, and watermelon) and vegetables (broccoli, cauliflower, lettuce, kale, and green bell peppers) were cut into 25 g pieces and were spot inoculated with 0.5 mL (8 Log CFU/mL) of Listeria monocytogenes. Use of pesticide has become part of modern day agricultural practice. Some pesticides can remain in the environment for decades and contaminate surface water that is used for irrigation of produce. Two studies were conducted- first to examine possible pesticide residue in surface water and some fruits, vegetables and cereals in Louisiana; and second was to alleviate possible pesticide residues in the water using zeolite filtration. As a leading cause of foodborne illnesses and outbreaks, Salmonella poses a major public health risk in the United States and worldwide. Various food commodities including meat and poultry, eggs, and fresh produce can serve as the transmission vehicles for Salmonella infections. To better ensure the safety of these products and protect public health, rapid, accurate, and reliable detection methods for Salmonella are needed. Molecular-based methods like loop-mediated isothermal amplification (LAMP), have gained wide applications in Salmonella detection, owning to their rapidity, specificity, and sensitivity.
