New Roots Community Farm (NRCF) came to life through the purchase of a piece of land by the Fayette County Farmland Protection Board in a buy-protect-sell model. NRCF then partnered with The Agrarian Land Trust, a New England based organization experimenting with land commons models across the United States, to purchase the property and create the West Virginia Agrarian Commons (WVAC), an entity that could advance land access for the next generation farmers in WV. Italy has become a common “landing country” for many European and Asian immigrants, creating a perception of invasion that has led to cultural reactionism masked in the reinforcement of “traditional cuisine.” For so-called traditional foods to endure, they must continually be reinvented, bearing different meanings and social values throughout time and space while accumulating rich, cultural baggage that serves as a powerful marker of identity in a given society. Each year, Fortune magazine publishes a list of the 500 largest corporations in the United States of America based on total revenue in the previous fiscal year. As successful companies, these organizations must prioritize diversity, equity, and inclusion (DEI) for a multitude of reasons. The purpose of this study was to determine how agricultural and food companies on the 2021 Fortune 500 list demonstrated a commitment to DEI efforts on their corporate websites. Apicius is the sole surviving cookbook from classical antiquity; as such it is invaluable for what it tells us about ancient feasting customs. Yet the gluttony typically associated with classical antiquity has no place in Apicius beyond the art that is inherently associated with food; we are not so much given a seat at the cena (dinner) as we are led into the kitchen, handed an apron, and instructed to cook. BACKGROUND: Food prescription programs are gaining interest from funders, policy makers, and healthcare payers as a way to provide value-based care. A small body of research suggests that such programs effectively impact health outcomes; however, the quality of existing studies is variable, and most studies use small samples. This study attempts to address these gaps by utilizing a quasi-experimental design with non-equivalent controls, to evaluate clinical outcomes among participants enrolled in a food prescription program implemented at scale.

This research aims to find some strategies to mitigate these damages through diet by specifically targeting adolescents because they are potential problem-solvers. Local cuisine is an important element in the destination selection of tourists. In this study, the place of local dishes in the menus of restaurant businesses was examined. Semi-structured interviews were conducted with hotel and restaurant business managers and chefs in Denizli. As a result of this study, it is seen that businesses partially include local dishes in their menus, and businesses take into account profitability, price, value and customers' taste while determining their menus. Economic insecurity exists whenever income sources are uncertain, and this is a failure of a fundamental human right. The Covid-19 pandemic has presented unprecedented disruptions to the US economy and has created unparalleled food insufficiency and economic hardships. Before the pandemic, household food insufficiency existed but downplayed in the political arena. In 2019, 10.5 percent of households in the US lived in extreme poverty and were food insecure, the lowest since 1959, but the pandemic has had devastating effects on household food insufficiency. Market Trends In Food Consumption Expenditures Away From Home Prior To The Covid-19 Pandemic, Rebecca Weir

U.S. food consumption expenditures away from home increased from 19 percent of total food expenditures in 1955 to 48 percent in 2015. Simultaneously, female participation in the labor force grew by 52.7 million women from 35 to 57 percent, signifying increased opportunity cost for women to prepare meals at home. This research uses an ordinary least squares regression to examine socioeconomic factors influencing the rise in U.S. food consumption expenditures away from home in 2018. Results inform food production and service industries’ marketing strategies, and set the stage for whether a new pattern emerges in response to the COVID-19 pandemic.

The community gardens have given people an opportunity to reach new standards for themselves. As the prevalence of food allergies continues to grow, college students with diagnosed food allergies are having difficulty finding allergen friendly foods in college campus food service (Food Allergy Research & Education, 2014). A curvilinear relationship exists between physical activity (PA) and dietary energy intake (EI), which is reduced in moderately active when compared to inactive and highly active individuals, but the impact of PA on eating patterns remains poorly understood. Our goal was to establish the relationship between PA and intake of foods with varying energy and nutrient density. Data from the 2009–2010 United States National Health and Nutrition Examination Survey were used to include a Dietary Screener Questionnaire for estimated intakes of added sugar, fruits and vegetables, whole grains, fiber, and dairy. Okja is a fictional Netflix original film that was released in 2017. Okja features a “super pig” that is owned by the large, agricultural company Mirando Corporation. Okja is raised by a young girl, Mija, and her grandfather in the South Korean mountains. The film climaxes when Mija and the Animal Liberation Front (ALF) narrowly save Okja and a smuggled piglet from the slaughter process. This article presents a pedagogical approach to teaching technical and professional writing with an eye toward cultivating awareness and generating informed research among undergraduate students about food production and its various, intricate networks between Big Ag and campus cafeterias. Our pedagogy, influenced by interdisciplinary content, is designed to teach students to differentiate between food processes—such as production versus distribution and consumption—by viewing these networks as communicative practices rather than as inevitable chains or simple functions of one another. iven the violence, objectification, domination, commodification, and oppression inherent in industrialized food production, some conscientious consumers have adopted vegan practices. This chapter discusses two conceptions of veganism, lifestyle/identity veganism, VI, and veganism as a goal/aspiration, VA. It argues that due to conceptual and practical flaws with VI, conscientious consumers should adopt VA. It considers and rejects the so-called compassionate carnivore movement. It then explores arguments denying the casual efficacy of adopting any form of veganism. It concludes that VA can make a difference, and those in consumer cultures are obligated to adopt and practice it.

I explore the various health claims made in the ads as well as a report Brown featured on his website that claimed consumption of cow’s milk is linked to longevity. I discuss how dairy consumption is largely linked to race and ethnicity. It is a practice enjoyed primarily by European whites as most nonwhites are lactose intolerant.
