Terrorist attacks against food and water supplies (agro-terrorism) are a national security threat due to the assessed fear, economic instability, and social instability that could occur following a food shortage. Findings indicate that a comprehensive response plan does not exist and perceived fears and the lack of knowledge in a society with high social capital can still create conditions for chaos and anomie.

Food insecurity is defined as the limited or uncertain availability of nutritionally adequate and safe foods. It can also be defined as the limited or uncertain ability to acquire acceptable foods in socially acceptable ways. Previous research has observed that food insecurity can disrupt optimal development throughout the life cycle. A growing body of literature has documented the effects of food insecurity on cognitive, academic, and psychosocial development among college students. These studies consistently observed that food insecurity is associated with lower academic performance, poor health, and decreased psychosocial function. This collection of essays examines the impact of two antecedents of household food consumption: SNAP and habit formation to nutrients. Household food choice invariably plays a substantial role in health outcomes such as obesity. Low-income households may be especially vulnerable to obesity as they face a more restricted set of food choices due to income constraints and may have less information on healthy eating relative to high-income households. This dissertation unravels this dynamic by providing causal estimates of the effect of two major determinants of food choice.

Forests play a pivotal role in Kentucky’s economy and in the lives of the citizens of our state. Forests are the single most dominant land type, covering nearly one-half of the state, providing a significant range of both economic and non-economic benefits to the Commonwealth. The majority of the economic contribution is derived from the harvesting of timber and processing of the wood resource. Analysis of Kentucky’s forest and wood industries in 2016 indicated an estimated direct economic contribution of $9 billion (down one percent from 2015). In this thesis, I focus on two tensions within the alternative agro-food movement. First is a question of who/what community is allowed to define food systems problems and then implement solutions. For example, food desert metaphors rely discursively on defining communities as being “without”, which perpetuates needs-based narratives, in which only professional “experts” know how to solve problems of food access. These representations ignore the creativity, agency, and resiliency of everyday food justice mobilizations happening at the grassroots level. This dissertation examines organic food marketing from three aspects: household demand for organic food, household choice of retail formats accounting for preference organic food preference, and farmers’ joint adoption of organic farming and direct marketing methods. In Chapter Two, given the fast growth of private label milk and organic milk in the U.S., we estimate a censored demand system to study the demand relations among types of milk differentiated by brand types and organic status, using recent Nielsen Homescan data. This research quantifies risk reduction and performance of the producer accumulator contract in corn and soybean markets. To quantify performance, we use three alternative theoretical pricing models to estimate historical producer accumulator contract specifications in corn and soybean markets. We then compare the performance of the producer accumulator to eight alternative agricultural marketing strategy portfolios that are also used in new generation grain contracts. The performance measures we compare are: average bushel price that would be received by the producer, daily portfolio risk, and the Sharpe ratio. The loss of nitrogen fertilizer into the atmosphere and waterways is of increasing concern for citizens and policy makers. This is particularly relevant for hypoxia in rivers, lakes, and oceans, but also relevant for policy makers in reducing the increasing concentration of greenhouse gases (GHG) in the atmosphere. GHGs trap heat in the atmosphere and include: carbon dioxide, methane, nitrous oxide and fluorinated gases. Overall, the estimated contribution from the agricultural sector to GHG emissions was 9% in 2013 (EPA, 2013). This dissertation examines how confusion and lack of access to information about subsurface property rights facilitates the rapid acquisition of mineral rights by mining interests, leaving those who live 'above the surface' to contend with complicated corporate and bureaucratic apparatuses. The research focuses on the first proposed state-run large scale mining project in Ecuador, believed to contain copper ores, and on the natural gas hydrofracking industry in three counties in north central West Virginia. The phenomenon of low economic growth in resource-rich regions is recognized as the “resource curse”. These essays will contribute to an understanding of the regional resource-growth relation within a nation.

Essay one tests the resource curse hypothesis at the U.S. state level. With a system of equations model, I decompose the overall resource effect to account for the two leading explanations — crowding-out and institution effects, thus investigate whether the institutions mediate the crowding-out effects. This dissertation studies agricultural input intensification, defined as the increased use of modern inputs such as hybrid seeds, mineral fertilizer, herbicide, and pesticide in African agriculture. It also analyses the potential of this intensification to accelerate productivity growth and tests the effectiveness of two policies, input subsidies and land reforms, in promoting it and consequently in increasing crop yield. In the first essay, we argue that to create the conditions for the emergence of a green revolution in Africa, modern agricultural technologies have to be adopted as a package, not in a piecemeal fashion. This study examined The Margin Protection Program for Dairy’s impact on the “effective margins” or margins realized by dairy producers in various regions. Each selected margin and percentage of production history offered by the national policy was analyzed in a forecasting, national and regional manner. Couplet margins were simulated for fifteen regions from 2017 through 2020. Five scenarios were analyzed for the change in MPP’s effects under a 15%, 10%, and 5% drop in the price of milk as well as a 50% increase in the price of corn and a scenario where milk decreases 15% while corn prices simultaneously …

Repurposing vacant land for food production is expanding as a response to urban blight, food insecurity and food deserts. As municipalities integrate urban agriculture in their sustainability plans and zoning regulations, scholars are beginning to take a broader look at the benefits from this and other types of greening strategies. This article investigates current state of research and practice of urban agriculture as an emerging strategy for regenerating shrinking cities. It highlights key findings while offering observations on how public officials and practitioners can leverage this research to enhance urban agriculture as a treatment for vacant land.

This paper examines and synchronizes the thoughts put forth by American social critic and author James Howard Kunstler in his four books, The Geography of Nowhere, Home from Nowhere, The City in Mind, and The Long Emergency. Kunstler asserts that human beings are losing their sense of being while simultaneously facilitating daily life, thus leaving a world rife with nothingness. A large portion of Kunstler’s argument deals with how humans have knowingly increased suburban sprawl while depleting valuable resources; such activity, left unchecked, will worsen the state of the world. Changes within and outside of agricultural education were analyzed between 2009-2014 which coincided with a reduction of male pre-service agricultural teachers. Under the lens of the Theory of Gender Re-alignment, special attention was given to changes in legislation, curriculum, recruitment, and economic factors which relate to structural and cultural changes within agricultural education. The Changes identified in this study explain why male students are being outperformed by female students at a two to one ratio in regards to agricultural education degrees obtained.

Livestock are an important component of rural households and gendered livelihood practices throughout sub-Saharan Africa. Widespread within the development literature is the belief in the livestock ladder, with poorer households often owning small stock and wealthier households owning large stock, with the assumption that poor households can utilize livestock to build their asset base and overtime this would allow poorer households to expand from small stock to large stock, in so doing climb the livestock ladder.
