Research has shown that acute supplementation with dietary nitrate will increase the amount of circulating nitrate, boosting NO bioavailability via the nitrate-nitrite-NO pathway, providing enhanced vasodilation. There are limited dietary nitrate studies including young, healthy female participants. The purpose of this study was to investigate the influence of acute dietary nitrate, via beet root juice (BRJ) supplementation, on resting heart rate and blood pressure in young, healthy women. A total of 11 women (aged 18-22) performed a repeated-measures, placebo-controlled, counter-balanced, crossover design investigated the impact of dietary nitrate on the cardiovascular system’s resting measurements after one hour. Postmenopausal women commonly experience declines in sleep quality, mood, and overall wellbeing, with limited non-pharmacological options available to address these concerns. This randomized controlled trial investigated whether daily beef consumption as part of a higher-protein diet could improve sleep, mood, and quality of life over four weeks. Participants were randomized to either a standard protein intake control group or a treatment group consuming a high-protein diet with daily lean beef.

The treatment group showed modest improvements in subjective sleep quality and perceived health compared to controls, although these changes were not statistically significant. Fatigue, however, significantly decreased in the treatment …

Neonatal calf health is an important factor in the productivity and profitability in the beef cattle industry, influencing preweaning survival, growth, and long-term performance. The overall objective of this thesis is to characterize risk factors that contribute to health issues in young beef calves. The first objective is to review literature exploring the environmental factors affecting preweaning morbidity and mortality, including hypothermia, precipitation, and wind. Nutrition plays a vital role in early childhood, where rapid growth and development occur. This study investigates Early Interventionists’ (EIs) nutrition knowledge and perceptions of nutrition-related concerns in children receiving services through the Tennessee Early Intervention System (TEIS). An electronic survey was distributed to EIs in Tennessee to assess their nutrition knowledge and perceptions and to identify nutrition concerns. Findings revealed that most EIs have never received any nutrition education, despite being asked for nutrition guidance by families and being open to nutrition-related training. In chocolate-coated products, oil migration in fats can lead to chocolate softening, filling hardening, discoloration, and lower consumer acceptance. This study examined three different fats (soy- palm-, and palm-kernel (PK) based), crystallized under different conditions (cooling rate and use of high intensity ultrasound (HIU)) to examine how the crystallization conditions impact the physical properties of confectionery products. These conditions produced fats with high and low oil binding capacities (OBCs); the ability of crystal networks to entrap liquid oil. The USDA’s Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) aims to address this by improving the nutrition of low-income pregnant women and children. However, immigrants and refugees, who are particularly vulnerable to food insecurity, often encounter barriers to accessing WIC benefits. This study aimed to: i) evaluate how immigrant and refugee families in Utah utilize WIC benefits, and ii) explore their experiences, challenges, and suggestions for improving the program. OBJECTIVES: School food can have a profound effect on the population’s health. Thirty million children receive food at school and consume half their daily calorie intake at school. Competitive foods are foods sold outside of school breakfast and lunch, such as those sold in vending machines. A new ruling for Smart Snacks Standards, a set of competitive food guidelines, started in the school year 2014-2015. The typical modern diet is brimming with food additives used in food processing. Additives such as antibiotic residues, GMOs, pesticide residues, anti-caking agents, emulsifiers, artificial sweeteners, colorants, flavor enhancers, and preservatives. Most of these additives seem to shift the gut microbiome towards more pro-inflammatory signals. When all these additives are considered as an amalgam, such as with the modern processed diet, the ramifications on the gut microbiome are concerning. Obesity, which is characterized by low-level chronic inflammation, is likely exacerbated by these food additives. Consequently, most of these additives should be avoided or banned for optimal health.

We investigated the impact of protein source in a western-style diet on colon cancer, colitis, and the gut microbiome. The Western dietary pattern is energy-dense, low in fiber, and has a sub-optimal micronutrient profile. Our group has formulated the Total Western Diet (TWD) that emulates the Western dietary pattern using survey data (NHANES), and we have demonstrated that this diet increases gut inflammation and colorectal cancer relative to a healthy control diet (AIN-93G), which is optimized for mouse health. However, the effect of protein source in the TWD and its effects on gut health have yet to be investigated.

The hypothalamic leptin-proopiomelanocortin (POMC) pathway is critical for regulating metabolism. POMC neurons in the arcuate nucleus respond to leptin and play a pivotal role in mediating energy and glucose balance. However, during diet-induced obesity (DIO), these neurons often develop resistance to exogenous leptin. Recently, the small GTPase Rap1 has been implicated as an inhibitor of neuronal leptin signaling; however, its specific role within POMC neurons remains unexplored. We generated tamoxifen-inducible, POMC neuron-specific Rap1 knockout mice to selectively delete both Rap1a and Rap1b isoforms in POMC neurons. Vector-borne diseases, including Zika virus (ZIKV), Dengue virus (DENV), and West Nile virus (WNV), pose considerable global health threats, accounting for over 400 million infections and more than 700,000 deaths annually. Many vector-borne diseases are within the Flaviviridae family. Despite this, effective treatments have not been found for some flaviviruses. Flaviviruses exploit host cellular machinery to facilitate their replication and survival, reprogramming metabolic pathways, including lipid metabolism. Lipids play essential roles in the viral life cycle, providing structural components for the viral envelope, enabling membrane rearrangements for replication complexes, and supplying energy resources necessary for particle assembly.

Two Sweet Bran products were evaluated at 13%, 18%, and 23% inclusion of the diet on total tract digestibility and rumen fermentation parameters. Seven ruminally cannulated, heifers were used in a 6 x 7 row-column design with 21-d periods consisting of 16-d adaptation period followed by a 5-d collection. Dietary treatments were designed in a 2 x 3 factorial arrangement with 6 periods.
