Further investigations of almond degradation under typical industrial storage conditions from a quantitative perspective are warranted. This study modeled effects of packaging, temperature (TEMP), relative humidity (RH) and roasting on chemical attributes of almonds stored according to common industry practices throughout 16 months. Roasted samples were stored in high-barrier bags (HBB) or polypropylene bags (PPB) at multiple combinations of TEMP and RH. Raw samples were held in unlined cardboard cartons (UC) or PPB under the same conditions. Almonds were assessed bimonthly for oxidation products, free fatty acids, moisture content and water activity. Results indicated roasting almonds improved quality preservation. Models …

Zellweger spectrum disorders (ZSDs) are rare, debilitating genetic diseases of peroxisome biogenesis that require constant management and lifelong care. Nevertheless, the experience of family caregivers for children diagnosed with ZSD is not well understood. In this study, we sought to characterize the emotional experience of ZSD family caregivers. Three 90-min focus groups were conducted with thirty-seven parents (25 mothers and 12 fathers) of children with ZSD during a family advocacy conference. Focus groups were arranged by age of proband (Group 1: 0–4 years, Group 2: 5–10 years, Group 3: >11 years). Audio recordings of focus groups were transcribed and analyzed …

Aim Undergraduate nutrition and dietetics students need to develop research skills and professional competencies to identify evidence-based nutrition and food studies research. Research skills are essential for student success in dietetic internships, graduate school, and future professional practice as nutrition and dietetics professionals. In a collaborative effort to improve student research skills, teaching faculty, the program director, and the liaison librarian developed a series of research skills one-shot sessions for an accredited undergraduate program in Foods and Nutrition at a public liberal arts college. Using a scaffolded approach, the library sessions were designed to help students build research skills essential …

Master's Theses
The prevalence of non-alcoholic fatty liver disease (NAFLD) in children has increased over the past decades, creating a need for animal models that recapitulate the features of the pediatric disease. Iberian pigs have a leptin-resistant phenotype characterized by hyperleptinemia, hyperphagia, and extreme adipogenesis. We hypothesized that neonatal Iberian pigs fed a high fat high-fructose (HFF) diet will develop a pattern of liver injury resembling pediatric NAFLD. In addition, we sought to determine if a mixture of probiotics would prevent the disease. Animals were fed 1 of 4 diets containing (g/kg body weight × d) 0 g fructose, 11 g fat …

Electronic Theses, Projects, and Dissertations
Objective: Food insecurity among South Asians in the US is a public health issue. Food insecure adults face a plethora of adverse outcomes and research shows that individuals with ancestral origins from South Asia have a higher susceptibility rate for cardiovascular disease after migrating to urban environments. As such, the goal of this study was to research possible barriers South Asians face when creating cultural dishes in the US.
Methods: This was a convergent parallel mixed-methods analysis to understand how South Asians feel about food insecurity. Pricing and availability of cultural food items were obtained from South Asian and Western …

Strawberries And Gut Health In Postmenopausal Women, Morgan T. Macneill
Master's Theses
The gut microbiota has been implicated in both health and disease. As such, diet is a significant determinant of gut health, whereby diet induced dysbiosis is associated with cardiometabolic risk. Interestingly, a higher proportion of Firmicutes and a lower proportion of Bacteroidetes are implicated in obesity. Strawberry polyphenols have been shown to reduce cardiovascular disease risk in addition to exhibiting prebiotic activity by increasing probiotic bacteria in the gut. Polyphenols have also been shown to reduce the ratio of Firmicutes to Bacteroidetes. Therefore, dietary modifications such as strawberry consumption may help improve health outcomes through the gut. The objective of …
