Association Between Breastfeeding And Child Stunting In Mexico, Ana Paola Campos, Mireya Vilar-Compte, Summer Sherburne Hawkins 2020 Boston College

Association Between Breastfeeding And Child Stunting In Mexico, Ana Paola Campos, Mireya Vilar-Compte, Summer Sherburne Hawkins

Department of Public Health Scholarship and Creative Works

Background: Globally, the prevalence of child stunting has been decreasing over the past decades. How-ever, in low-and middle-income countries such as Mexico, stunting is still the most prevalent form of undernutrition affecting a large number of children in the most vulnerable conditions. Breastfeeding has been identified as one of the key affordable and modifiable maternal health behaviors protecting against child stunting. Objective: To examine the association between breastfeeding (defined as never breastfed, any breast-feeding for <6 months, and any breastfeeding for ≥6 months) and other individual-, household-, and area-level factors with child stunting (defined as length/height-for-age-z-score for sex under –2 standard deviations of the World Health Organization child growth standards’ median) in Mexico. Methods: Secondary data analysis using the 2012 Mexican Health and Nutrition Survey, which allowed representativeness of rural and urban areas at national level and among 4 regions in Mexico. Our subset included data on 2,089 singleton Mexican children aged 6–35 months with information on previously identified risk and protective factors for stunting. We conducted fixed-and mixed-effects logistic regression models sequentially controlling for each level of factors. Findings: Overall, 12.3% of children were stunted and 71.1% were breastfed for ≥6 months. Any breast-feeding and being female were consistent protective factors against child stunting across all models. In contrast, child low birthweight, maternal short stature, higher number of children aged <5 years per household, and moderate to severe food insecurity were consistent risk factors for child stunting across all models. Conclusions: According to our findings, efforts to reduce child stunting in Mexico should include prenatal strategies aiming to prevent low birthweight offspring particularly among short-stature women, moderate to severe food insecure households, families with a higher number of children aged <5 years, and indigenous communities. Postnatal components should include multilevel strategies to support breastfeeding.

The Impact Of Nutrition Education On Serving Size Comprehension In College-Age Female Students, Carisa Hilton

CSB and SJU Distinguished Thesis

Background: Nutrition Facts labels are a low-cost informational tool with the potential for encouraging healthful purchasing and eating habits. The use of nutrition labels on packaged foods can promote healthier dietary choices; however, systematic reviews show that consumers may not frequently use nutrition labels to make food choices and do not effectively measure an appropriate serving size, leading to nutrient over-/underconsumption. Objective: The goal of this study was to investigate how female college students use the Nutrition Facts label and measurement tools to estimate one recommended serving size, and if varying nutrition education tools improve serving size accuracy …

Intervention To Influence Healthy Eating Habits Among Dominican University Students: An Examination Of Eating Habits, Kathy Le

Global Public Health | Senior Theses

Food insecurity among college students has become an issue among many universities nationwide. Campus food pantries emerged to combat this problem by providing students with a diverse selection of fresh foods. Most universities are in the pilot process of their food pantries and not many studies have been done to examine the use of healthy ingredients among students. This study included 23 eligible participants who filled out pre- and post-intervention surveys as well as visited the pantry at least once during the intervention stage. The intervention was recipe posters based on the number of ingredients included, difficulty, total preparation and …

Dietetics and Human Nutrition Faculty Publications

Learning experiences within the dietetics and human nutrition undergraduate curricula develop knowledge and skills pertinent to student career goals. Core competency requirements are extensively assessed in these programs, yet the communication of transferable skills gained and student professional readiness are rarely examined. The purpose of this study was to evaluate undergraduate students' perceived professional readiness following six professional development workshops on transferable skills and career preparedness communicated through resumes and personal statements. In this pilot study, twelve upper-level dietetics and human nutrition students self-assessed their resumes and personal statements with rubrics and completed surveys before and after the intervention. Following …

Influence Of Maternal Eating Attitudes, Behaviors, And Fat Talk On Adolescent, Non-Elite, Competitive-Level Gymnasts, Madisyn Rozner

Graduate Research Theses & Dissertations

Adverse eating attitudes and eating behaviors describe thoughts and actions related to food and body image that increase risk for development for an eating disorder. The term, “fat talk” was defined as, “cultural meanings of talk about weight” and has been used to assess preoccupation with the cultural stigma of weight. Understanding risk factors for the development of adverse thoughts and actions in adolescence is especially important, as disordered cognitions and behaviors often appear in early adolescence. Maternal modeling, children modeling their actions or attitudes based on their mothers, plays a role in the level of risk. Similarly, gymnastics, an …
