A Cross-Sectional Study Of Us Rural Adults’ Consumption Of Fruits And Vegetables: Do They Consume At Least Five Servings Daily?, M. Nawal Lutfiyya, Linda F. Chang, Martin S. Lipsky

Community Health Faculty Publications and Presentations

Background: Rural residents are increasingly identified as being at greater risk for health disparities. These inequities may be related to health behaviors such as adequate fruits and vegetable consumption. There is little national-level population-based research about the prevalence of fruit and vegetable consumption by US rural population adults. The objective of this study was to examine the prevalence differences between US rural and non-rural adults in consuming at least five daily servings of combined fruits and vegetables.

Methods: Cross-sectional analysis of weighted 2009 Behavioral Risk Factor Surveillance Survey (BRFSS) data using bivariate and multivariate techniques. 52,259,789 US adults were identified …

Impact Of Nutrition Education In High School Students, Leticia Cortez

Open Access Theses & Dissertations

The diet of adolescents is typically high in calories, fat, and saturated fat and often fails to meet the daily recommended amounts of fruits, vegetables, and calcium-rich foods. The frequent consumption of unhealthy diets in combination with the lack of physical activity has resulted in a high prevalence of obesity worldwide. Approximately 17% of adolescents in the United States are obese. Obesity is a common risk factor for the development of chronic disease such as heart disease and diabetes. In the last few decades and along with a high prevalence of obesity there has also been an increased prevalence of …

Department of Nutrition and Health Sciences: Faculty Publications

The retinoic acid receptor-related orphan receptor α (RORα) is a member of the nuclear receptor superfamily of transcription factors that plays an important role in regulation of the circadian rhythm and metabolism. Mice lacking a functional RORα display a range of metabolic abnormalities including decreased serum cholesterol and plasma triglycerides. Citrate synthase (CS) is a key enzyme of the citric acid cycle that provides energy for cellular function. Additionally, CS plays a critical role in providing citrate derived acetyl-CoA for lipogenesis and cholesterologenesis. Here, we identified a functional RORα response element (RORE) in the promoter of the CS gene. ChIP …

Department of Nutrition and Health Sciences: Faculty Publications

Activation of p53 function leading to cell-cycle arrest and/or apoptosis is a promising strategy for development of anticancer therapeutic agents. Here, we describe a novel mechanism for stabilization of p53 protein expression via activation of the orphan nuclear receptor, RORa. We demonstrate that treatment of cancer cells with a newly described synthetic ROR agonist, SR1078, leads to p53 stabilization and induction of apoptosis. These data suggest that synthetic ROR agonists may hold utility in the treatment of cancer.

Mutations of comparative gene identification 58 (CGI-58) in humans cause Chanarin-Dorfman syndrome, a rare autosomal recessive disease in which excess triacylglycerol (TAG) accumulates in multiple tissues. CGI-58 recently has been ascribed two distinct biochemical activities, including coactivation of adipose triglyceride lipase and acylation of lysophosphatidic acid (LPA). It is noteworthy that both the substrate (LPA) and the product (phosphatidic acid) of the LPA acyltransferase reaction are wellknown signaling lipids. Therefore, we hypothesized that CGI-58 is involved in generating lipid mediators that regulate TAG metabolism and insulin sensitivity. Here, we show that CGI-58 is required for the generation of signaling lipids …

Glycerol is prohibited as an ergogenic aid by the World Anti-Doping Agency (WADA) due to the potential for its plasma expansion properties to have masking effects. However, the scientific basis of the inclusion of Gly as a “masking agent” remains inconclusive. The purpose of this study was to determine the effects of a hyperhydrating supplement containing Gly on doping-relevant blood parameters. Nine trained males ingested a hyperhydrating mixture twice per day for 7 days containing 1.0 g·kg−1 body mass (BM) of Gly, 10.0 g of creatine and 75.0 g of glucose. Blood samples were collected and total hemoglobin (Hb) …

The Food Pantry Dilemma: Understanding The Need For Nutritional Value In Emergency Food Provided In A Down Economy, Amy Anderson 2012 Bridgewater State University

The Food Pantry Dilemma: Understanding The Need For Nutritional Value In Emergency Food Provided In A Down Economy, Amy Anderson

Undergraduate Review

The purpose of this project was to determine if there are viable nutritional options available to the patrons of suburban food pantries located in Norton, Easton and Bridgewater, Massachusetts. The goal was to establish the existing practices of the pantries, how the food received is utilized, the needs of the patrons, and how corporate establishments work in conjunction with the food pantries. Providing nutritional options in a down economy is a difficult task if there is not a strong system currently in place or if the facility is unable to store and distribute fresh fruits, vegetables and dairy to the …

Inadequate Feeding Of Infant And Young Children In India: Lack Of Nutritional Information Or Food Affordability?, Nisha Malhotra 2011 University of British Columbia

Inadequate Feeding Of Infant And Young Children In India: Lack Of Nutritional Information Or Food Affordability?, Nisha Malhotra

Nisha Malhotra

Why does child malnutrition persist in India? Amongst the fastest growing economies over the last two decades, India has struggled to make progress in the health of its children. In this article the author argues that the reason malnutrition persists is not limited to poverty or inadequate access to food; but that a lack of nutritional knowledge amongst families plays a very important role.

Scientific Abstract Objective: Despite a rapidly growing economy and rising income levels in India, improvements in child malnutrition have lagged. Data from the most recent National Family Health Survey reveal that the infant and young child …

Phaseolus Beans: Impact On Glycaemic Response And Chronic Disease Risk In Human Subjects, Andrea M. Hutchins, Donna M. Winham, Sharon V. Thompson

Donna Winham

Consumption of Phaseolus vulgaris bean species such as pinto, black, navy or kidney may be beneficial in the prevention and treatment of chronic diseases. In particular, conditions that are promoted by increased glycaemic stress (hyperglycaemia and hyperinsulinaemia) including diabetes, CVD and cancer seem to be reduced in individuals who eat more of these beans. The present paper discusses the influence of P. vulgaris species on glycaemic response and the impact that relationship may have on the risk of developing diabetes, CVD and cancer.

Can Antioxidant-Rich Berries Improve Risk Factors Associated With Cardiovascular Disease In Postmenopausal Smokers?, Jordan Alaine Teeple 2011 University of Arkansas, Fayetteville

Can Antioxidant-Rich Berries Improve Risk Factors Associated With Cardiovascular Disease In Postmenopausal Smokers?, Jordan Alaine Teeple

Graduate Theses and Dissertations

The purpose of this study was to examine the effects of smoking on risk factors associated with cardiovascular disease (CVD) and determine the efficacy of antioxidant-rich berries in ameliorating these risk factors in postmenopausal smokers. Menopause and cigarette smoking have been identified as major risk factors for CVD due to a decrease in antioxidant protection, increase in inflammation and oxidative stress, and adverse changes in serum lipids. Antioxidants, specifically flavonoid compounds found in blackberries and blueberries, have been shown to prevent low-density lipoprotein cholesterol oxidation and thus prevent downstream inflammation and oxidative stress. Healthy, postmenopausal nonsmokers (n=14) and smokers (n=31) …

Perceived Importance And Actual Intake Of Calcium And Vitamin D In Young Female Athletes, Miriam E. Zambrano

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Calcium needs increase as a child grows. Actual intake often decreases as a child gets older, leaving his/her developing bones at risk for injury during childhood and increasing the risk of developing osteoporosis later in life. The purpose of this study was to investigate relationships between psychosocial factors influencing consumption of calcium and vitamin D-rich foods and actual intakes of these nutrients. We examined the dietary calcium and vitamin D intakes, determined serum vitamin D levels, and assessed nutrition knowledge and perception of a sample of 20 young girls participating in competitive cheerleading in Omaha, Nebraska. From this information we …

An Eating Frequency Prescription For A Behavioral Weight Loss Intervention, Jessica Lynne Bachman 2011 University of Tennessee, Knoxville

An Eating Frequency Prescription For A Behavioral Weight Loss Intervention, Jessica Lynne Bachman

Doctoral Dissertations

Improved weight loss interventions are needed to help reduce obesity. One dietary factor that has been effective in increasing weight loss is increased dietary structure. One method for increasing dietary structure is prescribing the frequency in which eating bouts (meals and snacks) occur. Eating frequency (EF) has been inversely related to body mass index (BMI) but the impact of EF on weight loss is unclear. This randomized controlled trial examined the effect of EF on hunger, the relative-reinforcing value of food, energy intake (EI), and weight loss during a 6 month behavioral weight loss intervention. Participants (age: 51.0 ± 9.9 …
