This paper introduces the working principle of electronic nose via two key elements including gas sensor array and signal processing. The applications of electronic nose in adulteration identification and quality analysis of edible oil, dairy products, beverage, meat, spices, and other foods are reviewed. The operations and analytical principle of electronic nose for food adulteration are clarified, and the successful applications of electronic nose as well as the shortcomings are discussed.

In the process of vegetable fermentation, the variety and quantity of microorganisms are complex and changeable. Lactic acid bacteria (LAB), as the main power in the process of vegetable fermentation, participate in the regulation of various metabolic pathways and affect the formation of flavor. In this review, the changes of major flavor metabolites during vegetable fermentation and their internal relationship with the community structure and abundance of LAB were summarized, then the potential mechanism of LAB fermentation to produce flavor substances was discussed. Moreover, the application of LAB in vegetable fermentation was prospected.

Objective: This study aimed to develop a kind of green antibacterial and antioxidant food packaging film. Methods: Polyvinyl alcohol/nanocellulose crystal/pomegranate peel polyphenol composite antibacterial films were prepared by blending method with pomegranate peel polyphenol as functional active substance, and their properties were characterized. Results: The continuity of the film surface was affected by the addition of pomegranate peel polyphenols. When the addition of polyphenols in pomegranate peel was 5 times the minimum bacteriostatic concentration, the water permeability of the film increased by 28.79%, and the tensile strength, elongation at break, hydrophobicity and light transmittance decreased by 44.97%, 29.37%, 36.36% and …

Objective: This study aimed to improve the drying efficiency and product quality of preserved apricot. Methods: The preserved apricots were dried using the rotary microwave oven (RMD) and the microwave coupled with convection dryer (MCD). The effect of microwave power, microwave emission mode, cutting and material movement on drying characteristics, the scorching rate, color and sensory quality were investigated and compared with traditional hot air drying (HD). Raw, ready-to-eat (RTE) seafood products, such as ceviche, poke, and sushi, have experienced growing demand globally; however, these products have the potential to be contaminated with foodborne pathogens. The objective of this study was to determine the prevalence of Escherichiacoli/coliforms, Salmonella, and Listeria in ceviche, poke, and sushi dishes sold at the retail level in Orange County, CA, USA. Additional organisms detected during testing were also considered in the results. Rice prices in Asia increased since the Summer of 2022 mainly due to worries about a reduction in rice production in India caused by an abnormal monsoon season (Fig. 1). The upward trend in export prices solidified after India implemented a 20% export tariff on brown and milled long-grain rice, and a complete ban on exports of broken rice, in September 2022 to curve down exports and release the pressure on domestic rice prices. The FSMA Produce Safety Rule (PSR) requires citrus packers to more closely assess, manage, and monitor food safety risks. Although there have been no foodborne illness outbreaks and only one recall in fresh citrus, the risk of pathogens coming in on the fruit and cross contamination during washing still exists. The in silico enzyme digestion and peptide function annotation of pili nut (Canarium ovatum Engl.) 11S globulin protein sequence revealed the presence of bioactive peptides with antihypertensive and antioxidative activities. Molecular docking simulations showed that the proline-histidine (PH) ligand can better inhibit angiotensin I-converting enzyme (ACE) activity than captopril. This result was verified through biochemical assays. Pili kernel protein was extracted with 0.5 M NaCl buffer using the modified Osborne fractionation method, which yielded 100 mg of protein per gram of defatted pili kernel determined via Bradford assay. This dissertation focuses on enhancing the bioactivity and emulsifying properties of camel whey through peptic hydrolysis and conjugation with quercetin, respectively. Peptic hydrolysis of camel whey using pepsin was performed using a general full factorial design (33) to study the effects of temperature (30, 37, and 45°C), times (120, 240, and 360 min), and enzyme concentrations (0.5, 1, and 2%) on antihypertensive and antilipidemic properties. The generated hydrolysates showed higher inhibition of pancreatic lipase (0.465 to 7.5 mg/mL), cholesterol esterase (0.240 to 1.243 mg/mL), and Angiotensin Converting Enzyme (ACE) (0.197 to 1.307 mg/mL) compared to control camel whey. We aimed to compare the dietary intakes of Australian patients with non-alcoholic fatty liver disease (NAFLD) to general Australian population intake data and determine whether the intake of any nutrient or food group was able to predict the degree of steatosis. Dietary data from fifty adult patients with NAFLD were compared to intake data from the Australian Health Survey for energy, macronutrients, fat sub-types, alcohol, iron, folate, sugar, fibre, sodium and caffeine. Despite the public-health significance of both malnutrition and crises, little has been done to explore the convergence of the two domains and develop ways to improve policies and practices, especially in rural communities.
