Obesity And Food Choices Among Faculty And Staff At A Large Urban University, Marjorie Freedman, Rebecca Rubinstein

Objective: In order to address increasing health care costs associated with obesity, this study sought to determine prevalence of overweight and obesity and examine eating behaviors, food choices, health beliefs, and attitudes of university employees. Participants and Methods: An online survey was distributed to > 3,800 faculty and staff at a large public metropolitan university in Winter 2008. Results: Almost half (48%) of 806 respondents were classified as overweight or obese. Compared to those with normal weights, overweight and obese respondents consumed fewer fruits and vegetables (p < .05), were less confident in making healthful food choices (p < .001), and were more influenced by food choices available in on-campus dining facilities (p < .05). Conclusions: Obesity among university employees warrants attention. Because these employees have less self-efficacy and consume less healthful diets than their normal weight colleagues, universities need to improve on-campus access to healthful foods.

Objective: To develop, evaluate, and validate 2 nutrition environment assessment tools (surveys), for specific use in combating overweight on college/university campuses.Participants and Methods: Invitations to complete surveys were e-mailed to food service and health center directors at 47 universities, Winter 2008. Overall response rate was 48%. Responses from the 39 individuals who completed tool evaluations at the end of each survey were analyzed. Follow-up interviews and site visits performed through Summer 2008 validated responses. An Hsi Report: Food Safety And Cage Egg Production, Humane Society International

Governments have begun legislating against cage egg production and a growing number of major food retailers, restaurant chains, and foodservice providers worldwide are switching to cage-free eggs. Extensive scientific evidence strongly suggests this trend will improve food safety. All fifteen scientific studies published in the last five years comparing Salmonella contamination between caged and cage-free operations found that those confining hens in cages had higher rates of Salmonella, a leading cause of food poisoning worldwide. This has led prominent consumer advocacy organizations, such as the Center for Food Safety, to oppose the use of cages to confine egg-laying hens.

Background: Rapid weight gain in childhood may increase the risk of chronic adult diseases. Few studies have examined the effects of lifecourse weight gain on waist circumference (WC), hip circumference (HC), or waist-to-hip ratio (WHR).
Objective: To evaluate the effects of birthweight and weight gain from birth to age 23 years on WC, HC, and WHR in young adults.
Design: Population-based birth cohort study started in 1982. A sample of 856 individuals was examined in 2006. Conditional growth analyses were carried out with adjustment for confounders. WC and HC were also mutually adjusted.

Two Novel Approaches Used To Produce Biodiesel From Low-Cost Feedstocks, Xiaohu Fan, Xi Wang, Feng Chen

The price of feedstock is one of the most significant factors affecting the economic viability of biodiesel manufacturer. Many approaches were investigated to reduce the biodiesel production cost. The present work gave a preliminary study of two approaches to economically produce biodiesel from waste cooking oil (WCO) and flaked cottonseed. One was the use of ultrasound-assisted synthesis of biodiesel from WCO. The other was the application of in situ transesterification from flaked cottonseed. Gas chromatography (GC) and High performance liquid chromatography (HPLC) results demonstrated the feasibility of using both approaches to produce biodiesel from low-cost feedstock.

Harvested longan (Dimocarpus longan Lour.) fruit are susceptible to decay caused by both bacterial and fungal infections. Ochratoxin A (OTA) is a kind of mycotoxin produced by a number of fungi. In this study, OTA was extracted from longan fruit pulp by 80% methanol and then loaded on C-18 solid-phase extraction columns. The extract solution was then analyzed by high-performance liquid chromatography - fluorescence detection (HPLC-FD) and an electron spray ionization-mass spectrometry (ESI-MS), respectively. The HPLC-FD analysis showed that a compound similar to OTA might exist in longan fruit pulp, but further analysis by the ESI-MS method demonstrated that …

Market lambs from the state fair of Virginia (n = 172) were ultrasonically evaluated by 4 scan technicians and 3 image interpreters to determine accuracy of ultrasonic estimates of loin muscle area (ULMA), backfat thickness (UBF), and body wall thickness (UBW). Lambs were initially scanned at the preferred magnification setting of each technician; 2 chose 1.5× and 2 chose 2.0×. Lambs were then scanned a second time for ULMA and UBF with machine magnification settings changed from 1.5 to 2.0×, or vice versa, midway through the second scan. Potassium plays a major role in plant growth. It maintains the solutions in plant cells at ionic strengths suitable for maintaining strong plant walls and for the proper functioning of leaf pores (stomata) and plant processes such as photosynthesis, transport of sugars and enzyme activation.

Potassium does not become a direct part of the plant structure but acts to regulate water balances, nutrient and sugar movement in plant tissue. Plants deficient in potassium cannot use other nutrients and water efficiently. They are less tolerant of stresses such as drought and waterlogging and are more susceptible to pests and diseases.

In developing individual farm mastitis control and treatment strategies, it is often necessary to characterize the types of bacteria that are present on your farm. To answer this question, a microbiological analysis, or milk culture, must be performed on milk samples collected from cows showing clinical or subclinical signs of mastitis. Results of the milk cultures will help identify which bacteria are causing the mastitis. In turn, this information can be used to alter mastitis control, prevention, and treatment options to fit your herd’s conditions.

Pleurotus sajor-caju authority is one of the mushroom species that is widely grown in Malaysia. The present study was undertaken to evaluate the antioxidant, cytotoxic, cytoprotective, genotoxic and genoprotective activities of crude water extracts of this mushroom. Crude aqueous extracts were prepared from the fruiting bodies that had been processed at different temperatures such as P1: blanching (95°C ± 2°C), P2: sun drying (30°C ± 2°C), P3: freeze drying (-46°C ± 3°C) and different temperatures of oven drying (P4: 45°C, P5: 50°C, P5: 55°C and P6: 60°C ± 2°C respectively).
