Abstract:Arthrospira platensis(spirulina), a filamentous fresh-water planktonic cyanobacterium,possesses diverse biological activities and a unique nutritional profile, due to its high contentof valuable nutrients. This study aimed to further improve the bioactive profile of spirulina, byfermenting it with the lactic acid bacteriumLactobacillus plantarum.In vitrocomparison of thetotal phenolic content (TPC), C-phycocyanin, free methionine, DPPH radical scavenging capacity,ferric reducing antioxidant power (FRAP), oxygen radical absorbance capacity (ORAC) and proteinfragmentation via SDS-PAGE in untreated versus 12 to 72 h fermented spirulina is reported here.After 36 h fermentation, TPC was enhanced by 112%, FRAP by 85% and ORAC by 36%. Background: Quality of life for patients with end stage renal disease is less than similar-aged, general population counterparts. A large part of the decrease in quality of life is change of diet and nutritional restrictions, oral nutrition supplements are a way to combat this decrease in quality of life.

Methods: An ice cream substitute product was developed for patients with end stage renal disease and that are on dialysis. The product consisted of rice milk, egg whites, evaporated coconut milk, sugar, and vanilla bean paste. There were two flavors: cinnamon and lemon. Blueberry pectins were sequentially extracted from highbush blueberry powder and precipitated in alcohol to obtain water soluble fraction (WSF) and chelator soluble fraction (CSF). WSF was high methoxyl pectin (degree of esterification: 53), rich in in neutral sugars (40 mol%), and had less negative charge (-21 mV) whereas CSF was low methoxyl pectin (degree of esterification: 21), rich in uronic acids (92 mol%), and had lower negative charge ( -26 mV).

“Peripheral blood samples were collected at the time of enrollment (week 0) and serum was stored at −80◦C until subsequent analysis. Participants were then randomized into two groups and provided with equal concentration and quantity of either dairy or soy supplement provided in powdered form in coded, single-serving bags. Both participants and researchers were blinded to the type of protein received. Participants were asked to consume two servings of protein powder (6 grams/packet) with 4 ounces of water or applesauce twice per day, with meals, for a total of 8 weeks. A comprehensive understanding of the behavior of microbial contaminants on produce surfaces in agricultural farms and during post-harvest activities is essential for the development of produce safety risk management strategies. Our studies investigated the survival and the attachment of E. coli on watermelon surfaces in agricultural settings with different levels of vegetation, and the effect of residual sanitizers on the survival and the attachment of E. coli O157: H7 and L. monocytogenes on spinach leaves. The attachment strength (SR) of the E. coli cells on watermelon surfaces significantly increased (P<0.05) from 0.04 to 0.99 in the first 24 h, which was primarily due to the decrease in loosely attached population, given that the population of strongly attached cells was constant. This paper utilizes survey responses from local coordinators of LCF, an international micronutrient supplementation humanitarian organization, to provide insight into the challenges and personal rewards of providing nutrition education to parents of malnourished children. LCF is based in Utah and operates in 19 countries throughout the world. LCF recently introduced a series of health lessons geared toward parents of malnourished children. A survey was sent to LCF workers in 12 countries in order to gather feedback about the health lessons. Toll-like receptors (TLRs) play a crucial role in innate immunity and provide a first line of host defense against invading pathogens. Of the identified human TLRs, TLR10 remains an orphan receptor whose ligands and functions are poorly understood. In the present study, we sought to evaluate the level of TLR10 expression in breastmilk (BM) and explore its potential function in the context of HIV-1 infection. Shirli Self is an Idaho native who has worked in school nutrition both in Idaho and Oregon, in a unique position. The area where she currently works in Oregon is so rural and remote that Oregon pays for her students to finish high school in Idaho after they complete eighth grade in Oregon, because the nearest Idaho high school is much closer than the nearest Oregon high school. She has twenty-one years of school nutrition experience and is a one-woman show, having no employees and being responsible for feeding ninety-three K – 8 students every day.

The chemical profile and antioxidant capacity of Juniperus virginiana, J. excelsa, and J. sabina essential oil (EO) fractions as a function of time was the subject of this study. The hypothesis was that, capturing EO in sequential timeframes during hydrodistillation would generate fractions containing unique compositions and antioxidant capacity. In J. virginiana, the highest limonene (43%) was found in the 0–5 min oil fraction, with safrole (37%) being highest in the 10–20 and 20–40 min fractions, and elemol (34%) being highest in the 160–240 min fraction. Amidst the backdrop of attention to populism in general, it is instructive to understand populism through social movements focused on food and agriculture. Agrarian populism is particularly salient in agrifood movements. Agroecology has been widely identified as a domain of populist claims on environmental and social governance surrounding agricultural–ecological and political–economic systems. As authoritarian populist leaders gain power throughout the world at a time of expanding economic globalization and contingent socioecological crises, contests over populism in agrifood regimes can highlight current dynamics relevant for formative evaluation of alternative political agroecology strategies and of populist environmental governance more broadly. Dramatic growth in herbicide-resistant (HR) weeds in the United States threatens farm profitability and may undercut environmentally beneficial farming practices. When HR weeds move across farm boundaries due to ecological processes or human action, a common pool resource challenge emerges, requiring farmer cooperation to manage such weeds effectively. We investigate the scope for cooperative management using responses to a national survey on HR weed issues to test a recursive model of three preconditions for collective action: (1) concern about HR weeds migrating from nearby lands; (2) communication with neighbors about HR weeds; and (3) belief that cooperation is necessary for …

Two of the most popular beer styles within the craft brewing industry are India Pale Ales (IPA’s) and those with high alcohol by volume (ABV). Production of these styles requires high gravity fermentation and high amounts of bittering hops in order to reach the required values for ABV and International Bitterness units (IBU) respectively. The aim of this study was to determine the impact of high gravity fermentation and high IBU levels on yeast viability and repitching cycles.

To examine the contribution of child, maternal and household factors in stunting, wasting and underweight among children under 5 years in Ethiopia. Design

Quantitative cross-sectional design based on nationally representative data. Setting

Urban and rural areas of Ethiopia. Participants

Younger (0–24 months; n 4199) and older age groups (25–59 months; n 5497), giving a total of 9696 children. Results

Among the younger age group, 29 % were stunted, 14 % were wasted and 19 % were underweight; and among the older age group, the prevalence of stunting, wasting and underweight was 47, 8 and 28 %, respectively. Being female, …

Bifidobacterium is a genus of anaerobic bacteria that are commonly found to inhabit the gastrointestinal tract of many members of the animal kingdom. These microorganisms are adapted to obtain their carbon from the breakdown of complex carbohydrates. Marmosets, a mammal whose gut microbiome is inhabited by high levels of Bifidobacteria, consume gum Arabic as a major part of their diet. In view of the formation of harmful products of Maillard reaction in baked foods, different recipes of steamed cakes (sugar type, oil type, cake acidity regulator and the ratio between egg white and yolk) were selected to analyze the changes of glyoxal (GO), methylglyoxal (MGO) and advanced glycation end products (AGEs) in cakes, and the inhibitory effects of natural flavonoids (geneistein and luteolin) were investigated.
