Application Of Digital Twin In Evaluating Quality Changes In Tomato Value-Chain In Nigeria, Charles Nwaizu, Taofiq Olayinka Olanrewaju, Iluno Christiana 2022 University of Nebraska - Lincoln

Application Of Digital Twin In Evaluating Quality Changes In Tomato Value-Chain In Nigeria, Charles Nwaizu, Taofiq Olayinka Olanrewaju, Iluno Christiana

Department of Food Science and Technology: Faculty Publications

Cooling tomatoes after harvesting and keeping them refrigerated during their transportation is a key step toward preserving the quality attributes of tomatoes. This is a challenging task to accomplish in Nigeria, mainly because shipments of tomatoes from the tomato-producing states in northern Nigeria to the non-producing states in southern Nigeria were predominately not transported in a refrigerated ambient condition. To minimize postharvest losses of tomatoes during transportation, quantification of changes in quality would be extremely valuable. For this purpose, a digital tomato twin was developed based on mechanistic physics-based modeling. This digital twin simulated the actual thermal profile of tomatoes …

Development Of A Non-Dairy Yogurt Alternative Using High Protein Brown And White Rice Flour, Anita Morris 2022 Louisiana State University and Agricultural and Mechanical College

Development Of A Non-Dairy Yogurt Alternative Using High Protein Brown And White Rice Flour, Anita Morris

LSU Doctoral Dissertations

There is a great demand for plant-based yogurt alternatives (YAs) due to societal prevalence of milk sensitivities and allergies as well as some consumers abstaining from animal-derived products. Producing YAs from rice flour has considerable potential because (1) rice is not a major food allergen, (2) using rice flour is more economical compared to plant milks, the main ingredient in commercially available YAs, and (3) there are no rice-based yogurt alternatives in today’s marketplace. The overall goals of this study were to develop probiotic YAs from brown and white rice flours, and to evaluate their storage stability, probiotic’s survival in …

Developing A Customised Note By Note Prototype Recipe Which Can Be 3d Printed, Roisin Burke, Pauline Danaher

Articles

Note by Note (NbN) cooking and 3D food printing individually and in combination allow for the creation of customized foods. A NbN recipe was developed and printed using a Procusini 3.0, 3D food printer. The recipe was adapted from a commercial powdered pastry dough recipe, to create two versions of a prototype food, containing in each case a different plant-based protein, i.e., soya (Glycine max L.) or hemp (Cannabis sativa). The printed foods were identical in shape and had a crisp consistency following cooking. They had different colours and contained different proteins in the amounts of 10.3 % of soya …

Ice plant (Mesembryanthemum crystallinum), a member of the Aizoaceae family, is a typical halophyte crop and a model plant for studying the mechanism of transition from C3 photosynthesis to crassulacean acid metabolism (CAM). Here, we report a high-quality chromosome-level ice plant genome sequence. This 98.05% genome sequence is anchored to nine chromosomes, with a total length of 377.97 Mb and an N50 scaffold of 40.45 Mb. Almost half of the genome (48.04%) is composed of repetitive sequences, and 24 234 genes have been annotated. Subsequent to the ancient whole-genome triplication (WGT) that occurred in eudicots, there has been …

A Review Of Shiga-Toxin Producing Escherichia Coli (Stec) Contamination In The Raw Pork Production Chain, Manirul Haque, Joseph M. Bosilevac, Byron D. Chaves

Department of Food Science and Technology: Faculty Publications

Epidemiological evidence of Shiga toxin-producing Escherichia coli (STEC) infections associated with the consumption of contaminated pork highlight the need for increased awareness of STEC as an emerging pathogen in the pork supply chain. The objective of this review is to contribute to our understanding of raw pork products as potential carriers of STEC into the food supply. We summarize and critically analyze primary literature reporting the prevalence of STEC in the raw pork production chain. The reported prevalence rate of stx-positive E. coli isolates in live swine, slaughtered swine, and retail pork samples around the world ranged from 4.4 …

National Food Security, Immigration Reform, And The Importance Of Worker Engagement In Agricultural Guestworker Debates, Laura-Anne Minkoff-Zern 2022 Syracuse University

National Food Security, Immigration Reform, And The Importance Of Worker Engagement In Agricultural Guestworker Debates, Laura-Anne Minkoff-Zern

Food Studies - All Scholarship

This article looks at the United States’ federal H-2A Temporary Agricultural Visa Program and reforms proposed by the Farm Workforce Modernization Act. In this policy analysis, we draw on media content analysis and qualitative interviews to compare the viewpoints of farmers, workers, grower and worker advocacy groups, intermediary agents, and politicians. We find that perspectives on the program are dependent upon actors’ level of direct interaction with workers. Moderate-sized farmers and regionally based worker advocacy groups tend to be the most concerned with day-to-day program operations and fair working conditions. In contrast, national-level advocacy groups, intermediary agents, and politicians are …
